Peach Upside Down Cake

I like fruity cake especially upside down cake because it's so moist of cake yet so deliciously fresh from fruits. The fruit gives nice caramelized fragrant and taste that make this cake so great companion for tea/ coffee time.

My post today is Peach upside down cake. I use recipe from Midwestliving.com and I like it. My family love it too especially served with Turkish milk cream call Kaymak..hmmm..even more Yum! 😊(^,^)

The original recipe using American conversion, but here I also include my metric conversion.

Make one 20 x 20 x 5 cm pan

Ingredients :
  • 1/4 cup (58 gr) butter 
  • 1/2 cup (100 gr) packed brown sugar 
  • 1 1/2 - 2 cups sliced, pitted and peeled fresh peaches or frozen unsweetened peach slices, thawed and large slices cut in half lengthwise --> I use 3 big fresh peaches
  • 1 1/4 cups (175 gr) all-purpose flour 
  • 1 1/4 teaspoons baking powder 
  • 1/4 teaspoon salt 
  • 1/2 cup (116 gr) butter, softened 
  • 3/4 cup (140 gr) granulated sugar 
  • 1 egg 
  • 1 teaspoon vanilla 
  • 1/2 cup (120 ml) milk 

Directions 

1. Place 1/4 cup (58 gr) butter in a baking pan. Warm in a 180 C oven about 5 minutes or until butter is melted. (Be sure to watch carefully to avoid browning the butter). Remove pan from oven. Add brown sugar, stirring until sugar is completely moistened. Spread sugar mixture evenly in pan. Arrange peach slices evenly over brown sugar mixture. Set aside. 

2. In a medium bowl, combine the flour, baking powder and salt; set aside. In a large bowl, beat 1/2 cup (116 gr)  butter with an electric mixer on medium to high speed for 30 seconds. Beat in granulated sugar until well combined. Add egg and vanilla, beating until combined. Alternately add the flour mixture and milk to beaten butter mixture, beating on low speed after each addition just until combined. Spread batter evenly over the peaches in the pan. 

3. Bake for 45 to 50 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on wire rack for 5 minutes. Loosen cake from sides of pan; invert onto a large serving plate. Cool for 10 to 15 minutes more. Serve warm.
BAHASA INDONESIA

Bahan:
  • 1/4 cup (58 gr) mentega
  • 1/2 cup penuh (100 gr)  brown sugar 
  • 1 1/2 - 2 cups buah persik yang sudah dikupas, buang bijinya dan iris melintang atau bisa gunakan yang frozen --> saya gunakan 3 buah persik segar
  • 1 1/4 cups (175 gr) tepung serba guna
  • 1 1/4  sdt baking powder 
  • 1/4 tsdt salt 
  • 1/2 cup (116 gr) mentega, lembekkan suhu ruang
  • 3/4 cup (140 gr) gula pasir 
  • 1 egg 
  • 1 sdt vanilla 
  • 1/2 cup (120 ml) susu cair
Cara membuat:

1. Taruh 58 gr mentega di baking pan lalu panaskan dalam oven 180 C sekitar 5 min atau sampai mentega leleh. (perhatikan jangan sampai mentega gosong dalam oven). Ambil dari oven dan tambahkan brown sugar, aduk rata hingga semua gula tercampur dengan mentega cair. Lalu ratakan brown sugar tersebut rata di dasar loyang. Tata irisan buah persik diatas nya. Sisihkan.

2. Campur tepung, baking powder dan garam dalam mangkok ukuran sedang, sisihkan. Dalam mangkok mikser besar, kocok 116 gr mentega dengan mikser kecepatan sedang sekitar 30 detik. Masukkan gula dan lanjutkan mengocok hingga gula tercampur rata. Masukkan telur dan vanilla sambil tetap dikocok. Lalu masukkan campuran tepung bergantian dengan susu, kocok dengan kecepatan rendah hingga semua tercampur rata. Tuang rata adonan diatas buah persik yang sudah ditata didalam loyang.

3. Panggang 45 to 50 menit. Tes tusuk dengan lidi. Jika ditusukkan ke tengah cake keluar bersih dan tidak basah, berarti cake sudah matang sempurna. Dinginkan cake sekitar 5 minutes. Keluarkan cake dari loyang dengan cara menusukkan pisau ke sekeliling pinggiran loyang, lalu dengan hati-hati balikkan cake ke atas piring saji. Dingin kan lagi sekitar 10 menit. 
Hidangkan hangat-dengan cream lebih lezat.
