Drinking tea is an old tradition of the human race. China might be the first country that drinks tea. But Turkey is the number one country that consumes more tea in the world. According to statista.com and theatlanthic.com, Turkey consumed almost 7 pounds per person per year, followed by Ireland and United Kingdom.

Turkish people love their tea hot. Not only in wintertime, the same in the summertime. 
Not commonly like other countries that enjoy their tea in a mug or a cup, Turkish tea served in a small Turkish tea glass. The glass' shape is known as "ince belli" or literally mean slim-waisted or people call it Tulip-shape glass. The glass has about 125 ml capacity.

Yes, summer still around, even the weather forecast said the heat will be increase to around 39℃ this week in my area. Nothing tastes better on a hot summer day than fresh-from-the-freezer ice pops. I know, we can get any kind of ice pops at any market around the corners, easy and "no pain" at all. Unfortunately, many store-bought ice pop varieties contain artificial ingredients, high fructose corn syrup, and food dyes 😣

So why don't we make our own? We can control the ingredients we use. There are so many different combinations and flavors we can make, just be creative 😊

Summer still in the air, and I am still looking for a way to beat the heat with something fresh and icy.
I remember back when I was in my homeland, Indonesia, we love to enjoy fresh young coconut water right from the fruit. It was so refreshing sweet. And we can scoop the coconut flesh after finish the water. 

Young coconut flesh is so white- almost transparent. Soft-jelly like and very light sweet in taste. The older coconut, the flesh will become thicker and harder and we can make coconut milk from an old coconut. The older coconut, the more coconut milk we can get.
The water is sweet but not like sugary sweet. The older coconut, the slightly tangi the water will be and getting less.
In bahasa Indonesia, coconut we call it "kelapa". While young coconut called  "degan"

Viral Recipe: Dalgona Coffee ( Korean style Whipped coffee drink) | Çitra's Home Diary.

I admitted I am a bit late posting this viral drink. This whipped coffee drink wildly became phenomenal across Instagram a few months ago. People called this "Dalgona" coffee (latte).
The recipe originated in South Korea and requires only four ingredients; instant coffee, sugar, hot water, and milk.

Honestly, before this coffee became viral I never knew that if we whip the instant coffee powder and hot water (in the same portion) it will be creamy and has whipped cream consistency 😃

So, what is dalgona
Dalgona in Korea is a honeycomb sugar toffee. İt's a candy made with melted sugar and baking soda. It was a popular street snack in the 1970s and 1980s and is still eaten as a retro food. It has a different name for each region. When a pinch of baking soda is mixed into melted sugar, the thermal decomposition of the baking soda releases carbon dioxide, which makes the liquidized sugar puff up, and it becomes light and crunchy candy once cooled and hardened. Typically, the creamy beige liquid is poured on a flat surface, pressed flat, and stamped with a patterned mold.

One South Korean cafe combines this dalgona with milk tea or coffee.  This one that actually calls dalgona coffee.

But since Covid-19 pandemic spread worldwide, some people trying to make their own "dalgona coffee" at home and hashtag #dalgonacoffeechallenge become very popular across the internet. People tried to imitate the cafe version of dalgona coffee by using instant coffee powder. And what is popular then is "dalgona coffee" which doesn't actually contain dalgona or honeycomb sugar toffee.

Reyhan Şerbeti / Turkish refreshing healthy beverage; Red Basil Sherbet | Çitra's Home Diary

Summer is at its peak. The only thing that comes to mind when the summer is getting hot is cold drinks. To beat the heat also to be healthy at the same time and not to leave our body to dehydrate. The favorite choice is this Turkish "Reyhan Şerbeti".
Reyhan means Red basil while şerbeti from word şerbet literally means sherbet or syrup.
Not to be confused with frozen sherbet/ sorbet.
The sherbet, which is very popular in West and East Asia, comes from the Arabic word “shariba”. If it means “drinking". 

So what is this sherbet? Sherbet is a refreshing and healthy syrup usually made from fruit, flower extracts, and herbs. The main ingredient is sugar and water. The prepared ingredient is then diluted with water and sugar is added for taste. 
It is also served with ice to add coolness. For some syrups, milk is also used instead of water. Lime juice is also added to most sorbet recipes. For this reason, lime water helps prevent the sugar from crystallizing in the syrup and enriches the flavor.

There are hundreds of varieties of sherbet can be made. Start from flowers, fruits, herbs, and spices. And they are not only prepared for hot summer, adding some warm herbs and spices, these sherbets perfect for warming up your body during wintertime.

My today post is about this ancient healthy yet refreshing beverage. And for cold down the summer heat, I will share Red basil sherbet or called "Reyhan Şerbeti".

I have a pot of red basil that needs to be harvested, so making this sherbet isn't just cool down my summer, but also keep my red basil plant alive and healthy 😊

In Indonesia mostly we make or buy snacks to enjoy during iftar, we call it Ta'jil (read; taqjeel)Ta'jil itself comes from Arabic language means to fast-breaking, so it has nothing to do with the food. But in Indonesia, the term ta'jil is becoming commonly used as an expression of usually sweet iftar appetizers. Prophet Muhammad s.a.w gave the example of eating dates as the beginning of iftar.

Assalamu'alaikum....... Merhaba dari Turki.

Postingan hari ini adalah es tape ketan hitam a la Es Doger. 
Saat ini di Turki sedang puncaknya musim panas, dimana suhu bisa mencapai 40°C dengan kelembaban yang tinggi. Jadi malleessss banget mau ngapa-ngapain. Kalau ingin keluar rumah- untuk belanja atau ngantar anak ke taman atau sekedar cari "fresh air"- kita biasa nunggu sekitar pukul 6 sore atau 7. 
Jam 6 atau jam 7 sore, matahari masih bersinar kalau musim panas seperti sekarang. Jam 9 malam baru matahari terbenam dan udara mulai segar.

Jadi pengen yang serba segar. Mulai makanan yang serba sayuran segar, sampai pencuci mulut yang fruity. Naahhh.... karena saya punya stock tape ketan hitam yang saya buat sebelumnya, saya pengen bikin yang menyegarkan yang juga ada tape ketan hitamnya.

Dan lagi kepengeeeennn banget minum es doger. Jadi keingetan dulu jaman bebujangan pas ge-kost di daerah Menteng, sering minum es doger yang suka lewat depan rumah. Versi asli es doger yang di jakarta sih terdiri dari tape singkong, ketan hitam dan biji mutiara dengan serutan es santan yang gurih, diberi sirup gula (warna merah) lalu disiram susu kental manis yang banyak. Kadang suka ada serutan kelapa mudanya, tapi seringnya ya begitu aja.....hhmmm..... segar kan? (^,^)

Turkish healthy drink; Sahlep (Salep).. What is it and how to make it

Winter 'officially' comes in our town. After raining since last night follow by soft snow fall down turns Bursa into uniform color-white... hhhh.... finally fresh air and softness cool. And nothing can comfort us in this such weather better than hot yet nutritious beverage.

Salep or Sahlep or sahlab is a powder made from the tubers of the orchid genus orchis (including species Orchis mascula and Orchis militaris). These tubers contain a nutritious, starchy (about 10%~30% starch) polysaccharide called glucomannan (about 30%~55%). 

Salep flour is consumed in beverages and desserts, especially in places that were formerly part of the Ottoman Empire.

The root of the plant is collected in Sahlep season (May and June). Collected tubers are cleaned by washing with water, boiled in water or milk, and hang on a rope, then air-dried. The tubers are pounded to dried powder. The obtained powder gives sahlep powder ready to used product. Widely used as raw ingredients like dondurma (ice cream) also as beverages. It'll swell when used with ice water and milk. 
1 kilogram of pure sahlep powder produces from around 2 thousand 600 orchis tubers. So no wonder the price of pure sahlep powder is very expensive about 300~400 TL per kilo.

Wedang Ronde (Indonesian Glutinous balls in ginger syrup)

My today post is Indonesian glutinous dumpling balls in ginger sugar syrup or Wedang Ronde. Wedang means hot drink in Indonesian language.
I don't know if I should call this "drink" because there are glutinous dumpling in it, either I can't call this dessert because mostly we didn't eat/ drink this after meal.
Just we are usually consume this herb dish to warm up our body during cool days like in rainy season.

And here in Turkey still, uncertain weather, frosty windy...that's why I am thinking to make something that could warmth us a bit. Beside that this dish is very good to fighting cold cause made from ginger and lemongrass herb.

Generally we didn't make this at home. There are plenty street stalls selling it during rainy season. Well...they sell a long all season actually, but mostly increase during cool days or rainy season.
Generally they open their stalls only at night or start afternoon.

Until Ramadhan day 6 the weather still so friendly here... Even tonight when I post this Melon Chia soda drink.. Rain pouring soft on and off..it's just so peaceful. 

This Melon chia drink I made for our iftar today. In summer like this we can find melon easily and the price these days is so cheap.

The chia .... Hmmm.. I love chia. In Asia mostly we mix it in our cold beverages. The texture is so unique and if you search for more... it has many benefits.

Fermentation of lactose by these bacteria produces lactic acid, which acts on milk protein to give yogurt its texture and its characteristic tang.

Frozen yogurt is a frozen dessert made with yogurt and sometimes other dairy products. It varies from slightly to much more tart than ice cream, as well as being lower in fat (due to the use of milk instead of cream). It is different from ice milk (more recently termed low-fat or light ice cream) and conventional soft serve.
Frozen yogurt has come to be used much like ice cream, and is served in a wide variety of flavors and styles. We can vary it with adding various toppings.

Indonesia is rich of spice and tropical herb plants. You can easily find- for example -ginger, galangal, turmeric and so on in any house' yard or people plant them in a pot.
Just like my mom. She has many kind of herb plant in her small yard in front of our house in Indonesia. Next time I'll take some picture of them.

We have pandan leaves, ginger, turmeric, chili pepper, also lemongrass. They are so easily to planted and grow so fast in our tropical environment. Oh how I miss my homeland!

Few weeks ago there was a friends of mine just came back from Indonesia and she brought me some fresh lemongrass, pandan leaves also some fresh herb and spices that I couldn't find here. They are such a treasure for me!

So today I made traditional Indonesian lemongrass herb drink This

These two days, Bursa city under the snow. Since last Tuesday night smooth cotton-like snow pouring gently until this Wednesday evening. My house' path covered by snow. Actually that's my perfect time to go out walking and take some 'white' pictures...And after all..it's my rare moment as İ'm tropical person....but with my small princess??? İ don't think so. She was just passing her bad time a week ago with cough and cold..İ won't be selfish to do that. So we spend our time watching from windows how the sky was so grey and snow flying here and there in the air cause so windy outside....brrr..

Easy Strawberry Ice cream (No machine required)

Ramadhan comes in summer this year 2014... Long day for fasting and so hot outside... May Allah gives us more 'pahala' (reward). And I think nothing more comfort and refreshing us after iftar in this Ramadhan than a cup (or more) of strawberry ice cream. I have no ice cream machine at home but it can't stop me to festive our summer days in this holy month.
You can make this also for your family.




Make about 800 ml
Ingredients:
- about 400 gr fresh strawberry ( you can use frozen one too)
- Condensed milk about 1 cup
- Thick cream 1 cup
- Sugar about 4~5 Tbsp (according your taste) -- I used 4 because I add strawberry jam in my ice cream.
- few tsp homemade or store bought strawberry jam (optional)

Indonesian glutinous rice balls in herb caramel syrup / Wedang Ronde Karamel

This February the weather showed no signs of warming, still snowing almost every day. Temperature is still around zero sometimes even minus zero. Even worse in eastern Turkey temperature average minus 15 degrees. I saw on news, some cities in Europe even got worse condition, temperatures can reach minus 30 deg. I don't understand why the weather can deteriorate like this. I remember the first snow fell last November 2011 - that was very early according to my husband.

Anyway, I just try to enjoy any weather or conditions, because I believe God has set everything up. And this glutinous rice ball in herb caramel sauce is also one of my way to enjoy this freezing weather while waiting for the sun really warms my heart and soul... @(^_^)@



Serve 4 ~ 6
Glutinous rice ball ingredients:

 2 cup (± 200 g) glutinous rice flour
 2 tablespoons rice flour
 1 tbsp caster sugar
 ¾ cup warm water
 green and red food color

Hot Chocolate (Our fave beverage during winter)

This January I think the peak of winter, the snow seemed never stopped since beginning of new year's eve. Just few days to stopped, then continue snowing again for another nights. I am almost reluctant to leave my house because it was so freezing outside. I was born and raised in tropical country where the coldest weather ever there is only about 16degC, and that's even if we go to higher place.

I almost did not leave my house during this January without any emergency purposes or very important thing to do, plus my current condition, I would immediately nausea and vomiting when I were in cold.

Anyway, in freezing weather like this we always make something that can warm our self. Beside Turkish tea which has already become a habit in our house, this hot chocolate is also always my huby's request and other family member if they visited our home.

Ingredients and how to prepare:
 2 cups of milk
 2 ½ dessert spoons Dutch process cocoa powder
 4 ~ 5 (or to taste) dessert spoons granulated sugar
 ± 80 g dark (or semisweet) cooking chocolate
 Whipped cream (optional) and chocolate saved for garnish

In a small saucepan, stir together milk, sugar and cocoa powder, heated over very low heat and stirring gently bring to simmer and foamy. Mix in the cooking chocolate and continue stirring gently until the chocolate is melted and dissolved.


Serve hot with whipped cream and a sprinkle with chocolate as a garnish.

Ayran: the perfect beverage
Ayran is a mixture of yoghurt, water and salt. The thickness may vary across Turkey with those down south preferring something a little firmer. Most commercial manufacturers add approximately 1 percent salt -- about 1 gram for every 100 milliliters of liquid. Unsalted versions are available and can be easily prepared at home. Ayran is the perfect accompaniment to kebabs, döner, lahmacun (very thin, flat-style pizza), gözleme (savory flat, phyllo-style pastry) and some pide (thicker-crust-style pizzas) and börek (savory pastry).
The potential health benefits attributed to the bacteria of yoghurt are related to the traditional, spontaneously fermented milks, not those soured with standard bacteria used in industrial production. Ayran purchased in sealed plastic and foil cups are unlikely to provide the sought-after gastrointestinal assistance; any bacteria present will not survive the harsh internal environment of the human body.
Ayran  is that the process of fermentation sees milk's natural sugar, lactose, broken down, used as food by the bacteria. This makes digestion of both drinks easier than their predecessor, milk. Their other nutritional benefits come from their abundant minerals; calcium, potassium, phosphorus, magnesium and vitamins riboflavin, B12, A, K and D.
