In Turkey there are a few types of Poğaça... some use yeast (they call mayalı Poğaça) and some use baking powder. My post now it's yeast poğaça type.

No yeast version close to pastry texture or shortbread more than bread-y texture. For the non-yeast version, you can visit my previous post here. Or Check the category section " Börekler" for more variation.

And as I mentioned before, my today post is poğaça with yeast- so I can call it breakfast bread. Because the texture is more to soft bread (typical Asian soft bread). Poğaça have many topping and filling variation. 
Start from potato, cheese, sesame paste, sausage, and more.

You may already hear about "pide". It's one of Turkish fast food that no one can resist for the second portion.
Here we have many kinds of "pide". There is one type of pide bread which especially served during the month of Ramadan calls "Ramazan pidesi". It's a simple flatbread sprinkled with sesame seeds.

But What I am going to share today it's not that kind of pide. Today I will share Pide with topping and it's shaped like a boat/ kayak.

Pide is a flatbread with various topping and bakes traditionally in a stone oven.
Pide and its varieties are widespread through Turkey and are established as an important food. The base is a flat-bread of a similar style to pita, chapati, or western pizza crust. 

A proper pide should be baked in a brick or other stone oven. Toppings (or can be as filling) vary widely and include but are not limited to cheese, onions, peppers, tomatoes, sausage, pastrami, eggs, mushrooms, ground beef, and parsley. 
Pide is also available for cheap on the street from a cart.

Viral Recipe. KOREAN CREAM CHEESE GARLIC BREAD  (육쪽마늘빵). With video. | Çitra's Home Diary.

This bread is amazingly gone viral across the internet, especially on Instagram.
After "dalgona" coffee, now another viral dish from South Korean, it's Korean cream cheese garlic bread (육쪽마늘빵). It is one of-you can say-Hasselback bread but in Asian style.

Never think that this garlic bread is the same as European-style garlic bread. This Korean-style is absolutely different. Korean garlic bread has a soft and creamy texture while European garlic bread has a crispy-chewy texture with a savory palate.
With slightly sweet savory with cream cheese filling, this Korean style garlic bread is favorite street food in Korea.

Some sources say this famous bread originated from Gangneung City in Gangwon Province. This food was actually a Korean street food.
Pain Famille's bakery makes garlic-like loaves of six cloves, also known as six-sided garlic. There are also those who slice transversely like sausages using rather long bread. But what is popular today is round bread with star-shaped slices.

From Gangneung City, the garlic cheese cream bread was brought to the culinary center of Gangnam, a hype and famous district in Seoul. From there cheese garlic bread is increasingly in demand by Koreans and is included in the new menu list in many cafes.

Cream cheese garlic bread is processed bread, like burger buns, but cut six sides that cross each other to resemble garlic cloves that are given cheese and seasoned and baked. Melted cream cheese with a savory garlic flavor sensation gives a different sensation to other types of bread.

First, Ramadhan Kareem to all my Muslim friends around the world. May the spirit of Ramadhan stay in our hearts and illuminate our souls from within.
We are happy can meet Ramadan again this year, but a little sad since this Ramadan we are in an unfortunate situation that makes us stay at home to isolate ourselves from the COVID-19 pandemic. 
Generally, we would have wonderful iftar together with families and friends. We invite each other to have an iftar dinner where beautiful and happy moments are shared.
Iftar, also known as fatoor, is the evening meal with which Muslims end their daily Ramadan fast at sunset. They break their fast at the time of the call to prayer for the evening prayer.
I hope this condition will end up soon and we can have a peaceful life back.

Today I will share our favorite, it calls Beğendili Köfte. Köfte is a traditional Turkish meatball (kofta) made from mincemeat mix with "baharat" or spices. The meat is used commonly beef or lamb or mixes both of them. Köfte is very popular here and everybody's favorite.

Beğendili from the word beğendil, it's an ember-roasted aubergine, finely minced then mixed in a creamy cheesy sauce similar to the bechamel sauce. This dish it's not only widely popular as a restaurant meal but also homemade versions are rich and served at home.

Pogačice (diminutive of pogača) is a type of pastry.
Pogača, Poğaça, or Pogacha (Cyrillic: Πогача) is a type of pastry eaten in Bosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries), Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations.

It is called pogatschen in Austria.

Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.
Mostly eaten for breakfast but also as an appetizer during noon together with Turkish bulgur salad (kısır), or potato salad and hot tea.

We call this dızmana (read;desh-mana), dizman or dıclama. But mostly people just named it göçmen böreği

İt's not really like pastry you probably know which made from thin layers of phyllo dough or puff pastry or flaky dough pastry.
İt's a pastry dish, bread-like pour with yogurt egg sauce then bake.
Sometimes fill with cheese or mashed potatoes, but plain without any filling also as good as with filling.

This dızmana is commonly made in Bulgaria by Thracian immigrants. But now everybody across regions also love to bake it.

My 1st post in year 2019. I know.... been a while. But İnshaallah I will not quit writing and share my passion for cooking. 
When I was younger I cooked for my siblings and my family since my mom worked at that time and mostly already tired after that.

My aunties also master in cooking. She cooked for the crowd and she was good on it. Took orders from neighbors and friends.
But since she's getting older now, she refuses some request for healthy reason.
But my younger aunt still do it.

İ enjoy and baking this cake since long time ago but still İ need to explore it more and try get along with it often 😊

Yes.. İ can't denied that İ fall in love in this red velvety color cake, with delicious slightly tangy of cream cheese frosting.

And today İ'll post my favorite Red Velvet Cake again. 
İ baked this seriously moist and delicious Red Velvet cake my my kid's birthday 🎂. And since this cake for her she was the one who decorated the cake with small colorful heart candy  😍 . her fave.

İ didn't decorate much, just thinly cover the cake with my cream cheese frosting, piped some star shape and using cake's crumb to make it more nice 😊

For the cake İ use 2 deep pans with diameter 18cm (about 8") and cut each cake into two. 
İ wrapped my baked cake with plastic film after cool and keep in refrigerator over night before frosting.

No, it's not just regular roll cake with buttercream or jelly filling.. it's roll cake made from spinach.

Yes... this is my kid's friendly roll cake recipe. İ was inspired by my previous Spinach Cake which liked by my picky kid. Also, my spinach chiffon cake has become my family fave.
This spinach roll cake is easy to make also delicious. You barely can taste the spinach in it or smell it. Nobody will know it make with a lot of nutritious vegetables until you tell them 😍



İ am the mother who always struggled to give my kid vegetables. When she saw something green or red or anything not protein in her food..she would get rid of it 😵
That was until these lately..  me and her father slowly convince her about eating her vegetables and fruits. Not all though, but she starts to enjoy some. 
For example, she will eat her çiğ köfte (meatless raw kofta) with lettuce. Or some broccoli but in small pieces form 😊

Actually this is my late post. İ made this cake few weeks ago and posted on my instagram to joined one Giveaway baking group. The theme was Red Velvet cake.

So İ baked this yummy sponge red velvet pair with cream cheese.

What İ am going to share today is my fave one. İ made this recipe since İ enjoy red velvet cake but İ don't like the bitterness taste that mostly İ found in RV cake recipe.
İt's sponge cake base cake still, with separated egg yolk method. No Baking soda added.

For me cooking is about my taste.. my personal flavor. İ add or didn't add anything that did not meet my palate. 😋

İ made mini version of naked red velvet cake. İt's simple yet beautiful enough to enjoy with your mate. 
İ simply baked my cake in wide baking tray (40x30x4 cm) then using ring cutter (diameter 12 cm) to cut my sheet cake.
You can also use 4 (four) mini springform diameter 12 cm.

This is our weekend dessert. The humble yet delicious classic pumpkin cheesecake.
İ know you might find hundreds of cheesecake recipes out there, but İ assure you this pumpkin cheesecake recipe is keeper and repeatable one.

The pumpkin and spice adding it's so into this season.
Today İ made mini version of this pumpkin cheesecake. İ used two 11 x 6 cm mini mold but you can use one 16 x 10 cm for bigger version but please adjust the baking time to get nice result.

But İ just love mini version ... 💗💖

For pumpkin puree İ use homemade one but you use caned pumpkin puree as your prefer. You can see my homemade pumpkin puree here.


For baking process İ use steam bake at low temperature. İ take wide baking tray and put a rack (± 3 cm high) then place my cheesecake pan onto it. Fill hot water almost as high as the rack.

İt's pineapple tart cookies AGAIN...!! 😉
YYaaayyy..... İ hope you are not bored with it. Yep. This is the MOST repeatable cookie İ made for our cookie jar.
İ lloovvee it and never get bored of it. İf you know what pineapple tart cookies ( İnd, Nastar) is and you ate them before İ believe you like them as well.

Pineapple tarts cookies is one of Indonesian traditional (and some neighbouring countries) cookies that commonly made and serve during religious holiday such as Eid-el Fitr or christmas along with many other traditional cookies like; kaastengelsputri saljupastel miniButter cokies or simple chocolate cookies and more.



But in my house, no need to wait until holiday season to have this melt in mouth yummy cookies. Me and family always have evening tea time just like other Turkish family~and it would be very nice to have some cookies with it, right?
So I always have jars full with some cookies and this pineapple tarts cookies (nastar) is almost never empty cause I love it so much!
With sweet slightly sour taste from homemade pineapple jam inside of melting yummy cookie dough, nothing can beat this favorite tarts till now.

Even İ make this nastar quite often, as İ mentioned above-we never boring of it because we can vary it as many as we can. Just check my COOKİES CATEGORY to see my "nastar" variations. Just like today, İ make cheesy pineapple tart cookie. Adding some cheese into the dough definitely enrich the taste of this classic Indonesian cookies. 💙

İf you are my regular reader you should probably familiar with my labneh cheese recipe. You may already know (or tried-maybe) my latest Labneh souffle cheesecake with spicy warm honey fig.
What about my fave dessert ever; Three tone Labneh "Cheese" Chocolate mousse . Or simply delicious Yogurt "Cheese" Souffle Cake
Well yes..İ am using labneh a lot daily not even for dessert but also for soup and other cooks.

What is labneh cheese? it's yogurt that has been strained to remove its whey, resulting in a thicker consistency than unstrained yogurt. Due to the straining process to remove excess whey, even non-fat varieties of strained yogurt are much thicker, richer, and creamier than yogurts that have not been strained.

Fresh labneh, made from yogurt with live or active cultures are a very healthy food that contain probiotics, that enhance the immune system, lower cholesterol, aid in digestion, protect against constipation, protect against diarrhea, improve lactose digestibility.
Labneh is like yogurt is an excellent source of protein, casein, whey, beneficial fats, carbohydrates, as well as vitimins and minerals (B12, Calcium, Phosphorus and Riboflavin.) Labneh has less lactose and sugar than regular yogurt.

Cheesecake is the most repeatable cake I bake in these 6 years. Since I baked first time for my husband at early year our marriage, he fell in love with it. I'm big fan of cheesecake, especially cotton soft one like this Japanese style cheesecake.

Different from New York style, this cheesecake has very light cottony texture. The topping and can be vary start from lemon curd until your favorite jam. Please do check my other cheesecake posts to see the variation here.



And my post today is Japanese cotton light cheesecake with matcha (green tea) marble. The recipe I adapted from Diana Dessert's with minor adjustment using matcha marble. Original recipe using 8" round baking pan, but here I use 9" (about 24 cm in diameter) fixed base pan. Next time I will use 8" for taller cheesecake. Just need to lightly grease and line the side of pan with baking paper/ parchment paper few cm higher than the pan.



This time I grease the bottom and side of my 9'' fixed base pan and line with parchment paper. I bake this cheesecake with water bath method as original recipe calls, but I put low and small rack over water bath pan so the bottom of my baking pan barely touch the water. Well.... I pour hot water maybe not more than half cm high from my baking pan's bottom side. See the illustration below.



If you use removable pan, it's important to line the outside of pan with double heavy duty aluminum foil, or few sheet thinner aluminum foil to make sure no water seep into your cheesecake during water bath baking.



Another note, to prevent sudden change of temperature that may cause the cake to shrink drastically, you should let the cake cold down inside the oven with ajar. But actually It’s normal for Japanese cheesecake that will shrink about ½ inch after cooling, don't be alert.

What is labneh cheese? it's yogurt that has been strained to remove its whey, resulting in a thicker consistency than unstrained yogurt. Due to the straining process to remove excess whey, even non-fat varieties of strained yogurt are much thicker, richer, and creamier than yogurts that have not been strained.

In Turkey, strained yogurt is known as süzme yoğurt ("strained yogurt") or kese yoğurdu ("bag yogurt"). Water is sometimes added to it in the preparation of cacık, when this is not eaten as a meze but consumed as a beverage. Strained yogurt is used in Turkish mezzes and dips such as haydari.

In Turkish markets, labne is also a popular as dairy product but it is different from strained yogurt; it is yogurt-based creamy cheese without salt, and is used like mascarpone.

Strained yogurt

Frankly speaking, I use this labneh cheese from strained yogurt a lot in my daily cook. Since cold soup made from this süzme yoğurt ("strained yogurt") until dessert. And I am pretty satisfied with using it. Beside richer in texture, I can reduce the sourness in it, so creamy yet healthy.
