How to Decorate Anniversary Cake

All are edible except those toothpick :)

Maybe this is my last post in 2014 and also 1st post on 2015. Because İ was planning to post this lemon cake decoration for #YKMK challenge #8 for their 1st anniversary.
As İ mentioned in my previous post about this YKMK (Your Kitchen My Kitchen) is a Foodie community based in İndonesian language. 

And this very early 2015, 1st Jan.. they celebrates their 1st anniversary. And for celebrating it they gather an event challenge calls "B'day Cake". Every contestant should present 1 decorated cake--widely range from any cake decorating idea and ingredients e.g fondant, butter cream, ganache, whipped cream, etc... see the rules for joining this event... Hurry.. it's just starting and will end on last January 2015.

Hello again..how are you?? Any plan for your weekend? Me..İ will just relax stay home with my little fam. My little angel is a bit sick this whole week... cold and got red and itchy skin like allergic symptom--main reason we don't hang out outside as every weekend.
Well..İ hope you are having precious time also with your family.


Now İ will talk about my today's post. This weekend post is flower cupcake bouquet. İ was so exciting when one of my friend text me message that she will give something to her dearest friend. They met when my friend worked in Turkey..now my friend already back to İndonesia. But seems their relationship develop into close and best friend. Best friend between two continental. Yes, a distance doesn't cut a friendship.... 
She ask me to make something special, unusual yet pretty and touchıng. Presenting friendship and caring. We talked many ideas then İ gave her this cupcake flower bouquet idea. She agree..then...voallaa..! İ did it ^,^

Cheesecake between Red Velvet Cake for our wedding anniversary

This is not too late post--I think. Yes, me and my husband just celebrate our wedding anniversary. At this 28th August we celebrate our 5th year, love and respect each other, live and rowing our small boat facing-sometimes ripple waves- and sometimes big waves and scary wind. I know it's still too much too young to reach our dreaming island...but at least this 5th year we can remember that we are still rowing same boat to go to the same way.

Nothing is easy in our marriage. We came from different place! Totally different culture, different language, different nationality, different taste... My husband is Turkish and me my self is Indonesian.  If you understand what I mean, person who came from different background is never easy to walk together with at same rhythm... 
The things we have in common is only care, love and good willing to reach blessing of Allah.

 I  knew my husband around 2004 ... We knew each other from Internet. It took us so much time to finally decided to be together in holy marriage. Many things had to think about and calculated.... But hey... love is not a math that we can calculate😍 
I'm not exactly remember why we decided (finally) to marry .... after my first visit to Turkey in 2008, one year after that I married my husband 😃



Well, enough about old story of us.. I'll tell you many thing again later... We just want to grateful to Allah that we are still now having each other with great love from HIM.
So for just remembering our 5th year of marriage, I made this cake. I know my husband likes cheesecake a lot s much s he likes chocolate cake... so I decided to make this Red velvet cake with cheesecake in between. For garnish, I use classic vanilla butter cream flowered with small red fondant flower (I have small amount of -don't know what to do-fondant in my refrig).

Celebrating Eidul Fitr (Ramazan Bayram) and also My kid's 2nd B'day

Happy Eid al Fitr 1435 H for you who celebrate it. 

This Eid al Fitr 2014 is the happiest and memorable moment for me. After more than 5 times celebrated Eid in Turkey, this is the first time I feel like celebrate Eid al Fitr in my own country. Many my Indonesian fellow came to visit with their family. Some students who study here also came to visit.. to tied more closely relationship.

Beside that memorable Eid al Fitr, this year coincide with  my lovely baby's birthday, Sahnaz Kale this July turns 2! .. Time feel too fast passing by.. I still feel I just born her few months ago..now she turns 2 !

Two happy reasons (Eid al Fitr and my princess' B'day) is enough for me to celebrate it, just simple celebration. We invited some Indonesian to spend happy moment with simple Indonesian and Turkish Foods.

Like normally b'day party I also made one simple b'day cake for my daughter. This chocolate cake  made from 1 recipe of steamed chocolate sponge cake and 1 recipe chocolate brownie recipe steamed with simple fondant decoration. And chocolate frosting recipe here.

Steamed Sponge Chocolate Cake with Chocolate frosting

It's another order came to me to make another cake. In Turkey cake with decoration like this they call it "pasta". When I got here at first time I got confuse with this "pasta" word because Turkish call "makarna" for Pasta :)) 

Anyway, I made this "pasta" with steamed sponge chocolate as base (recipe as follow). And chocolate frosting as filling between layer and to cover the cake (recipe below). For garnish I use chocolate whipped cream (ready mix).. Since I'm still learning to decorate cake, so here it is my simple chocolate cake decorating .... And thanks God, they liked the cake, both taste and the simple decoration d(^,^)b 



Size of the cake 8 "


Ingredients:
For Chocolate Sponge cake base:
 3 medium size eggs
 ¾ cup caster sugar
 1 ½ cup flour
 ½ cup dark cocoa powder
 1 teaspoon baking powder
 1 teaspoon baking soda
 1 tsp Vanilla essence
 ½ cup whole milk
 ½ cup olive oil (or other vegetable oil)

TIRAMISU CHEESECAKE



This is really great combination for Cheese cake lover and Tiramisu lover ... Cheesecake with tiramisu flavor. It's even surprising me how wonderful this dessert being in our family dessert table.. Everybody love it!

For an 8 "springform pan

Ingredients:

  • 150 gr lady finger (about 16 large biscuit)
  • 25 gr butter. Melted. Plus for greasing pan.
  • 1 tablespoon strong instant coffee. Dissolve with 3 tablespoons hot water, set aside.
  • 500 g cream cheese. Room temperature.
  • 1 cup caster sugar.
  • 1 whole large egg, at room temperature.
  • 1 tbsp plain flour
  • 1 tablespoon cornstarch.
For the topping:
  • Chocolate cream frosting ready mix
  • Shaved semi sweet cooking chocolate.

Method:

1) Rub  8 "(± 20 cm in diameter) springform pan evenly. Cover bottom of the pan with parchment paper. Preheat oven to 175 ⁰C, place one pan fill with water on bottom rack of oven. Prepare another rack in center of oven to put cheese cake later.

2) Crush lady finger with food processor, pour melted butter and 2 tablespoons coffee solution alternately, pulse until they just combine well. Press the crumbs at the bottom of springform pan, set aside in refrigerator.

3) In a large bowl, combine cream cheese and caster sugar, beating well until smooth, mix in remaining 1 tablespoon coffee solution and eggs, beat until blended. Turn off mixer.

4) Mix in flour and cornstarch, Use manual whisker stir until blended and no lumps. Pour into prepared pan. Place on middle rack of the oven and bake for 45 ~ 50 minutes until center is set. Slightly open the oven door and turn off the heat. Let the cheese cake cool in oven about 30 minutes before removed from the oven. Chill before decorated with toppings. Here I use ready-mix chocolate cream smeared on the surface of my cheese cake then sprinkle with shaved semi sweet chocolate. Chill in refrigerator before serving minimum 2 hours.

Steamed Chocolate cake with Sun flower decoration

I believed that every woman is special, including you. And being a mother is a privileges "job" as well. 24 hours a day, 7 days a week, no work contract, and it'll be forever as long as your life. The first education of human being, is in Mother's hands . So as a mother we should have a good and sufficient education to create a better generation in future. Let's never stop learning anything MOMS! 😍


And To All Moms and women (becoming mom), I wish you happy mother's Day.


Description of cake:
Size 8 "
Steamed chocolate Cake as a base with chocolate frosting as layer and decoration.
For Sunflower decoration I use fondant plastic icing.

İngredients and how to make Steamed chocolate brownies:
- 4 medium size whole eggs
- Plus 2 medium egg yolks
- 1 cup (225 gr) caster sugar
- 1 cup ( 140 gr) all purpose flour
- 2 tablespoons cornstarch
- ½ cup (dark) cacao powder
- Pinch of salt
- ½ teaspoon vanilla essence
- 80 gr dark cooking chocolate (DCC)
- ¾ cup cooking oil





Method:
A. Grease 8" springform pan with margarine/butter, set aside. Sift together, flour,cornstarch, and cocoa powder. Set aside. Heat your steamer pan up to produce enough steam, medium heat only.
B. Double boil DCC until melted and mixed with cooking oil. Set aside. With electric mixer, beat eggs until fluffy,add caster sugar gradually. Combine salt. Whisk until pale and ribbon stage. whisk in vanilla essence.
C. Gradually, fold in flour mixture. Then fold in melting chocolate mixture, fold until blended and perform no lumps.
D. Pour into prepared pan and steam until done (approximately 45 minutes). Test with skewer, if it comes out clean when inserted in brownies, it means you done and you can remove the brownie from  steamer. Let cool to room temperature before unmold.


For chocolate frosting:
- 120 gr unsalted butter
- ½ cup cocoa powder
- 3 cups powdered sugar
- ½ teaspoon vanilla essence
- ½ cup whole milk.

Melt butter, combine cocoa powder and stir until blended. Mix in powdered sugar and milk alternately, whisk until all well blended. Finally mix in vanilla essence.
If you want a thinner frosting, you can add small amount of milk. Or if you want a thicker frosting, you may reduce amount of milk.

Assembling:
Slice chocolate brownie horizontally into 2 parts (or 3 parts according to your desire). Grease each slice's surface with chocolate frosting and stack neatly. Cover entire surface of the brownies with remaining chocolate frosting and decorate with  fondant plastic icing.

Steamed Lemon Cake with Lemon Curd filling for B'day cake

Selam everybody...Merhaba from Turkey.

As my promise before to post my cake with lemon curd filling (and as topping too). It's Steamed lemon cake. Actually this cake is  order/ request from my friend for her husband's B'day. So I'm sorry I can not post picture when cake being cut...
But anyway, it's great lemon cake ever (My friends and her family said so)... the moist lemon cake (because I steamed it), combine with yummy lemon curd between 3 layers plus on topping... hmmm.. I'm thinking to make it again for my self @(^_^)@


Ingredients:
• 4 medium eggs
• ½ cup caster sugar (you can add up to ¾ cup if you like it sweeter)
• 1 ½ cups flour
• 2 tablespoons cornstarch
• ½ teaspoon baking powder
• Lemon Zest of 1 medium lemon.
• 3 tbsp lemon juice.
• 4 tablespoons olive oil (or other vegetable oil).

Lemon candied
For the garnishes and filling:
• Lemon curd (see recipe here)
• Candied Lemon (I use recipe from here)
• Butter cream icing or whipping cream icing
• Yellow and orange food color for whipping cream icing

 Method:
1) Cake: Mix and sieve together, flour, cornstarch and baking powder. Set aside. Mix together, Lemon Zest, lemon juice and olive oil, set aside. Grease pan your springform pan 8 "(18 ~ 19 cm) with butter. Set aside.
2) Prepare your steamer pot, fill with enough water and heat to produce a lot of steam.Whisk eggs with electric mixer, use low speed first. Combine caster sugar in 3 stages while beat until sugar completely dissolved. Higher the mixer speed. Beat eggs and sugar until pale and thick. Lower the mixer speed again and continue beating about 2 ~ 3 minutes more before turn off the mixer.
3) Fold in flour mixture and lemon mixture, folding until well blended and no lumps. Pour into prepare springform pan and steam until cooked about 40 minutes. Check with a skewer / stick, if it comes out clean, your lemon cake is done. Remove from pan and let chill at room temperature before unmold.


4) Cut the cake horizontally into three equal parts. Spread each surface with lemon curd,  neatly stacking each cake slices . Garnish with whipping cream or butter icing and lemon candied (as picture).
Store in refrigerator before cut / serving.

Strawberry Cheesecake


Who doesn't like cheese cake? I think everybody like it and even more.. addict of it :)) .. like my hubby.. I think he addict cheesecake or anything made from cheese :))

Say it with BLACK FOREST

Happy Valentine Day Everyone. Hope you and Family will joy and fill with love everyday along these years.

My husband is not a romantic person. Sometimes just for my birthday, other family member must remind him to bring something for me. Also for Valentine's Day. It's the weekend and he took me Somewhere else not to farmer markets for weekend shopping as usual .. I think there will be a surprise for me .. Maybe he would take me to nice restaurant with surprise romantic dinner,but I was wrong. He brought me indeed-not to farmer market- but to other shopping places which has many discount season!  hahahahaha ....
When I ask why there is no "something" for valentine day, 
he said "for what? I said 'I love you' Everyday. I kiss you more than 3 or 4 times per day.  Isn't it a day of love for you?"

Well .. I have nothing to say against it .. I just made this Black Forrest for him to show That I Love him too ... @(^_^)@

For the cake base:
- 8 eggs
- 1 cup caster sugar
- 2 tsp vanillia powder-This kind of vanilla I can find here
- ¾ cup flour
- 2 tablespoons cornstarch
- ½ cup cocoa powder (plus some for spread baking pan)
- 125 gr margarine. Melt (plus to spread baking pan)

For the filling
- Can cherries (about 400 gr)
- Butter cream or whipped cream
- Rum  - I did not use.

For the garnishes and toppings
- Dark cooking chocolate
- Whipped cream
- Drop/ granules Dark chocolate
* Or, according to your taste and improvisation

Make cake base:
1) Grease a baking pan 7 " size with margarine/ butter and sprinkle with cocoa powder.Set aside. Sift together: flour, cornstarch, cocoa powder and powdered vanillia. Set aside.
2) preheat oven to 190 deg C. In a large bowl, beat eggs and sugar until fluffy, pale and thick. Fold in the flour mixture gradually. Fold in melted butter into it. Mix until well blended
3) Pour into baking pan and bake for about 45 minutes. Check with a skewer inserted in the cake comes out clean.
4) Let the cake cool before it is cut horizontally into 3 parts. 


::Note
Recognize your oven condition. Different size and condition gives different heat result.

Assembling:
Take the first piece of cake, wet with cherry water. Then spread butter cream evenly.Arrange the cherry fruit. Cover with second piece of cake. Do the same thing as before. And stacking the last piece of cake, wet with cherry water and cover the entire surface of cake with whipped cream and decorated according to taste with cherry and chocolate.

Store in refrigerator before cut and served.

Cheddar Cheesecake with Fruits Topping

my another Cheddar Cheesecake post. My previous post was Cheddar cheese Cupcake . After succeed with Cup cake trial, I was trying to make a bigger dessert, cheddar cheese cake. I use mix fruit as topping. Beside pomegranate jam  I also use fresh kiwi and fresh navel oranges. But of course topping your cheese cake is about your own style and taste. Just be more creative and have fun with it d(^_^)b

The ingredients and method is almost the same with the cupcake, only you will need 7" fixed based baking pan (If you are using springform pan, make sure it's wrap tidily with heavy duty-aluminium foil to make it waterproof). You also need bigger pan for water bath baking. Fill it with hot water. Set a side.


Ingredients A:
- 1 fully press cup grated unsalted cheddar cheese.
- 130 ml whole milk
- 40 gr unsalted butter
Ingredients B:
Sifted ¼ cup all purpose flour. 
Sifted ¼ cup cornstarch.
Ingredients C:
- 4 medium egg yolks
- 1 tsp lemon zest
Ingredients D:
- 4 medium egg whites
¾ cup caster sugar
- 1 ½ tsp lemon juice

Brownie Tangerine Cheesecake

I'm enjoy going and walking around in Farmer market. I can see many various color from fruits, vegetables, local (traditional) ready food and local hospitality. Mostly people see me in curious way with smile in their face, yes, it's because my Asia look among Them  :D  
Start early winter I can find many kind of orange or other fruits that mostly we find it in winter. Like this mandarin orange (tangerine orange), I bought 5 kg for 5 Turkish Lira (around US$ 3.5). Pretty much to make many kind of food or dessert. Well.. maybe I can try to make Cheesecake with tangerine... and voallaa... Before the cake really ready, my mouth already watering :) 
I served it with my Pomegranate jam as sauce...hmm...Yummy!



This cheese cake I made brownie as base instead of biscuit crumb.
Ingredient and how to make brownie base:
1) Prepare your 7" springform pan. Grease with margarine. Preheat oven on 180 deg C.
2) Melted 80 gr dark cooking chocolate together with 50 gr unsalted butter over double boiler. Remove from heat. whisk in 1/2 cup caster sugar, 2 eggs one at the time. Whisk until sugar dissolve. 
3) Whisk in 1 tablespoon whole milk. Mix in 1/2 cup flour. Whisk just until everything well combine. Pour in springform pan and bake 10 ~ 15 minutes. Let your brownie base cool.
 For the cheesecake:
- 450 gr Cream cheese. softened on room temperature.
- 1 cup caster sugar.
- 3 large eggs
- 40 ml juice from tangerine orange.

Kue Keju Kukus ( Indonesian Steamed Cheese Cake)

Yes, it's Steamed Cheese cake. Of course it's different from other cheese cake that you ever seen-e.g New york cheese cake or German cheese cake. 
But this "Kue Keju" - that we usually call it- already become my favorite (and everybody Else's fave) since I was a kid. Mostly we use cheddar cheese for this cake and for some other cakes/ desserts. I think it's the easiest cheese to find in Indonesia. We eat and make anything with this kind of cheese. Of course there are also other kind of cheese, but this one- I think- is most common one since I was a kid until now.

When my huby saw me made this cake, he asked: Is it for dessert or main course? @(^_^)@  Because he usually eat this cheddar cheese with bread as main meal. Well.. after he eat and taste it... he said it's differently delicious.. hahahaha...


Ingredients:
- 2 eggs 
- 2 egg yolks
- 1/2 cup caster sugar
- 1/2 tsp salt
- 2/3 cup flour
- 1/4 cup powdered milk
- 1 tbsp corn starch
- 1/2 teaspoon baking powder.
- 1/2 cup grated unsalted cheddar cheese
- 100 gr unsalted butter. Melted.
