In Banyuwangi town-where this food originally came from-people called it "bolu kura-kura" (literally means turtle cake). Because the shape is like a turtle's shell.
Banyuwangi is one small city in East Java.

This mini cake is usually served during Islamic celebration days such as Eid Fitr or Eid el Adha.

A chiffon cake combines methods used with sponge cakes and conventional cakes. It includes baking powder and vegetable oil, but the eggs are separated and the whites are beaten before being folded into the batter, creating a rich flavor like an oil cake, but with a lighter texture that is more like a sponge cake.

The cake tin is not lined or greased, which enables the cake batter to stick to the side of the pan, giving the cake better leverage to rise, as well as support in the cooling process when the cake is turned upside down to keep air bubbles stable.

This is the first madeleine I baked. Why? no other reason than I just owned the pan recently after years of searching in the local market here. Madeleine, it's not common here in Turkey so finding madeleine pan is difficult as finding a wallet where I forget to put 😊
I was trying to purchase this pan for few years here, but then I just found it online this year. And I just get this deep madeleine mold with shell shape. Mostly shallow model here is made of silicon which I am not sure it's heatproof or good enough to bake madeleine. I will try to buy that later after I try this deep madeleine pan 1st.

Indonesian call this "bolu kering" means dry cake. "Dry" because the texture indeed dry outside, almost like a cookie.
And this vintage cake has been around for a long time. From several sources, this "Bolu" cake was very popular in the 1960s. The cake has various forms, some are fish, oval, or flower-shaped, and mostly has mini size.

The texture of this cake is a bit rough, a bit dry outside but moist inside. But it's super tasty and has a very distinctive aroma. Its light taste and small shape make it perfect for snacking.

Traditionally this mini cake consists of only 3 ingredients; eggs, sugar, and flour. Old recipes require emulsifiers too and for adding the aroma we use vanilla extract/ essence. 
The process also simple, just whisk the eggs and sugar until stiff then adding flour.
But today I will not share the traditional version.

I am not really in the mood of baking lately. Since the online class for my daughter starts a few weeks ago, I also get involved in it cause you know, 9 years old kid can not really understand how to set up a camera or microphone or if a problem suddenly comes up with the zoom or computer, I should always ready beside her. Since morning to half day.
Mostly I just cook simple things or something freezer-friendly so I can more concentrate on my kid school program.

This pandemic really changes our life! Hope it'll end up soon and we can have our normal life back. Kids go to school and meet with their friends and have a happy childhood life.

Back to my dessert topic, today İ made this delish white chocolate Panna Cotta. Yep, nothing simpler than making this İtalian dessert for the family.
Panna cotta; İtalian origin made of sweetened cream and thickened with gelatin. Some flavor adding to enrich the pudding such as coffee, chocolate or simple vanilla. İt has delectable silky smooth in texture.
İn some İtalian restaurant, it molded then serve with warm fudge sauce.

Some say roll cake while other calls swiss roll cake or jelly roll or cream roll.
But for me they are the same. İt's just normal sponge cake that rolled up filled with buttercream or jam or whipped cream or whatever you prefer.

The sponge cake itself can vary in flavor or in the method.

Ogura cake, aka 相思蛋糕 / Xiāngsī dàngāo . No official sources why this cake name Ogura (Japanese language). Is it coming from Japan or invented in Japan or whatsoever. It's just this cake become very popular among Asian baker and Asian cake lover. The texture incredibly cotton soft, light and smooth texture with moist crumb. Rich in flavor yet light in sweetness.

If you are my regular reader you might notice that I only post one ogura cake previously, check my blood orange ogura cake here. And this post is my second post about ogura. Yep, I didn't bake that cake often it's not because I don't like ogura cake. I lllooovvveee it! I love anything light and not make my stomach full as dessert (cake).

I didn't bake it so often because until now I got pretty nervous baking it and still looking for perfect recipe that match with the pan size I have. I'm telling you..I don't purchase much baking equipment /baking pan like mostly Asian baker I know. In Turkey it's hardly to find many kind baking pan I need e.g removable NON non stick chiffon pan, or simple square NON non stick baking and some other more. Which if I'm in my homeland so easy to find. Using NON non stick baking pan is the best way to bake this cake~ which the most suitable one.

If you see my recently posts are orange-y .... yellow or orange color..sometime mix with chocolate.... cause there is no other reason other than because I love citrus! 

And don't you think it also festive the spring, isn't it? And this blood orange is so trending in my local market. Every where I saw many booths selling this orange with cheap price..
I think it's a citrus peak.

And since I love citrus (who doesn't?) I use them in almost every meals I made....

In some Asian blogger fellows I saw many posts about ogura cake. Did you hear about Ogura cake?

The method for making this cake same as making chiffon cake using separated yolks and egg white method. The only tiny different is using additional 1 whole egg into yolk batter. The rest are exactly same as chiffon including invert the cake during cooling time. For this ogura you may use any pan you like, round or square or even tube pan.

Still playing with orange flavor here.... yess... if you are citrus lover, join with me in this simple Orange yogurt mini cake. I serve these cute yummy cake with bright orange glaze. Yoghurt cake is also very familiar here in Turkey. We use yogurt a lot in our cakes, dessert, snacks, soups and even in other main dishes.

Making this mini version is just helps you simple to serve them with your friends or family members during coffee or tea time.

If you want to make big cake version, use 1 loaf pan (25x10cm) with adjustment on baking time. Just with skewer inserted in middle of cake to check whether cake is done.

Orange with poppy seeds Chiffon cake recipe

Once you made chiffon cake you will never bore to experiment more and baking more flavor of it. I love to bake chiffon cake as much as I eat it. Moreover, if your chiffon turns into wonderfully cotton soft and light like a cloud.

Yep..that's my chiffon cake.. I like to vary the flavor of it. Just check my other chiffon cake post on Cake Section.

And since I still have some orange stock also I hearty adore orange and lemon flavor my today post is about orange again. But this time I want to make something else to twist the flavor. 


This orange poppy seeds chiffon cake base on my previous spinach chiffon cake, I just change the spinach with orange segment then blend it. I mix it with poppy seeds in this orange chiffon cake, but fell free to skip it if you don't like it or you can't find poppy seeds in your cupboard.

If you are my regular reader of my blog you might be already knew since I purchase new chiffon cake pan I can't check my "waiting list recipe to try" anymore..at least at this moment.
And since my husband and kid tasted my Chocolate chiffon cake from my previous post, chiffon cake is now become regular cake in my house.

Orange Golden Marmalade

This week is citrus season in my place. I can get cheapest price for mostly citrus family in farm market. Don't ask me how many kilos I bought.... I looovvveee orange, lemon, or any citrus. They are best fruits for vit C source and also my best favorite for making dessert.

My husband likes to drink simply fresh orange juice, no more adding sugar or any other sweetener... But I still have big problem with my kid.....aaarrrgghhh.. We keep "fighting" whenever I ask her to finish her juice. So for her sometimes I mix with yoghurt and honey or sometimes I made orange frozen yoghurt.

Since I bought many kilos orange few days ago now I am thinking and open my "orange recipe list" on my computer file.
And this golden marmalade from Annabel Langbein is my 1st choice to use my orange stock.

It's simple and quick to make (unless for soaking time). And the marmalade turns beautifully yummy. I love the exact sweet on this recipe. I only use orange and lemon for this recipe and skip the whisky cause we don't consume any alcohol.

If you have orange and don't have any idea what to do... try this too. Keep in sterilized jar it will stand in your fridge for weeks even months.

I love chicken, my kid loves chicken and it's great and cheap choice to fulfill protein source for our family. All I need to do is just make as many variations as I can so my kid won't be bore to eat it.

My today post is Chinese style Lemon Chicken. I love the sweet and sour taste in it, just reminded me of my Indonesian sweet and sour chicken.

Ingredients for Chicken:
  • ± 700 gr boneless chicken thigh/ breast, small chunk about ±4 cm
  • 3 Tbsp soy sauce
  • 1 tsp salt (to taste)
  • 1 big egg
  • 2 Tbsp water
  • ± 150 gr all purpose flour
  • ± 100 gr cornstarch or tapioca
  • 1 tsp black/ white pepper
  • pinch of salt for flour mixture
  • ½ tsp baking soda
  • Enough cooking oil for deep fried

Orange Chicken is an American Chinese dish of Hunan origin. The variety of orange chicken most commonly found at North American fast food restaurants consists of chopped, battered, and fried chicken pieces coated in a sweet orange-flavored chili sauce, which thickens or caramelizes to a glaze. While the dish is very popular in the United States, it is most often found as a variation of General Tso's chicken rather than the dish found in mainland China.

In most countries in the western hemisphere, the names "orange chicken", "orange peel chicken", "orange flavor chicken", and "tangerine chicken" are typically used for this particular dish. In Chinese, however, the dish is always known as "陳皮雞", literally "old peel chicken", referring to dried orange or tangerine peel, which is used in traditional Chinese medicine as well as cooking. For restaurants outside of Asia, fresh orange peel is often used instead, or even no peel at all.



My Today's post is Orange Chicken. I was searching and comparing some recipes across google... and they are typically the same with slight diversity and I found this recipe. The recipe I copied from Blogchef.net meet my taste (again, as Asian). 
And after I tried it... yes...indeed..this is the recipe that suits me in flavor.

Yogurt is eaten here in Turkey (and other middle east regions and Mediterranean) for over hundreds years ago. 
Yogurt, yoghurt, or yoghourt ( from Turkish: yoğurt) is a food produced by bacterial fermentation of milk. The bacteria used to make yogurt are known as "yogurt cultures". Fermentation of lactose by these bacteria produces lactic acid, which acts on milk protein to give yogurt its texture and its characteristic tang.

Frozen yogurt is a frozen dessert made with yogurt and sometimes other dairy products. It varies from slightly to much more tart than ice cream, as well as being lower in fat (due to the use of milk instead of cream). It is different from ice milk (more recently termed low-fat or light ice cream) and conventional soft serve.
Frozen yogurt has come to be used much like ice cream, and is served in a wide variety of flavors and styles. We can vary it with adding various toppings.

Orange Macarons with orange curd & Cream Cheese Filling

I thought orange season already over this April until last Wednesday I met them in my neighborhood bazar, of course the price slightly higher than usual. But who cares.. I love Orange..hehehhee.. So I bought only 2 kg for 6 turkish lira.

My Kid loves yogurt with fruit flavor so I already have an idea for it. Summer already knock the door and I'm thinking to make orange frozen yogurt later for my family dessert. It's okay, I will freeze them for it. Yes.... I love orange. We like to drink orange juice-fresh one (^,^). And since lately I just start my "macarons adventure" ... I'm thinking, why don't I make orange macarons also? It will be very refreshing and I'm sure my family will love it too... (^,^)


For the filling for this orange macarons I choose cream cheese filling with orange curd in the middle. But really you can go ahead with another filling as you like. 

This time I didn't have any left over egg white, so I use fresh (not aged) egg white. I know..some people said macarons should make from aged (stay over night) egg white. But for me I don't have any problem using new egg white-as long as your egg white is in room temperature. 

Tips: If you-in case- forget to take out your egg from fridge. Do like I usually did. Put your egg white over shimmering water for few minute while whisking it. Always check with your finger tip if your egg white already reach room temperature, remove from heat and continue whisking as procedure.
