Deep condolences for the earthquake disaster in Turkey.

6 February 2023.




A 7.7 magnitude tremor early Monday struck the Pazarcik district of Kahramanmaras province, then about nine hours later, a 7.6 magnitude quake centered in Kahramanmaras’s Elbistan district rocked the region, affecting several other provinces, including Adana, Adiyaman, Diyarbakir, Gaziantep, Hatay, Kilis, Malatya, Osmaniye, and Sanliurfa.

The earthquake was also felt in several countries in the region, including Syria and Lebanon.

"We are facing one of the biggest disasters not only of the history of the Turkish Republic but also of our geography and the world,"

Turkish President Recep Tayyip Erdogan announced Tuesday a state of emergency for three months in 10 provinces hit by Monday's massive earthquakes in the country's south.

Today's post might be a bit longer than usual. Cause I will tell you a little more about Indonesian cuisines- my beloved country 💓

Last Friday I was lucky enough to be a guest cook for Beyond Kitchen by young chef and gastronomy - Mohammad Alard. We cooked and served some Indonesian menus for our expat fellows in Istanbul.

Beside cooking, I also presented and tell to the guests about the dishes they enjoyed that night. And I am going to share to you as well 😊




Well, where can I begin?
Indonesian has the most unique cuisine in the world due to the combination of cultural diversity and its geography.
Most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.

We serve simple foods in general, but using plenty of herbs, various roots, spices, leaves and grasses adds zest to most of our meals. Some of you may think that Indonesian foods are spicy and hot because we use chili pepper on mostly every dish. But it's not really true. In fact, the most widely used spices are cumin (caraway), coriander, and ginger. All relatively mild spices and give such a mild aromatic dishes.

Some other countries have bread as a staple food. In Indonesia, rice is the most important staple food. We eat it for breakfast until dinner. İt normally accompanies every meal too. For daily consume we eat steamed white rice. Even you may find some other type of rice such as white Glutinous rice and black glutinous rice. But those glutinous rice usually being used for our snack (jajan) , cakes or on sweet treats. check Indonesian food category  and Indonesian snack (kue) for more.

But rice is not the only staple for All Indonesian. In eastern Indonesia, like Maluku, we can find sago as their staple food. And some other regions people eat cassava and corn as main staple. 

The most common method for preparing food is frying, sautéing, and steaming. Although of course grilling, simmering, roasting, and even baking are also popular. 

Besides famous with a variety of spices and herb, using coconut is commonly find in mostly Indonesian foods. We use coconut start from its flesh, its water, coconut milk, until its leaves. Coconut used in main dishes, side dish until sweet treat.

For some people eating offal or another part of an animal sounds gross. Or maybe some of you just don't know how to prepare or cook them.

Offal could be delicious as normal meat if we know how to cook it, for example, cow's feet (or legs) or (beef) tongue. You can be hooked once you taste a delicious meal using those animal parts because it is prepared correctly and cook in a clever way. 

Today I am going to share a tip on how to prepare and cook beef tongue. Beef tongue is lean meat that can be very tasty. But when you didn't cook it properly it can be pretty chewy and almost rubbery.

Since it's quite lean as I mentioned above, it'll take some time to cook to have a butter-soft texture which we look for. Some said 30 minutes per pound, some said an hour. 
Personally, I didn't really use a timer or whatsoever, İ just cooked and check my beef (ox) tongue periodically and test it by inserting a big fork in the thickest part of the tongue, when it easily slip off from the fork it's done.

AGAİN. Somebody steal my blog contents !

İ am really upset right now and really angry after İ found another stolen page using mostly my whole blog content for his blog.
The blog name is resepmasakandaridesa.blospot.com 




I already report some of content to DMCA copyright removal but since that blog stolen mostly all my blog content.. I couldn't fill many reports. İt's annoying! 😠
Blogspot should remove and ban that blog.




From screenshoot  you can see that most label that blog using also almost exactly same as my label category ... could be that thief got break into my HTML ...hiks.. 😢
anybody could help me please..?

I also already report this case to blogger forum and I hope somebody finally can help me with this annoying thing.

I can't believe that still there is somebody who no pride at all to do this..shame on you!

Turkish healthy drink; Sahlep (Salep).. What is it and how to make it

Winter 'officially' comes in our town. After raining since last night follow by soft snow fall down turns Bursa into uniform color-white... hhhh.... finally fresh air and softness cool. And nothing can comfort us in this such weather better than hot yet nutritious beverage.

Salep or Sahlep or sahlab is a powder made from the tubers of the orchid genus orchis (including species Orchis mascula and Orchis militaris). These tubers contain a nutritious, starchy (about 10%~30% starch) polysaccharide called glucomannan (about 30%~55%). 

Salep flour is consumed in beverages and desserts, especially in places that were formerly part of the Ottoman Empire.

The root of the plant is collected in Sahlep season (May and June). Collected tubers are cleaned by washing with water, boiled in water or milk, and hang on a rope, then air-dried. The tubers are pounded to dried powder. The obtained powder gives sahlep powder ready to used product. Widely used as raw ingredients like dondurma (ice cream) also as beverages. It'll swell when used with ice water and milk. 
1 kilogram of pure sahlep powder produces from around 2 thousand 600 orchis tubers. So no wonder the price of pure sahlep powder is very expensive about 300~400 TL per kilo.

Does this include theft of cyberspace? Stealing your images / Pin and put their link instead of yours... only to gain visitors to their page.

Recently, I came across some accounts that "use" my images/pin on pinterest and change my link to theirs

It's all about Children,

Children... they are in fact who always wiser and more mature than us, the parents.

They are actually who teaching and mentoring us to be a better person everyday.

No matter how bad we are as their parents, they are always be the best children we ever have.....

We owe to them always... Children who everyday become the victim from how bad we control and manage our own emotion.

The children who burnt by residue of our incompetence for trying to be an adult human being.
Actually the children who suffer and endure the consequences of worst days we made day by day...

The children who probably sacrificed their future just because we couldn't contrive our own.

But they are still laughing and giving us so much love.. They always make our life happy and bright.

Cold and mostly cloudy and rainy days.. sunny and warm day outside no longer there accompany our kids playing outside the house. My kid is pretty much active and easy to get bored in something, so outdoor activity is her favorite thing to do. But this mid fall when raining almost everyday make her outdoor activity (mostly in playground) become muddy and wet.. I don't mind the dirty part... but when it follow by illness and flu after it...that makes me try to keep my daughter stay inside for a while.

Membuat lontong di magic jar (how to make rice cake in rice cooker)

Ingredients:
  • 2 cups rice, wash and drain
  • 8~10 cups of water (water can be reduced according to how hard rice cake you wanna go)
  • half lemon juice (optional). this helps your rice cake has a longer life time

Things you'll need
  • 1 loaf pan (10x20x7 cm)
  • plastic wrap larger than loaf pan ( I use plastic pouches and cut the sides to open wide)
  • rice cooker.
How to:
  1. Put all ingredients in your rice cooker. Push the "cooking" mode button and let it cook until the button up to "warm" mode. 
  2. Open the lid, with wooden spoon mix the rice inside rice cooker while push the soft rice between back of wooden spatula and rice cooker pan in order to make it almost like a puree. Close the lid and push button to "cooking" mode again. Let it cook until button goes up to "warm" mode.
  3. Do same method like no.2. Repeat 3 times or 4 times.
  4. Cover you loaf pan with plastic wrap, move your puree rice one wooden spoon at a time while press it hard to compress the rice cake and make it solid mass. Cover with plastic wrap and once again press it hard with something flat and let it cool at room temperature. 
  5. The rice cake will harder after keep in fridge few hours. Your rice cake is now ready to eat.
*Sorry I didn't include step by step picture, maybe next time I'll attach how to make it step by step so you will have better illustration.

Is a traditional soy product originally from Indonesia. It is made by a natural culturing and controlled fermentation process that binds soybeans into a cake form, similar to a very firm vegetarian burger patty. Tempeh is unique among major traditional soy foods in that it is the only one that did not originate from the Sinosphere cuisine.

It originated in today's Indonesia, and is especially popular on the island of Java, where it is a staple source of protein. Like tofu, tempeh is made from soybeans, but it is a whole soybean product with different nutritional characteristics and textural qualities. Tempeh's fermentation process and its retention of the whole bean give it a higher content of protein, dietary fiber, and vitamins. It has a firm texture and an earthy flavor which becomes more pronounced as it ages. Because of its nutritional value, tempeh is used worldwide in vegetarian cuisine, where it is used as a meat analogue.

Orange Curd Recipe and seasonal Table list for fruits, vegetables and fish


Today I went to traditional market (turkish=pazar). In my neighborhood traditional market open every Wednesday. I had no idea what to buy because you know in Turkey (maybe in other 4 seasons country) people sell and buy what's in season. Me as tropical  person still hardly to adapt my mind on it-even I'm living here for 6 years! 
But for few things I already kept on my mind when it's really season so I can stock them as much as I can..what is that? Chilliiieees..!! Yes, I can not eat without chilly (^,^)
So I knew when chilly season start and when it's becoming very cheap.

Below my post I have a roughly estimate list what is in season. That table list actually for my self to reminder if I need to make/ cook/ baking something.

 And today in pazar I saw many cheap orange. Orange, as grapefruits and quince has peak season on January or February... I don't know if it's good orange or not since it's actually end of it's season..but I bought them anyway one kilo only for 1 TL. Still didn't know to do with those oranges until I saw my lemon curd on fridge. I made lemon curd often cause I love lemon so much and I can find fresh lemon almost everyday.

I know many people love Roll Cake aka swiss roll....and I guess not a few of us either got struggled to make it one perfectly. 
Some end up with crack during rolling it--that's common problem on making roll cake. I know.. I've been there before..or even until now sometimes I have that problem.

But I never give up on things...no no no..not me! (^,^) . I kept learning, trial and error on some recipe and technique so I can determine what kind factors which make sad face on us when making this unique delicacy dessert. I am not an expert person who can tell you what to do or not to do to make roll cake perfect. And I'm not guarantee either after you read my review you will 100% success making it... I just share according my last trial and error making this roll cake.. So if you have something on your mind...speak out to me..I'll be very happy and thankful.

The recipe in my humble opinion is one important key to make perfect roll cake. Most roll cake recipe require less flour than liquid (from eggs, oil/ melted butter, etc) to make it flexible enough to handle.... But again..I'm not expert in this field. You may do trial and error also on some different recipes.

MOİST LEMON CAKE and tip how to bake cake flat

İf you want to make a cake to decorate later or even stack them later. You don't want to remove too much uneven risen swell cake to form it flat, right? Nice and even surface cake is everybody's ideal cake to decorate with.
İ saw on internet you can use a pan with a lid to make even your cake surface during baking. Or there is "strip bake even" from w*lto*. This strip you can Wrap around your pan during baking.

So İ want to have that nice flat surface too on my cake but İ don't purchase those things. So İ saw some people make their own strip.. yes, That's it. İf you don't have ready to use (and fancy) w*lto* "strip bake even" you can make it by your own. All you need is just old kitchen towel. Cut lengthwise (depend on your pan size)-- give some spare, you can always adjust the length later. Just before baking dump that towel with water and Wrap it around your baking pan.  And other thing you will need is a pin to secure the towel after you Wrap it on your pan. That's it...try it..and you will get perfect flat cake.


Now let's talk about my moist and yummy lemon cake. Today İ bake a lemon cake for decorate later. Easy yet delish cake you'll ever bake..

Making  a blog page it's not as easy as you think..especially cooking blog. There are many effort we put there. We trial error of some recipe, then make "report" for our reader so they can take some learn and evaluations from our failure. So it's not just write recipe that we never really try in our kitchen then we can easily take somebody else' photos.

And if we were success with our recipe..still we make so many effort to photograph them..edit those picture ..make a file ..then present them to our audience/ reader so our reader-again- can take some learn and evaluation from it...YES!! WE ARE WORKİNG to make our page !

But how do you feel if you find your recipe or your photograph suddenly on other'page without our permission or even didn't link to us...and worse is: taken our photo work for their own commercials purpose? What will you do?

İt often happens to me. Sometimes directly İ comment that post which content my work then link to my page--mostly they delete my comment but still continue using my photo work...İt's truly annoying! some other time İ email them to delete my photo work or at least link to my page blog. yes..this way also sometimes we deal with stubborn person..sometime if İ'm lucky İ get positive respond from them... But still it's annoying right? We can not all time randomly googling our own post to see who use our work without permission or link to us.

And here some of my photo work which being used by others without my permission. İ show their link also for you. İ will not take down those picture until they contact me personally or comment in this post to say sorry and remove the picture they use.













For now İ only googling randomly those my 2 posts and found that..Who knows how many more İ don't see it.
So.. until they didn't say sorry or ask permission to me İ will not take those pictures down.

Celebrating Eidul Fitr (Ramazan Bayram) and also My kid's 2nd B'day

Happy Eid al Fitr 1435 H for you who celebrate it. 

This Eid al Fitr 2014 is the happiest and memorable moment for me. After more than 5 times celebrated Eid in Turkey, this is the first time I feel like celebrate Eid al Fitr in my own country. Many my Indonesian fellow came to visit with their family. Some students who study here also came to visit.. to tied more closely relationship.

Beside that memorable Eid al Fitr, this year coincide with  my lovely baby's birthday, Sahnaz Kale this July turns 2! .. Time feel too fast passing by.. I still feel I just born her few months ago..now she turns 2 !

Two happy reasons (Eid al Fitr and my princess' B'day) is enough for me to celebrate it, just simple celebration. We invited some Indonesian to spend happy moment with simple Indonesian and Turkish Foods.

Like normally b'day party I also made one simple b'day cake for my daughter. This chocolate cake  made from 1 recipe of steamed chocolate sponge cake and 1 recipe chocolate brownie recipe steamed with simple fondant decoration. And chocolate frosting recipe here.

For you (new readers of this page) maybe didn't know why, or my old blogger / foodies friends might just figure it out...yes since I was pregnant I didn't post regularly..... coz as you know, during my pregnancy I didn't want to go to my own kitchen or any other's one. My cake deflated, my cooking burnt, etc..so I couldn't post anything new in my blog... and also I was ssoo ssoo lazy doing anything. I just love to walk...walk around my city...lol
