"Kompostosu" or in English compote Fruit stewed or cooked in syrup
Seftali is a Turkish name for peach. During this August summer (which coicendencly Ramazan month) I already made some Kompostosu from some vary fruits.. very refreshing for break the fast...
- 6 peaches. peeled and wedge lengthwise.
- 3 cups water. bring to a boil.
- 1 +1/2 cup granulated sugar, if you want more sweet could be added.
- yellow food coloring (optional).
- 1 teaspoon citric acid or can use one tablespoon of lemon juice.
Put the sugar in boiling water. Add in peaches and cook approximately 5-8 minutes.Add the citrus and food coloring. Cook approximately 3 minutes longer.
Turn off the heat.
Serve cold after being stored in the refrigerator.
Note:
The second way (which is mostly done in homes in Turkey) If you want to make lots of "kompostosu" and store them in jars.
Boil water with sugar, citrus and food coloring. Turn off heat and stir the fruit into hot syrup. Place in a jar and cover tightly. Place those jars in a deep pan of water (approximately 3 / 4 tall jar), bring to a boil over medium heat for approximately 40-50 minutes.

Selama musim panas ini sudah beberapa "kompostosu" buah yang saya buat, diantaranya "seftali" atau dalam bahasa Indonesia buah persik. Kombinasi asam manis dari buah persik ini sangat cocok untuk dibuat "kompostosu"
Bulan Ramadhan yang jatuh bulan Agustus tahun ini, jatuh di musim panas.. jadi sangat menyegarkan bila terhidang "kompostosu" dingin dimeja untuk membatalkan puasa...

6 buah peach. kupas dan potong memanjang.
3 gelas air. didihkan.
1 1/2 cup gula pasir-jika ingin lebih manis bisa ditambah porsinya.
pewarna makanan kuning (optional). gunakan SANGAT sedikit.
1 sdt citrus atau bisa menggunakan 1 sdm cuka putih.
Masukkan gula dalam air mendidih. Masukkan buah persik dan masak kurang lebih 5-8 menit. Tambahkan citrus dan pewarna makanan. Masak lagi kurang lebih 3 menit.
Matikan api.
Hidangkan dingin setelah disimpan dalam lemari es.
Catatan:
Cara kedua (yang banyak dilakukan di rumah-rumah di Turki) Jika ingin membuat banyak dan menyimpannya dalam toples.
Didihkan air bersama gula, citrus dan pewarna makanan. Matikan api dan masukkan buah kedalam sirup panas. Taruh dalam beberapa toples dan tutup rapat. Taruh toples-toples tersebut dalam panci yang berisi air (kurang lebih 3/4 tinggi toples), didihkan diatas api sedang selama kurang lebih 40-50 menit.
