Steamed Lemon Cake with Lemon Curd filling for B'day cake

Selam everybody...Merhaba from Turkey.

As my promise before to post my cake with lemon curd filling (and as topping too). It's Steamed lemon cake. Actually this cake is  order/ request from my friend for her husband's B'day. So I'm sorry I can not post picture when cake being cut...
But anyway, it's great lemon cake ever (My friends and her family said so)... the moist lemon cake (because I steamed it), combine with yummy lemon curd between 3 layers plus on topping... hmmm.. I'm thinking to make it again for my self @(^_^)@


Ingredients:
• 4 medium eggs
• ½ cup caster sugar (you can add up to ¾ cup if you like it sweeter)
• 1 ½ cups flour
• 2 tablespoons cornstarch
• ½ teaspoon baking powder
• Lemon Zest of 1 medium lemon.
• 3 tbsp lemon juice.
• 4 tablespoons olive oil (or other vegetable oil).

Lemon candied
For the garnishes and filling:
• Lemon curd (see recipe here)
• Candied Lemon (I use recipe from here)
• Butter cream icing or whipping cream icing
• Yellow and orange food color for whipping cream icing

 Method:
1) Cake: Mix and sieve together, flour, cornstarch and baking powder. Set aside. Mix together, Lemon Zest, lemon juice and olive oil, set aside. Grease pan your springform pan 8 "(18 ~ 19 cm) with butter. Set aside.
2) Prepare your steamer pot, fill with enough water and heat to produce a lot of steam.Whisk eggs with electric mixer, use low speed first. Combine caster sugar in 3 stages while beat until sugar completely dissolved. Higher the mixer speed. Beat eggs and sugar until pale and thick. Lower the mixer speed again and continue beating about 2 ~ 3 minutes more before turn off the mixer.
3) Fold in flour mixture and lemon mixture, folding until well blended and no lumps. Pour into prepare springform pan and steam until cooked about 40 minutes. Check with a skewer / stick, if it comes out clean, your lemon cake is done. Remove from pan and let chill at room temperature before unmold.


4) Cut the cake horizontally into three equal parts. Spread each surface with lemon curd,  neatly stacking each cake slices . Garnish with whipping cream or butter icing and lemon candied (as picture).
Store in refrigerator before cut / serving.

  6. This looks absolutely fantastic. I've been waiting for you to post it and now I can't wait to make it. I have to admit that I did scroll through first thing to see if I could find a cut-into piece, then read that you didn't take a picture of that. So, yes, you have to make one for yourself so you can show us what it looks like on the inside!
