My today post is Kari Ikan or Indonesian Fish Curry.
Generally we serve this curry with steamed rice together with some steamed simple steamed vegetables side dish like steamed casava's leaves or papaya leaves.
It best makes this curry spicy as our original Indonesian style.
- 500 grams of mackerel/ bonito/ tuna. Cut into approximately 1 inch thick
- half medium lemon, take the juice
- some birds eye chilies, according how spicy you wanna go
- about 2 cm ginger, bruised
- about 2 cm galangal, bruised
- 4~6 kaffir lime leaves
- 1 stalks lemongrass, white part only, bruised
- 1 curry leaves--> I didn't use it, I use bay leaf
- 1/2 tsp turmeric powder
- 1 Tbsp salt or to taste
- 1/4 tsp ground pepper
- 1/2 teaspoon sugar
- 700~800 ml of coconut milk, medium thick
- enough cooking oil.
- 5~6 red chilies
- 4 cloves garlic
- 6 shallots or half medium size red onion
- 1/2 teaspoon anise
- Toss the fish with lemon juice, let it stand for about 15 minutes. Fry fish in a wok just until dry on surface over medium heat. Set a side.
- Discard oil reserving about 2 Tbsp in same wok, stir fry ground spices few minutes until aromatic. Stir in birds eye chilli, ginger, galangal, kaffir limes, curry leaf (if use) and lemongrass. Keep stir fry until the spice fragrant and look oily.
- Mix in coconut milk, season with salt, sugar, turmeric powder and pepper, stir well.
- Add in fish, gently stir then cook (uncover) until it start boiling. Frequently stir the fish so that coconut milk won't clot. Remove from heat after your curry boiling.
BAHASA INDONESIA
- 500 gram ikan tenggiri/ tuna / makarel
- 1 sendok makan air jeruk lemon
- beberapa biji cabe rawit, sesuai selera
- 2 cm jahe, dimemarkan
- 2 cm lengkuas, dimemarkan
- 4~6 lembar daun jeruk, dibuang tulang daunnya
- 1 batang serai, diambil bagian putihnya, dimemarkan
- 1 tangkai daun kari --> saya tidak pakai
- 1/2 sdt bubuk kunyit
- 1 sdm garam atau sesuai selera
- 1/4 sendok teh merica bubuk
- 1/2 sendok teh gula pasir
- 700~800 ml santan
- 2 sendok makan minyak untuk menumis
- 5~6 buah cabai merah
- 4 siung bawang putih
- 6 butir bawang merah
- 1/2 sendok teh adas manis
- Lumuri ikan dengan air jeruk. Biarkan 15 menit. Goreng sebentar.
- Tumis bumbu halus sampai harum. Tambahkan cabai rawit, jahe, lengkuas, daun jeruk, serai, dan daun kari (jika ada). Aduk sampai layu.
- Tuangkan santan, garam, merica bubuk, kunyit bubuk dan gula pasir. Aduk rata.
- Masukkan ikan. Aduk rata. Masak sampai mulai mendidih. Aduk sesekali agar santan tidak pecah. Angkat dan siap disajikan.
