İt's been a while İ didn't post any butter cake since my last Chocolate marble butter cake. No other reason except because we don't really like eating butter cake except for weekend only. Or if İ had guest came to our house.
Husband prefer to have something light for after dinner dessert or just light cake/ snack accompany us during tea time.
And when one cooking group İ just joined in Instagram has theme for this week; marble cake. So voalla.... İ have a reason to rebake my childhood fave cake; butter cake.
At first İ wanted to make marble swiss roll but my kid out of sudden asking me to make A cake. She said boring with roll cake 😘😘😘😘 Aahh...ah..kido! She can request now..😊
But today İ am trying different recipe then my previous butter cake. The recipe İ adapted from mykitchen101.en with modification on red velvet marble (original recipe only use cocoa powder)
The baking method is steam bake-İ place my baking pan over rack and put water in larger pan. This steam bake prevent over cracking on cake surface during baking also can moisten the cake. The result, moist and delicious butter cake. İ still got slightly cracking on top of my cake..next time İ will lower my oven temperature.
So here İ share the recipe you could try also in your kitchen.
The recipe require 8" square pan / 20 cm round, but İ use 10x15 loaf pan as my picture here and İ cut recipe in half.
Marble Butter Cake Recipe
8" square pan / 20 cm ( İ use half recipe from following recipe for 10x15 cm loaf pan)
Ingredients:
- 280 g low protein flour (cake flour) *
- 1 tsp baking powder
- 250 g butter (salted, softened)
- 100 g fine granulated sugar
- 1/2 tsp salt
- 1/2 tsp vanilla essence (optional)
- 4 egg yolks ( İ use 70 gr egg weighing with shell)
- 120 ml milk
- 10 g cocoa powder
- Red color few drop (optional)
Ingredients for meringue:
- 4 egg whites ( İ use 70 gr egg weighing with shell)
- 100 g fine granulated sugar
Method:
1) Sift together flour and baking powder, set aside. Brush baking pan lightly with margarine/ butter and line the bottom with parchment paper set aside. Pre heat oven at 160°C.
2) Cream butter, sugar, salt and vanilla with medium speed for few minutes until it light and fluffy. Whisk in yolk one at a time, whisk to well blended after each addition (pict #1).
3) Sift in dry mixture alternately with milk in 4 batches, fold nicely to blended at each addition. Set a side.
4) İn another clean bowl, whisk the egg white until foamy. Add sugar gradually and continue to whisk on high speed until it form soft peak.

5) Add meringue to the yolk batter in 3 batches, fold gently to combine. Take about 1 cup (½ cup if you halved the recipe) of that batter and place it in small bowl, add with cacao powder and red color (if using) then mix it well to combine.
6) Dollop half white batter into prepared pan the dollop some red velvet batter. Use chopstick or knife to make marble pattern. Dollop remaining white followed by red velvet batter then again make marble pattern. Knock the pan against counter to flatten the surface.
7) Place the pan over a bigger baking pan with a rack on it. İ pour a small amount of cold water into bigger pan but try not to touch the loaf pan. Bake in a preheated oven at 160°C for 45 minutes then at 180°C for 30 minutes. Cake is done when you insert skewer in middle part and comes out clean.
Note: Recognize your own oven, each one has different heat and result. İ bake mine at 140°C for total 65 minutes.
8) Remove from the oven and let it cool at wire rack before serving.

Udah lama banget sih nggak nge-baking buter cake. Terakhir bikin butter cake beberapa bulan yang lalu..udah lama banget ya.
Emang di rumah saya, butter cake kurang fans nya. Suami lebih suka dessert yang creamy dan ringan saja. Sedangkan si kecil...yaa gitu deh...maunya yang banyak krem nya 🍰
Pengen baking butter cake lagi buat obati kangen cake jadul masa kecil saya ini tapi belum sempat-sempat sampai akhirnya "Baking Bareng" di group insta bikin event theme marble cake!
Ya udah...pas deh. Sekalian nge marmer butter cake. Beda dengan resep sebelumnya, kali ini coba resep dari mykitchen101.en dengan sedikit modif di motif red velvetnya.
Cake nya enak dan moist tapi entah kenapa beremah lumayan banyak, beda dengan butter cake saya terdahulu.
Cake ini dipanggang dengan metode steam bake, yaitu dengan menambahkan air di loyang bagian bawah baking pan(tapi air tidak menyentuh baking pannya). Jadi semacam dikukus gitu lah 😖
Dibawah saya reshare resepnya ya buat yang pengen coba juga.
Red Velvet Marble Butter Cake
Untuk loyang 8" / 20 cm
Resep adaptasi dari mykitchen101.en modifikasi di red velvet
1) Ayak jadi satu terigu dan BP, sisihkan. Panaskan oven suhu 160°C. Siapkan loyang ukuran 20 cm. alasi baking paper.
Bahan-bahan:
- 280 g terigu protein rendah *
- 1 sdt baking powder
- 250 g mentega
- 100 g gula kastor
- 1/2 sdt garam halus
- 1/2 sdt vanilla
- 4 kutel (saya pakai telur ukuran sedang)
- 120 ml milk
- 10 g natural cocoa powder
- pewarna makanan merah (optional)
- 4 egg whites
- 100 g gula kastor
Method:
2) Kocok mentega, gula, garam dan vanilla hingga mengembang dan pucat dengan kecepatan sedang.
3) Masukkan kutel satu per satu dan kocok hingga tercampur rata.
4) Tambahkan tepung dan susu secara bergantian dalam 4 tahap. Awali dengan tepung dan akhiri dengan penambahan susu cairnya. Aduk balik hingga benar rata.
5) di mangkok yang lain (hindari menggunkan mangkok plastik), kocok putih telur hingga berbusa banyak. Masukkan gula secara bertahap sambil tetap dikocok dengan kecepatan tinggi sampai soft peak saja.

6) Campurkan meringue ke campuran kuning telur dalam 3 tahap. Aduk balik hingga rata.
7) Ambil adonan sekitar 1 cup dan campurkan natural cocoa powder dan pewarna merah aduk rata.
8) Masukkan dalam loyang yang sudah disiapkan secara berselang seling lalu dengan menggunkan lidi atau sumpit, buat motif marmer.
10) panggan 160°C selama 45 mnt. lalu 180°C selama 30 menit. Tes tusuk sebelum dikeluarkan dari oven.
Note: Suhu oven sesuaikan dengan kondisi masing-masing oven. Petunjuk diatas hanya panduan saja. Saya panggang suhu 140°C selama total 65 mnt

Ok...I LOVE red velvet. I would be all over this....and if I had it in my house....I just know I would be eating this for breakfast.
