No, it's not just regular roll cake with buttercream or jelly filling.. it's roll cake made from spinach.

Yes... this is my kid's friendly roll cake recipe. ฤฐ was inspired by my previous Spinach Cake which liked by my picky kid. Also, my spinach chiffon cake has become my family fave.
This spinach roll cake is easy to make also delicious. You barely can taste the spinach in it or smell it. Nobody will know it make with a lot of nutritious vegetables until you tell them ๐Ÿ˜



ฤฐ am the mother who always struggled to give my kid vegetables. When she saw something green or red or anything not protein in her food..she would get rid of it ๐Ÿ˜ต
That was until these lately..  me and her father slowly convince her about eating her vegetables and fruits. Not all though, but she starts to enjoy some. 
For example, she will eat her รงiฤŸ kรถfte (meatless raw kofta) with lettuce. Or some broccoli but in small pieces form ๐Ÿ˜Š
One vegetable she doesn't want to eat until now; Spinach!
So ฤฐ keep smuggling spinach in anything she couldn't find or even taste it ๐Ÿ˜Š Like this Spinach Roll Cake. With delish cream cheese filling as her fave, she enjoys this cake 2 slices at same time ๐Ÿ˜



Stoday I post this yummy recipe for you as well. ฤฐt's fail-proof, easy and for sure, kid's friendly.. The cake was so moist and delicious...really..you will not take only one slice ๐Ÿ˜‹

Spinach Roll Cake with Cream Cheese filling

For baking tray 35 x 35 x 4 cm Or 40 x 30 x 4 cm
ฤฐngredients for the cake:
๐Ÿ’š 6 medium egg, separated yolks from white. Room temperature.
๐Ÿ’š 70-75 g spinach, leaf part only
๐Ÿ’š 60 g milk
๐Ÿ’š 60 g vegetable oil
๐Ÿ’š ½ tbsp vanilla essence / extract/ paste
๐Ÿ’š 110 g AP flour
๐Ÿ’š ¼ tsp salt
๐Ÿ’š 110 g caster sugar

How to make:

1) Preheat oven at 160-170°C. Line baking tray with parchment paper. Using a hand blender or blender jar, blend spinach with milk and oil until really smooth.

2) ฤฐn big bowl, mix egg yolks, vanilla, and smooth spinach. Whisk until well blended. Then sift in AP flour, continue to whisk until smooth and well mixed. Set aside. See pictures #1 and #2 below.



3) ฤฐn another grease-free bowl, put egg white and salt then start to whip until really foamy. Gradually add in caster sugar in three stages while continue to whisk at high speed. Whisk the white until almost hard peak form. See pict #3. 

4) Add meringue to the green batter in three batches. Fold nicely each addition. Pour into prepared pan. Rap the pan a few times to remove air bubble traps in batter.

6) Bake in preheated oven about 25-30 minutes, or until an inserted toothpick comes out clean and when you gently touch the surface it will spring back.
Note: Recognize your oven condition. Every oven gives different baking results and baking time.

7) Remove from the oven and let it rest over a cooling rack. Let it cool to room temperature.
Spread the filling (recipe below) and start to roll from the longer side. Roll it very tight and wrap it with another baking paper. Keep in the fridge about 30 minutes before slice it.

Cream cheese filling:
๐Ÿ’š 250 g cream cheese, room temperature
๐Ÿ’š 55 gr butter, room temperature
๐Ÿ’š 1 tsp vanilla
๐Ÿ’š 110-130 g icing sugar
๐Ÿ’š 100 g white cooking chocolate, melted 

Beat cream cheese, butter, and vanilla just until smooth, beat in icing sugar little by little while whisking. Then whisk in melted white chocolate.

  9. I had to chuckle as I read your post! I raised 4 sons, and just spent a week with 1 and 3 year old grandsons that didn't want to eat anything. Hiding spinach in something delicious is such a great idea!
