HOW TO MAKE PERFECT SHAPE HOMEMADE BURGER BUNS

Baking bread is an almost daily routine for me. Any kind of bread, Asian style soft bread until artisan European style bread with chewy texture cause my husband is a bread eater. 
My kid, she enjoys everything. She can enjoy food from my culture as much as she likes Turkish food.
Me as Asian, mostly consume rice or noodle but of course, I can not resist hearty warm delicious soup with warm bread in chill days 😍

And since she started school a few years ago, baking burger bun is become my routine for her lunch box or sometimes for the fathers too.
And just today I want to share also with you since I have documented in pictures this time. This recipe I use for few years already and it works for me and turns into nice beautiful buns just like storebought.

For you who never bake bread or bun before this recipe might be very easy for you to start. Here I make my own burger rings to get nice shape when it bakes but of course it's optional for you. İf you bake your own buns very often this ring pretty much help. You can get it ready at baking store but I prefer make them by my self.

All you need it's just thick cartoon and cut into 3½ cm (for height) and make round circle with diameter 8½ cm (or depend how big your burger bun will be). Then wrap few layers with thick aluminum foil.
Second option is using tuna/ sardines can. Collect some empty and cut both up and down side to make ring.




HOMEMADE BURGER BUNS

Ingredients:
🍞 350 gr AP flour
🍞 2 tsp dry instant yeast
🍞 30 gr sugar
🍞 175 gr full cream milk
🍞 1 medium egg
🍞 50 gr butter
🍞 1 tsp salt

topping :
🍞 melting butter



How to:

1. İn a mixing bowl, mix and knead all ingredients EXCEPT butter and salt. You can knead it by hand, mixer or bread machine. mix until all come together. Then add in butter and salt.
Continue to knead until the dough is soft, smooth and reach "window pane" stage.

How to perform windowpane stage: take a piece of your dough then stretching it out wide until it is nearly translucent without ripped. You want to do this to make sure that your gluten is sufficiently developed on.

2. Round the dough and place over lightly grease bowl, cover with damp towel kitchen or plastic film and rest it until double it size. How long it will be depend on your room temperature. Just place it in the warmest place in your house.

3. Flatten the dough to remove air bubble then divide the dough into equal part. I weigh my dough 55 gr each ( for 8½ cm diameter ring). Using your palm roll each part into a ball then lightly flatten it. 
Put inside prepared ring just in the middle of the ring, over baking tray lined with parchment paper. Do to all remaining dough. Let them rest again about 30 minutes or until noticeably puffy.

4. Pre heat oven to 180-190 ℃. Just before bake time brush the buns with melted butter.
Bake the buns for 15 to 18 minutes, until golden. Remove them from the oven, and brush with the remaining melted butter. This will give the buns a satiny, buttery crust.
Cool the buns on a rack.
Note: Time and temperature of baking it's only guidance, adjust to your own oven condition.

Sudah agak lama ya gak posting di blog... selain sudah mulai sibuk karena anak udah mulai masuk sekolah bulan lalu..juga saya punya sedikit hoby yang tahun-tahun lalu gak bisa saya kerjakan... menanam dan merawat tanaman. Saya suka sekali menanam tanaman hias maupun buah / sayur yang bisa ditanam di pot... yaa.... di pot aja..di balkoni sebab tak punya lahan didaerah yang "bertema" apartemen macam saya tinggal ini 😊
Naahh..bulan bulan oktober begini sudah masuk musim gugur jadi tanaman tdk butuh banyak perhatian karena gak perlu sering siram atau lihat daun2nya.. agak berkuranglah. Nanti Inshaallah musim semi baru lebih aktif lagi.

Oh iya kembali ke topik,  kali ini mau sharing resep bikin burger bun. Disini, baking roti sudah jadi "ritual" harian buat saya. Maklum suami kan kebanyakan makan roti daripada makan nasi. Hampir 2 atau 3 hari sekali saya baking roti untuk makan kita sehari-hari. Roti yang saya maksud adalah jenis roti "artisan" khas Turki/ Eropa yaitu keras diluar dan soft agak "chewy" di bagian tengah.
Yang ingin tahu bagaimana itu, bisa di cek di kategori "Bread/ bun" ya. Sekarang yang ingin saya share adalah jenis soft bread untuk burger bun. Udah sering baking tapi baru belakangan ini bisa saya poto dan dokumentasikan. 
Yuukk yang pengen belajar baking roti.. resep ini mudah diikuti dan simple kok...



HOMEMADE BURGER BUNS

Bahan:
🍞 350 gr tepung protein tinggi
🍞 2 sdt ragi instant kering
🍞 30 gr gula
🍞 175 gr  susu
🍞 1 telur
🍞 50 gr mentega
🍞 1 sdt garam

Olesan :
🍞 mentega leleh

Cara membuat:

1. Campur semua bahan KECUALİ mentega dan garam dalam mangkok ulen lalu uleni hingga tercampur rata-tidak perlu kalis. Bisa gunakan mixer atau manual saja.
Kemudian masukkan mentega dan garam dan lanjutkan mengulen sampai kalis, elastis dan mencapai "windowpane stage"

Cara mengetes "windowpane" stage: ambil secukupnya adonan, lalu rentangkan dengan bantuan 2 tangan dan jari hingga terlihat transparan tanpa robek. Naahh..kalau sudah bisa sampai tahap begitu artinya adonan sdh melewati tahap "windowpane" ini.

2. Bulatkan adonan dan taruh di dalam mangkok yang sdh diolesi sedikit minyak. Tutup dengan platik film dan diamkan hingga mengembang dua kali lipat.
Note: Lama "proofing" tergantung kondisi suhu dan kelembaban ruang masing-masing ya.

3. Kempiskan adonandan uleni ringan saja sebentar. Bagi-bagi adonan menjadi bulatan kecil sama rata. Saya timbang masing-masing 55 gr, jika ingin lebih besar bisa timbang 60-65 gr. Timbang semua adonan sampai habis. Lalu bentuk bulat tiap bagian dengan rapi dan tekan agar sedikit gepeng (bener gak sih bahasanya? 😂). Taruh di loyang beralas baking paper. Kalau punya ring burger bisa ditaruh ditengahnya *(lihat note dibawah). Diamkan sampai kurleb 30 mnt atau sampai mengembang.

4. Panaskan oven to 180-190 ℃ sebelum waktu memanggang. Olesi permukaan bun dengan mentega leleh. Panggang 15-18 menit sampai keemasan permukaannya. Oles lagi dengan mentega leleh ketika keluar dari oven. Dinginkan di rak pendingin.

* Note
Memakai ring burger adalah pilihan ya... tapi karena saya sering sekali bikin burger jadi punya ring burger bisa cukup membantu bikin bentuk roti yang cantik mirip seperti beli jadi 😊

Ring burger bisa beli atau dibuat sendiri. Saya buat ring sendiri dengan memotong karton tebal ukuran 3½ cm untuk tingginya dan panjang tergantung diameter burger yg ingin dibuat. Disini saya buat diameter ring 8½ cm, jadi potongnya kurleb 10 cm untuk jarak sambungan ya. Lalu di staples dan lapisi dengan aluminyum tebal dua lapis. Jadi deh.

Cara lain saya pakai kaleng ikan tuna bekas dan saya lubangi bagian atas dan bawah.
