These crumble bar is so moist and delicious. With fresh fruit in it make this dessert so easy to become everybody's favorite. I bake this cake twice this week and all gone in a flash.
We love to enjoy this cake after dinner. Enjoy them with hot Turkish tea or sometimes with my afternoon coffee. Yep, this is also so great as a coffee cake.

Summer almost change into fall, but still was
rm and some summer fruit still there in my local market, maybe from the latest harvest this summer. So I decided to pick up those last summer fruit to be enjoyed in this warm fall.
Then voalla... some of them I make this perfect coffee cake. Strawberry and nectarine streusel cake. If you have only strawberry, it's okay. Or maybe you have other fruits such as blueberry or blackberry you can make this cake as well.
Just anything on your hand.
What is streusel? It's a simple topping made of melted butter, flour, and sugar, that is baked right on the cake, creating a crumbly, crunchy, totally delicious layer.
This cake even better after 24 hours. Keep leftover in the fridge and let it sit at room temperature before eating it. But I am not sure you will have leftover ๐
So, here is my simple and quick recipe on how to make this yummy crumble bar.

Make one 18 x 18 cm square ( 8") pan
For the crumb topping:
๐ 100 gr butter, melted
1. Preheat the oven to 180℃ (350℉). Grease one square (18x18 cm) baking pan. Line the bottom of the pan with parchment paper, leaving an overhang on two sides.
2. Make the crumb topping: Melt the butter. In a medium bowl combine flour and sugar. Add melted butter and lemon juice. Use a fork to mix them until moist and crumbly. Place in the refrigerator until ready to use.
3. Sift and whisk together all-purpose flour, baking powder, and salt. Set aside. In a mixing bowl beat the butter, powdered sugar, and vanilla until light and fluffy. Add the eggs, one a time, beating well after each addition. With the mixer on low, add the flour mixture and stir until just combined.
4. Spread the batter evenly over the bottom of the pan. Sprinkle the strawberry and nectarine chunk over top, and cover with the streusel topping, distributing it evenly over the fruits.

๐ 1 tsp baking powder
๐ pinch of salt
๐ 115 gr (½ cup) butter
๐ 100 gr (½ cup) caster sugar
๐ 2 tsp lemon juice

Note:
(*) you can use all strawberries or nectarine or any fruits you like.
How to make:

Bake until golden brown and inserted skewer comes out clean. Mine takes about 45 minutes.
Adjust baking time and temperature according to your oven condition.
5. Cool completely in pan, and lift out using the paper overhang. Cut into 16 squares and serve.

Terdiri dari lapisan yang super duper yummy! Lapisan cake dasar yang lembut, lapisan buah segar yang dipotong-poting kecil lalu lapisan atas terdiri dari crumble atau streusel yang renyah dan legit. Jadi bisa dibayangin ya betapa yummy dan lezatnya cake yang satu ini.
Apa sih crumble atau streusel itu? Crumble atau streusel itu terbuat dari campuran tepung terigu dan gula (kadang dicampur bubuk kayu manis) lau diaduk dengan mentega leleh. Diaduk sedemikian rupa hingga bergerindil kasar lalu didinginkan. Ditaburkan diatas kek sebelum dipanggang hingga memberi efek crunchy dan legit pada kue/ kek.
Kek ini bisa menggunakan buah sesuai selera, biasanya sih buah semacam blackberry, strawberry,persik, plum atau apel.
Kali ini saya pakai campuran buah strawberry dan nectarine. Bisa juga pakai strawberry semuanya ya.
Bikinnya mudah dan cepat.
Yuk, yang penasaran pengen tahu rasanya seperti apa... bikin ya.
Strawberry dan Nectarine Crumble Bar

Untuk satu loyang ukuran 18 x 18 cm
Untuk topping/ crumble:
๐ 100 gr mentega, lelehkan
๐125 gr tepung terigu serbaguna
๐ 100 gr gula kastor
๐ 2 sdt jus lemon
Untuk cake:
๐ 125 gr tepung serbaguna
๐ 1 sdt baking powder
๐ sejumput garam
๐ 115 gr mentega
๐ 200 gr gula halus
๐ 1 sdt ekstrak vanili
๐ 2 telur besar
๐ sekitar 350 gr campuran strawberry dan nektarin, potong kecil (*)
catatan:
(*) Bisa pakai strawberry semua atau nectarin semua, atau buah yang lain.
Cara membuat:
1. Panaskan oven sampai 180℃. Olesi satu loyang persegi (18x18 cm). Lapisi bagian bawah loyang dengan kertas roti, biarkan ada lebihan kertas baking di kedua sisinya agar mudah mengambil cake nantinya.
2. Buat topping crumble: Lelehkan mentega. Campur tepung dan gula dalam mangkok sedang. Tambahkan mentega cair dan jus lemon. Gunakan garpu untuk mengaduknya hingga lembab dan semua tercampur rata. Adonan akan berbentuk butiran kasar. Simpan di lemari es sampai siap digunakan.
3. Ayak jadi satu tepung terigu, baking powder, dan garam. Sisihkan. Kocok mentega, gula halus, dan vanila sampai lembut dan mengembang. Tambahkan telur satu persatu, kocok rata tiap penambahan. Tambahkan campuran tepung dan kocok lagi sampai tercampur rata.
4. Sendokkan adonan secara merata di atas loyang. Taburkan potongan stroberi dan nektarin di atasnya, dan tutupi dengan topping streusel, sebarkan secara merata di atas buah.
Panggang hingga berwarna cokelat keemasan, tes tusuk sampai matang. Saya membutuhkan waktu sekitar 45 menit.
Sesuaikan waktu dan suhu memanggang sesuai dengan kondisi oven masing-masing ya.
5. Dinginkan diatas rak, dan angkat kue dari loyang menggunakan kertas baking. Potong menjadi 16 kotak dan sajikan.
