Originated in Java, Indonesia, Satay gradually spread its appeal over the entire East Asian and Southeast Asian peninsula, before becoming a hot meal of choice among the whole world of gastronomists. While applauding the refined and luscious taste of this dish, how many of you have really wondered about the brilliant blend between the satay and the accompanying sauce? Curiously, this sauce is called by the gourmets simply Satay Sauce, without knowing, that this is, in fact, a variant of peanut sauce.

This is not a recipe that you mostly found on the internet which mostly uses peanut butter for short way or whatever the call. But really, satay peanut sauce is actually simple to make even you make it from the scratch.
And believe me, nobody in Indonesia uses peanut butter for the satay sauce π
Frankly speaking, I never buy storebought versions as well. And more, because making this satay sauce is pretty simple that noway I will buy.
The main ingredient is peanut-of course π. We use raw peanuts for making this satay sauce, but if you can't find raw peanuts, you can use roasted ones just see the note in the recipe below.
Spices and herbs. This satay sauce just needs a shortlist of ingredients.
Garlic. It gives umami and contributes most of the savory taste.
Red chili pepper. Enrich the taste and the color.
Kaffir lime leaves. Do not skip this herb, it gives a distinctive taste to this stay sauce.
Palm sugar. You can use coconut sugar or brown sugar.
Homemade Satay Peanut sauce

Make about 700 gr
Ingredients:
π₯ 400 gr raw peanut (you can use roasted one, see note below*)
π₯ 7-8 big cloves of garlic
π₯ 4-5 red chili, seeded
π₯ 3-4 pair of kaffir lime leaves
π₯ 2 tsp salt or to taste
π₯ 3 Tbsp palm sugar (you can use brown sugar)
π₯ ±600 ml water
π₯ ±5 Tbsp cooking oil
How to make:
1) Heat cooking oil in a wok/ skillet, stir fry peanut until almost cooked. Then add in garlic, red chili, and kaffir lime leaves, continue to stir fry for 2 or 3 minutes more until peanut cooked through and the garlic lightly browned. Turn off the heat.
note: Δ°f you use roasted peanut, just fry all of them together for 4-5 minutes just to bring the peanut "alive" again.
2) Do not discard the oil, blend them all with salt, palm sugar, and part of water until really smooth. Use hand handled blender or blender jar. Gradually add the rest of the water while blending.
3) Move into a saucepan, and cook over medium heat until bubbling. Stirring frequently. Turn off the heat and move to a clean jar.
Satay peanut sauce ready to use.
Note: For using the satay sauce, take peanut sauce as needed and dilute with a little hot water to make it thinner.

Saya yakin tiap orang punya resep andalan masing-masing.. juga saya donk. Resep ini saya dapat dari salah satu keluarga dari Madura yang sudah jualan sate madura di Jati Padang sejak generasi pertama hingga kini generasi yang kedua.
Saya dapat resep dari anak si pemilik warung, yang kini sudah menikah dan buka cabang jual sate dan sop tulang di kaltim. Miss you M*n*h... π
Tapi seperti halnya resep-resep masakan Indonesia lainnya.. semua pakai takaran kira-kira ya... tapi Inshaallah resep saya ini udah mirip seperti punya si M*n*h.. ntar dicicipin dan tambah garam atau gula. Yang pasti kudu punya lidah sensitif jadi bisa niru rasa seperti yang di jual di luar itu ya.. π
Resep sate bumbu kacang

Bahan bumbu kacang:
π₯ 400 gr kacang tanah
π₯ 7-8 siung bawang putih
π₯ 4-5 cabai merah
π₯ 3-4 lembar daun jeruk purut
π₯ 2 sdt garam atau sesuai selera
π₯ 3 sdm gula aren/ gula merah
π₯ kurleb 600 ml air
π₯ ± 5 sendok makan minyak goreng
Cara membuat:
1) Panaskan minyak goreng dalam wajan, goreng kacang sampai matang. Kemudian tambahkan bawang putih, cabai merah dan daun jeruk purut, terus tumis selama 2 atau 3 menit lagi. Matikan api.
Catatan: Jika pakai "roasted peanut"-kacang yang sudah dipanggang, cukup goreng semuanya selama 4-5 menit hanya supaya kacang "hidup" lagi. Kadang saya pakai kacang jenis ini.
2) Campur semuanya --termasuk minyak gorengnya--campur dengan garam, gula aren dan sebagian air, blender sampai benar-benar halus.
3) Pindah ke dalam panci saus, tambahkan sisa air secukupnya saja dan masak di atas api sedang sampai meletup-letup sambil terus diaduk agar bagian bawah tidak lengket dan gosong di dasar panci. Matikan api dan pindah ke toples yang bersih.
Catatan: konsistensi saus kacang ini kental, tambahkan sedikit air panas ketika akan dipakai. Kekentalan saus sate sesuai selera ya.
Saus kacang saus siap digunakan.
Note: Simpan dalam toples bersih dan ditutup rapat. Taruh di kulkas selama maksimal 7 hari. atau dalam frezeer maksimal 3 bulan.
