Nasi Goreng Seafood (Indonesian style fried Rice)

Rice is staple dish in Indonesia. We eat rice in breakfast, lunch and even for dinner. We make many food's variant made from rice. Not just for pilaf and rice cake (lontong or ketupat), we even process rice to become traditional snack and dessert.

And one of popular dish is Nasi Goreng or fried rice. Fried rice it self has many kind of varieties. You can check my lamb/mutton fried rice for one of variety.

And today I am gonna share my seafood fried rice. You can vary the ingredients as your liking beside shrimp and calamari as long as there is seafood in it, like fish meatball or slice of fish. And for the greens you can add some baby spinach too...

Ingredients:
• 500 gr white steamed rice (preferable left over one)
•3 medium calamari, cut into square or ring
•200 gr shrimp
•½ cup peas
• a hand full mung bean sprout
•1 spring onion, finely slice
•2 tsp oyster sauce
•2 Tbsp kecap manis/ sweet soy sauce
•1 tsp salt or to taste
•2 tsp black pepper powder
•1 tsp sesame oil
•2 + 1 Tbsp cooking oil
• 1 large egg, lightly beaten

Spices to make puree:
•5 shallots
•4 garlic cloves
•3 red chilli
•5~6 shrimp

Direction:
  1. Heat 1 tbsp oil in skillet/ wok, make egg scrambled and set a side.
  2. In same wok/ skillet, heat another 2 tbsp cooking oil and sesame oil, saute puree spice until fragrant and puree separated from the oil. Stir in spring onion, peas, shrimp and calamari. Continue stir fry for few more minute until shrimp change in color.
  3. Mix in cooked rice, scrambled egg, sweet soy sauce, oyster sauce, salt and black pepper powder. Toss to combined well. Continuously stir with your spatula until rice slightly dry and looks oily. Correct the taste, you may add salt or sugar a bit.
  4. Mix in bean sprout and toss quickly for couple minutes then remove from heat.
Serve hot immediately with shrimp cracker and carrot cucumber pickled (recipe below)


Ingredients and how to make cucumber carrot pickled:
  • 1 medium carrot, julienne cut
  • 1 big cucumber, cored and julienne cut
  • some shallots, halved
  • birds eye chilli, whole
  • 1 tbsp sugar
  • 3/4 tbsp salt
  • ½ tbsp white vinegar
How to:
>>Mix all ingredients together in medium bowl, toss to combine. Transfer into jar with a lid and store in fridge at last one hour before serving



BAHASA INDONESIA

menjadi 4 porsi

Bahan-bahan:
• 500 gr nasi putih
•3 Ekor cumi ukuran sedang, potong kotak atau cincin
•200 gr udang
•½ gelas kacang polong
•Satu genggam taoge
•1 batang daun bawang, iris halus
•2 sdt saus tiram
•2 sdm kecap manis
•2 sdt garam atau sesuai selera
•2 sdt merica bubuk
•1 sdt minyak wijen
•2 + 1 sdm minyak goreng
• 1 butir telur

Bumbu halus:
•5 siung bawang merah
•4 siung bawang putih
•3 biji cabe merah
•5~6 ekor udang

Cara Membuat:
  1. Panaskan 1 sdm minyak goreng, kocok lepas telur dan buat orak arik , sisihkan.
  2. Di wajan yang sama, panaskan 2 sdm minyak dan minyak wijen, tumis bumbu halus hingga harum dan berminyak, masukkan irisan daun bawang, kacang polong udang dan cumi. Tumis sambil diaduk rata beberapa menit sampai udang  dan cumi matang.
  3. Campurkan nasi putih, telur orak arik, kecap manis, saus tiram, garam dan merica bubuk... Aduk-aduk hingga semua tercampur rata dengan bumbu. Terakhir masukkan taoge, tumis hingga nasi kering dan berminyak.
  4. Sajikan hangat dengan acar dan mentimun.

Bahan dan cara membuat acar:
  • 1 buah wortel ukuan sedang
  • 1 buah mentimun ukuran besar.
  • bawang merah sesuai selera banyaknya
  • cabe rawit sesuai selera
  • 1 sdm gula pasir
  • 3/4  sdm garam
  • ½ sdm cuka
Cara membuat:
  1. Potong wortel kotak kecil atau memanjang (1x6 cm). 
  2. Belah mentimun memanjang dan buang bagian tengahnya (kadang saya tidak membuangnya, jadi acar lebih berair). lalu potong memanjang sekitar 1x6 cm.
  3. Kupas bawang merah dan belah dua.
  4. Campur semua bahan dalam mangkok dan aduk rata. Cicipi rasanya, manis, asin dan asam harus berimbang.
  5.  Diamkan paling tidak 1 jam dalam lemari es.

  5. I just love the flavors in Indonesian food. I made nasi goreng for the first time when our son was only 18 months old and he absolutely devoured it - fish sauce, hot red peppers and all! Your version looks delicious!
