Indonesian cuisine is one of the most vibrant and colorful cuisines in the world, full of intense flavor. It is diverse, in part because Indonesia is composed of approximately 6,000 populated islands of the total 18,000 in the world's largest archipelago, with more than 300 ethnic groups calling Indonesia their home. Many regional cuisines exist, often based upon indigenous culture and foreign influences. Indonesia has around 5,350 traditional recipes, with 30 of them considered the most important.

My today post is one of the famous İndonesian cuisine called Ayam bakar kecap. Ayam bakar literally means grilled chicken, kecap is sweet soy sauce. This sweet soy sauce (kecap manis) is one of the staple condiments in İndonesian cuisine especially in javanese cuisine. Traditionally the chicken grilled over charcoal and brushed with spiced kecap manis during the grilling process which gives more intense flavour.

In Java, ayam bakar usually tastes rather sweet because of the generous amount of sweet soy sauce either as marination or dipping sauce, while ayam bakar Padang, Bali, Lombok and most of Sumatra are usually spicier and more reddish in colour due to the generous amount of chilli pepper, turmeric and other spices, and the absence of sweet soy sauce.


Ayam bakar is usually served with sambal terasi (chilli sambal with terasi) or sambal kecap (sliced chilli and shallot in sweet soy sauce) as dipping sauce or condiment and slices of cucumber and tomato as a garnish as well as a side dish.

The process was actually quite simple. The chicken pieces are partially cooked in the spice mixture (bumbu)  in order for the chicken to absorb the spices. Also during the grilling process, the remaining spices are applied upon the chicken. 

For making ahead you can partially cook the chicken with marinate spice then keep in the refrigerator or freezer. Just bring to room temperature before grill them.
By the way you can use this bumbu / spices in this recipe for fish, but do not prior cook the fish just marinate the fish with the spices before grilling.

Ayam Bakar Kecap / İndonesian grilled sweet soy sauce Chicken My Mom's recipe.
Serve 4.
İngredients:

  • 4 chicken thighs
  • freshly squeezed of lime or lemon
  • İndonesian bay leaves or daun salam 
  • 1 lemongrass white part only, lightly bruised 
  • 2 tbsp kecap manis (sweet soy sauce)  
  • 2 tsp gula jawa (palm sugar or use brown sugar)
  • 1 tsp salt or to taste
  • enough water (about ¾ cup) 
  • 2-3 tbsp cooking oil
Spices for marinating:

  • 5-6 shallots
  • 4 cloves of garlic 
  • some bird eye chilies (depend on how spicy you wanna go, I use 5)
  • 5 red chili pepper 
  • 2 roasted candlenuts
  • 2 tsp coriander seeds
  • 1 cm ginger
İngredient for rub during grilling:

  • about 5 tbsp sweet soy sauce
  • 2 tbsp cooking oil 
How to make:
  1. Rub the chicken with lime or lemon juice and let it sit for a few minutes.
  2. Blend and mashed the spices for marinating. You can use mortar and pestle or blender.
  3. Heat the oil. Sauté the ground spices together with bay leaves, and lemongrass until fragrant and looks oily.
  4. Mix in brown sugar (gula jawa), salt and kecap manis. Then add in chicken thighs. Carefully stir until all chicken wrapped with spices before adding water.
  5. Cook over medium heat just until chicken changes color. Remove from heat and move to the container before keeping in the refrigerator.
  6. Before grill, mix 5 tbsp sweet soy sauce with 2 tbsp cooking oil, set aside. Grilled chicken over charcoal or grill pan. Smear with sweet soy sauce+oil mixture during the process. You can also smear the chicken with the remaining marinate spice.

Enjoy your ayam bakar kecap with sambal terasi, same cucumber slices and lettuce with steamed rice.

İndonesia memang amat sangat kaya akan jenis kuliner. Mulai dari timur hingga Sabang di bagian barat İndonesia. Hal ini tidaklah mengherankan sebab İndonesia memiliki lebih dari 300 suku dengan berbagai ragam kuliner tradisionalnya.
Ditambah lagi oleh panjangnya sejarah bangsa kita yang juga mempengaruhi dan memperkaya kulinari kita.

Salah satu dari kekayaan kuliner kita adalah ayam bakar. Selain rendang dan nasi goreng yang mendunia, ayam bakar juga masuk dalam urutan makanan İndonesia yang patut dicoba ketika berkunjung ke İndonesia.

Ayam bakar (termasuk ikan bakar) sendiri mempunyai banyak ragam. Mulai dari ayam bakar taliwang dari dari Lombok atau ayam bakar khas Padang yang kaya akan rempah, juga hayam bakakak dari suku Sunda. Yang saya sebut itu hanya sebagian kecil ya.....
Yuk... perkaya cita rasa kita dengan keragaman kuliner Nusantara.

Kali ini saya ingin bagikan resep ayam bakar kecap. Cita rasa kecap manis dari ayam bakar jenis ini merupakan ciri khas makanan jawa yang mempunyai kecenderungan rasa manis.
Resep ini ala rumahan khas ibu saya. Oh iya, selain bisa untuk ayam bakar, bumbu ini juga bisa digunakan untuk ikan bakar lho...bedanya kalau pakai ikan cukup dilumuri bumbu perendam saja tanpa perlu dimasak dulu ikannya. Direndam lalu dibakar.






Yuk...boleh kalau mau coba juga di rumah.... Kali ini saya sandingkan ayam bakar kecap saya dengan sambal ulek terasi, walau kadang saya pakai sambal kecap. Resep sambal ulek nya bisa dilihat di link sambal ulek terasi sini.

Bahan-bahan:

  • 4 buah kaki-paha ayam
  • perasan jeruk nipis atau limon
  • 1 lembar daun salam 
  • 1 batang sereh, geprak bagian putihnya
  • 2-3 sdm kecap manis  
  • 2 sdt gula jawa sisir
  • 1 sdt garam atau sesuai selera
  • air secukupnya (sekitar ¾ gelas) 
  • 2-3 sdm minyak untuk menumis
Bumbu dihaluskan:
  • 5-6 bawang merah
  • 4 bawang putih
  • beberapa biji cabe rawit (sesuai selera pedasnya)
  • 5 cabe merah keriting
  • 2 kemiri bakar
  • 2 sdt ketumbar
  • 1 cm jahe
Bahan Olesan (aduk Rata):
  • kurleb 5 sdm kecap manis dicampur dengan 2 sdm minyak 
Cara membuat:
  1. Lumuri ayam dengan perasan lemon atau jeruk nipis, diamkan beberapa saat. 
  2. Panaskan minyak. Tumis bumbu halus bersama sereh, daun salam hingga harum. Masukkan garam, gula jawa dan kecap manis. Masukkan potongan ayam dan aduk hingga ayam berbalut bumbu. Tambahkan air secukupnya dan masak hingga ayam berubah warna dan bumbu meresap.
  3. Pindahkan ayam ke dalam wadah untuk disimpan dalam kulkas hingga bumbu meresap. Saya biasanya menyimpannya hingga sehari semalam sebelum dibakar.
  4. Bakar ayam diatas arang atau wajan panggang sambail dioles campuran kecap dan minyak hingga ayam matang.

Sajikan hangat dengan sambal ulek terasi.
