Summer still in the air, and I am still looking for a way to beat the heat with something fresh and icy.
I remember back when I was in my homeland, Indonesia, we love to enjoy fresh young coconut water right from the fruit. It was so refreshing sweet. And we can scoop the coconut flesh after finish the water.
Young coconut flesh is so white- almost transparent. Soft-jelly like and very light sweet in taste. The older coconut, the flesh will become thicker and harder and we can make coconut milk from an old coconut. The older coconut, the more coconut milk we can get.
The water is sweet but not like sugary sweet. The older coconut, the slightly tangi the water will be and getting less.
In bahasa Indonesia, coconut we call it "kelapa". While young coconut called "degan".
Since young coconut flesh is getting rare due to high demand the price also getting expensive. So some people try to imitate the coconut flesh from agar-agar or jelly. Coconut water and coconut milk is added to get close to real coconut flesh.
Nobody know when exactly this idea came up. As I remember when I was about elementary school in 1985, I had made this for my school cooking activity, one of my friend's mother taught us how to made it.
Making this synthetic young coconut flesh is quite simple. All you need are coconut milk, coconut water ( I use canned one), and plain agar-agar. Also, we must prepare 2 very big chunks of ice cubes for cooling down and shape the agar-agar--this is crucial. You can make it a night before.
The important thing to make this synthetic young coconut flesh is try to pour agar-agar jelly very slow over the ice chunk to create a thin layer of the jelly.
And to enjoy this dessert drink is adding coco pandan syrup and coconut water, add some iced cubes and we call it "es kopyor"
Here I made a simple video to show you how to make it. Try it and I am sure you gonna love it. Or maybe you want to impress your family and friends and surprise them with this new tropical beverage to beat the heat.
Indonesian beverage; Synthetic young coconut flesh from agar-agar in coco pandan syrup

Ingredients:
🌴 1 packet (7 gr) plain agar-agar
🌴 600 ml coconut cream (mix half it with coconut water)
🌴 2 Tbsp condensed milk (or 2 Tbsp sugar)
🌴 pinch of salt
🌴 2 big chunk of iced cube
How to make:
1) Prepare 2 big chunks iced cube in a big bowl, add about a half cup of water, set aside.
2) Mix everything in a saucepan, Stir continuously while heating over medium-high heat until boiling. Turn off the heat and stir few minutes.
3) Using a soup spoon, pour the jelly over the ice chunk. Try to pour very slowly and high above the ice cube, about 7 cm or so.
4) Keep going until all jelly finish. Remove the ice cube and move into a clean container. Keep in the refrigerator up to a week.
Ingredients and how to make coco pandan syrup:
3 cup of sugar
2 cup of water
1 Tbsp pandan paste
green food coloring (optional)
Cook everything until boil and sugar dissolved. Keep in a clean jar and place in refrig until ready to use.
How to serve "es kopyor"
Put some ice cubes in the glass, add some coco pandan syrup and some synthetic coconut flesh and add some more coconut water (or sparkling water will do).

Es kopyor ini mengingatkan saya akan kampung halaman. Rindu jajanannya, makanannya juga suasana riuh diantara sanak kerabat. Kangan ngomong bahasa Jawa lagi... hehehehe.
Kalau pas mudik yang saya cari selalu ya es degan. Manisnya, segarnya dan pasti suasana pantai Kenjeran...halllaa..
Naahh.. critanya kali ini tombo kangen pengen minum es degan, apalagi musim panas disini sedang cetar-cetarnya. Jadinya bikin yang imitasi aja, es kopyor sintetis dengan syrup cocopandan homemade.
Sebelum bikin, saya buat dulu bongkahan es batu besar, harusnya saya bikin 2 biji, tapi karena freezernya full jadi cuman bisa bikin satu. Jadi kalau mau bikin sediakan dua blok besar es batu biar hasilnya cantik.
Es kopyor sintetisOleh: Çitra's Home Diary
Bahan-bahan:🌴 1 paket (7 gr) agar-agar plain
🌴 600 ml santan (campur air kelapa separuhnya)
🌴 2 sdm susu kental manis (atau 2 sdm gula pasir)
🌴 sejumput garam
Cara membuat:
1 Campur semua bahan dalam panci, aduk hingga tercampur rata tidak bergerindil. Lalu masak diatas api hingga mendidih sambil diaduk-aduk. Angkat dari api.
2. Siramkan agar-agar ke es batu yang sudah disiapkan sedikit demi sedikit secara merata agar berbentuk lapisan tipis. Lakukan hingga habis.
3. Ambil bongkahan es batunya lalu simpan dalam wadah bersih bertutup. Simpan dalam kulkas hingga siap digunakan.
Cara membuat syrup cocopandan:
Campur 3 gelas gula, 2 gelas air, 1 sdm pasta pandan dan pewarna hijau (opsional). Masak hingga mendidih dan gula larut.
Simpan dalam botol bersih dan taruh di lemari es.
Cara menyajikan:
Taruh es batu dalam gelas,lalu tuang syrup cocopandan. Beri kopyor sintetis dan air kelapa (bisa gunakan air mineral). Sajikan.
