This bread is amazingly gone viral across the internet, especially on Instagram.
After "dalgona" coffee, now another viral dish from South Korean, it's Korean cream cheese garlic bread (육쪽마늘빵). It is one of-you can say-Hasselback bread but in Asian style.
Never think that this garlic bread is the same as European-style garlic bread. This Korean-style is absolutely different. Korean garlic bread has a soft and creamy texture while European garlic bread has a crispy-chewy texture with a savory palate.
With slightly sweet savory with cream cheese filling, this Korean style garlic bread is favorite street food in Korea.
Some sources say this famous bread originated from Gangneung City in Gangwon Province. This food was actually a Korean street food.
Pain Famille's bakery makes garlic-like loaves of six cloves, also known as six-sided garlic. There are also those who slice transversely like sausages using rather long bread. But what is popular today is round bread with star-shaped slices.

From Gangneung City, the garlic cheese cream bread was brought to the culinary center of Gangnam, a hype and famous district in Seoul. From there cheese garlic bread is increasingly in demand by Koreans and is included in the new menu list in many cafes.
Cream cheese garlic bread is processed bread, like burger buns, but cut six sides that cross each other to resemble garlic cloves that are given cheese and seasoned and baked. Melted cream cheese with a savory garlic flavor sensation gives a different sensation to other types of bread.
This bread recently becomes a spotlight around the internet, especially in Asian food bloggers on Instagram. I saw my other fellow food bloggers make this unique bread with hashtag #koreancreamcheesegarlicbread with beautiful and scrumptious photos.
So, I am intrigued to bake it as well 😊
For me, the bread is fine on my palate, but for my Turkish husband and my kid, they said it has a "funny taste" for cheesy garlic bread. For them, garlic bread should have a fully savory taste -- just like European style--rather than slightly sweet. Yes, I understand them 👱 😊

Even I already reduce the amount of sugar significantly compare to many recipes across the internet. I also reduce the amount of garlic.
Making this cream cheese garlic bread we should bake plain soft bun in ahead. The second step is making cream cheese filling then keep in a piping bag, last but not least making garlic butter sauce.
The two steps above are relatively easy and quick. For the basic soft bun, you can use your own recipe or you check my basic soft bread here.
Of course, you can short cut the step by using store-bought buns.
Cream cheese, butter, and garlic, you can’t really go wrong with this combination!
KOREAN CREAM CHEESE GARLIC BREAD (육쪽마늘빵)

Make 10 buns
Basic soft bread:
🍞 350 g bread flour
🍞 15 g ( 1 Tbsp) powdered milk
🍞 20 g sugar
🍞 5 gr ( 1 ½ tsp) instant yeast
🍞 240 g milk
🍞 40 g butter/ margarine
🍞 1 tsp salt
🍞 350 g bread flour

Just divide the dough into 10 instead of 8 like on that recipe.
Also no need to brush the buns with melted butter after baking.
Cream Cheese Filling
🧄 400 g cream cheese
🧄 60 g (4 Tbsp)sugar
🧄 ½ tablespoon lemon juice
Garlic sauce
🧄 120g sugar (mostly recipe using 180 gr)
🧄 1 medium egg,
🧄 120 g melted butter,
🧄 1½ Tbsp minced garlic (about 30 gr)
🧄 30g milk
🧄 1 tablespoon mayonnaise,
🧄 1 tablespoon parsley powder
How to make:
1. After you have soft buns ready, score the bun into 6 sides without cutting through the buns, set aside. Preheat oven at 170℃. Line 2 baking tray with parchment paper, set aside.
2. Mix all ingredients for cream cheese filling. Using a whisk to incorporate well, move into a piping bag with a 2 cm plain tip. Keep in the refrigerator while making the butter garlic sauce.
For the garlic sauce, mix all ingredients and whisk well until combine.
3. Take one bun, pipe the cream cheese filling between each split (see my video to how). Do to all buns. Then dip into butter garlic sauce, spoon the sauce all over the bun. Arrange over a prepared baking tray.
4. Bake at preheated oven for 10-15 minutes. Let them cool over the cooling rack.

Para foodie di Indonesia pasti udah pada ngerti ya Roti dari Korea dengan belahan 6 menyerupai bawang putih (garlic) dengan isian cream cheese ditiap belahannya lalu dicelup dalam saus mentega dan bawang putih kental, kemudian dipanggang hingga saus meresap.
Selain rasa yang nikmat dan bentuk yang unik, pemasaran yang tepat membuat kuliner ini semakin populer. Pemasaran yang mengandalkan media sosial seperti Instagram juga membuat panganan ini viral bahkan sampai ke Indonesia. Apalagi kini Korea tengah menjadi sorotan di dunia hiburan lewat K-Pop.
Di Indonesia, Korean cream cheese garlic banyak dijajakan di media sosial dan semakin diminati banyak orang. Selain itu Anda juga bisa membuatnya sendiri di rumah.
Proses membuatnya tak rumit, Anda hanya butuh butter, saus keju, roti bun, dan bawang putih.

Tapi ada yang tahu nggak sih latar belakang Korean cream cheese garlic bread ini?
Beberapa sumber mengatakan roti terkenal ini berasal dari Kota Gangneung di Provinsi Gangwon. Makanan ini sebenarnya adalah makanan jalanan (street food) disana.
Pemilik Toko roti "Pain Famille" lah yang pertama kali membuat roti yang dibelah menyerupai bawang putih, juga dikenal sebagai roti bawang putih.
Ada juga jenis yang diiris melintang seperti sosis dengan menggunakan roti yang agak panjang mirip roti untuk hotdog. Namun yang populer saat ini adalah roti bundar dengan irisan berbentuk bintang/ bawang.
Dari Kota Gangneung, roti krim keju bawang putih dibawa ke pusat kuliner Gangnam, distrik hype dan terkenal di Seoul. Dari sana roti bawang putih keju semakin diminati oleh masyarakat Korea dan masuk dalam daftar menu baru di banyak kafe.
Roti ini dibuat dari roti bulat (seperti roti burger), lalu dipotong melintang tidak putus bersilangan hingga menyerupai bawang putih. Diberi krim keju di tiap belahannya lalu dicelup saus mentega dengan rasa bawang putih yang gurih dan sedikit manis.
Proses membuatnya ada dua tahap; membuat roti (bun)nya dahulu lalu menyiapkan isian keju dan sausnya. Membuat isian krim keju dan saus mentega tidaklah susah dan prosesnya cepat.
Dan jika ingin mempersingkat waktu lagi, sebenarnya kita juga bisa membuatnya dengan roti manis plain (tawar) seperti roti burger yang banyak dijual diluaran.
Jadi tinggal bikin isian keju dan saus celupannya, panggang, udah, jadi deh 😊
Untuk lidah Asia, roti ini mungkin jadi favorit tiap orang. Tapi di rumah saya, suami dan anak saya tidak terlalu suka. Sebab mempunyai rasa manis dengan aroma bawang putih yang cukup kuat. Kita disini terbiasa dengan garlic bread khas Eropa yang gurih dengan aroma mentega bawang yang ringan saja. Jenis rotinyapun kita pakai yang chewy (kenyal).
Walau pemakaian gula saya kurangi banyak banget, juga bawang putihnya, tetapi tetap saja si kecil dan suami saya kurang suka.
Jadi...... saya aja yang makan temans..! 😃 Tapi nggak pa-pa deh.. asal udah hilang penasaran saya. 😊
Oke, bagi yang penasaran belum baking.. saya coba bagi resep dengan modifikasi resep yang banyak beredar di instagram. Jika ingin membuatnya mulai dari roti bun nya, resep dasar roti manis (tanpa telur) bisa dilihat dipostingan saya disini.
KOREAN CREAM CHEESE GARLIC BREAD (육쪽마늘빵)

menjadi 10 buah
Basic soft bread:
🍞 350 g Terigu protein tınggi
🍞 15 g ( 1 sdm) susu bubuk
🍞 20 g gula pasir
🍞 5 gr ( 1 ½ sdt) ragi instant
🍞 240 g susu cair
🍞 40 g mentega/ margarin
🍞 1 sdt garam
🍞 350 g Terigu protein tınggi
🍞 15 g ( 1 sdm) susu bubuk
🍞 20 g gula pasir
🍞 5 gr ( 1 ½ sdt) ragi instant
🍞 240 g susu cair
🍞 40 g mentega/ margarin
🍞 1 sdt garam
Untuk prosedur bagaimana cara membuat roti dasar bisa dilihat disini.
Lalu bagi adonan menjadi 10 buah (atau sesuai selera). makin banyak membaginya, makin kecil ukuran bun nya.
Setelah matang dari oveni roti tidak perlu dioles mentega seperti resep yang tertera, langsung dinginkan diatas cooling rack.
Cream Cheese Filling
🧄 400 g cream cheese
🧄 60 g (4 sdm) gula
🧄 ½ sdm perasan jeruk lemon
Garlic sauce
🧄 120 g gula (resep asli pakai 180 gr)
🧄 1 telur ukuran sedang
🧄 120 g mentega, lelehkan
🧄 1½ sdm (kurleb 30 gr) bawang putih parut ⇀ resep asli 80 gr
🧄 30 g susu cair
🧄 1 sdm mayonnaise,
🧄 1 sdm petersely kering
Cara membuat:
1. Panaskan oven suhu 170℃. Siapka loyang beralas baking paper. Potong roti bun melintang tapi tidak putus menjadi 6 bagian, sisihkan.
2. Campur semua bahan untuk krim keju, aduk dengan whisk sampai rata dan gula larut. Pindahkan dalam kantong semprot yang ujungnya sudah dipasang nosel 2 cm. Simpan dalam lemari es.
Sementara itu dalam wadah bersih lainnya, campur bahan untuk membuat saus mentega, aduk rata dan siap digunakan.
3. Ambil roti bun yang sudah dibelah, lalu semprotkan krim keju di tiap belahannya (bisa dilihat di video bagaimana caranya).
Lalu celupkan dalam saus mentega bawang, lumuri dengan saus secara merata. Taruh di atas loyang dan panggang kurleb 10-15 menit.

This was so interesting to read about! I'd actually never heard of this Cream Cheese Garlic Bread before, but I can see why it's a viral sensation! It sounds fantastic - my son and I slather cream cheese on both sweet and savory breads and sandwiches, so this is absolutely something we'd enjoy. Especially since you offered the clever, time-saving tip about using store bought buns! Pinning this, for sure - my son would love to try this with me when he comes home from college!
ReplyDeleteThis is an excellent idea! I actually have not seen it on Instagram yet but I much prefer this over Dalgona coffee. I have some leftover buns from the weekend and a block of cream cheese. I just may give this a go!
