This sausage roll bread is should be in your list to provide your family with yummy, satisfying, everybody's favorite sausage roll bread.

My sausage wrap with eggless soft bread filling with perfect tomato sauce and topped with mayonnaise ketchup, exactly like what you get from the bakery around the corner. You can vary this bakery-style roll bread with filling and topping by adding some cheese to enrich your breakfast or brunch time.

For the basic soft bread here I use my eggless basic soft bread recipe here, but if you want a richer version you can use my other basic bread recipe here. Or use your own recipe which suits you.

For my sausage roll bread today I didn't use cheese for filling and topping. Sometimes I combine it also with cheddar cheese, if you want to add cheddar cheese as a filling, just cut/ or shred the cheese.
Let's jump to the recipe, shall we?


Sausage Roll Bread

Make 8-10 pcs

For filling and topping:

🍞 8-10 pcs long beef/ turkey sausage, soak in boiling water a few minutes, drain
🍞 some cheddar cheese if you like
🍞 3-4 tbsp tomato paste
🍞 6-7 tbsp tomato ketchup
🍞 pinch of salt and pepper
🍞 1 tbsp each of dried thyme and basil
🍞 some ketchup and mayonnaise for topping
🍞 dried parsley for topping

Make the sauce for filling:

 In a medium bowl, mix tomato paste with a small amount of hot water to make the consistency slightly thicker than tomato ketchup. Add tomato ketchup, salt, pepper, dried thyme, and basil. Mix well, set aside.
 Place ketchup and mayonnaise separately in a small spritz bottle or medium piping bag and make a very small hole. Set aside.

Basic soft bread:
🍞 350 g bread flour
🍞 15 g ( 1 Tbsp) powdered milk (optional)
🍞 20 g sugar
🍞 4 gr ( 1 tsp) instant dry yeast
🍞 240 g milk
🍞 40 g butter/ margarine, room temperature
🍞 1 tsp salt

How to make basic bread:

1. In a mixing bowl, mix and knead all ingredients EXCEPT butter and salt. You can knead it by hand, mixer, or bread machine. mix until all come together. Then add butter and salt.
Continue to knead until the dough is soft, smooth, and reach "windowpane" stage.

How to perform windowpane stage: take a piece of your dough then stretch it out wide until it is nearly translucent without ripping. You want to do this to make sure that your gluten is sufficiently developed.

2. Round the dough and place over a light grease bowl, cover with a damp towel kitchen or plastic film and rest it until double its size. How long it will depend on your room temperature. Just place it in the warmest place in your house.

3. Flatten the dough to remove the air bubble, and place it over a lightly floured table. Divide the dough into 8 or 10 equal parts. For precisely I weigh my dough. Using your palm roll each part into a ball, and do the same procedure to the rest of the dough.

How to shape and bake:

1. Working one ball at a time, roll the dough into a thin long oval (see picture below for illustration). Spread about a half tablespoon of tomato sauce, place the sausage on top of it. Add shredded cheese if using.

2. Make shortcuts on both sides of the dough, from the middle near the sausage toward the outside. Fold each cut crisscrossed to cover the sausage.

3. Then start to fold each cut toward the inside making a criss-cross to cover the sausage ( see picture above). Do the same procedure for the rest of the dough.

4. Arrange over a baking tray lined with parchment paper, give space to each other, cover loosely with a kitchen towel, and let it rest until noticeably puffy.

5. Preheat oven at 175℃ at least 30 minutes before baking. Spritz top of the bread with ketchup and mayonnaise, sprinkle with dried parsley. Bake at preheated oven for 15-18 minutes or until golden brown. Remove from oven and place over a cooling rack.
Note: Time and temperature of baking it's only guidance, adjust to your own oven condition.

Roti sosis ini termasuk yang paling sering direquest oleh gadis kecil saya. Selain itu saya juga suka bikin stok roti ini untuk sarapan harian yang super kilat buat dia dan babanya sehari-hari. 
Sehari-hari memang tidak ada sarapan "istemewa" seperti weekend atau hari libur yang khas orang Turki sini. Bagaimana sih sarapan lengkap ala Turki?
Yaitu meja full dengan berbagai jenis makanan; mulai telur, sosis, sucuk ( semacam sosis berbumbu khas turki), Pastırma (produk daging yang diawetkan dengan bumbu khas), keju, selai, buah zaitun, dan lain-lain. Tidak lupa roti dan atau simit (bagel khas Turki).

Karena hari-hari weekday, suami cepet-cepet harus kerja, jadi cukup susu madu hangat atau teh hangat plus sepotong poğaça atau börek atau roti sosis ini kalau saya bikin. Anak juga maunya cuman roti dan susu hangat plus telur aja. Jadi roti sosis ini menjadi pilihan favorit sarapan kilat kita sehari-hari selain poğaça dan börek tadi.

Untuk rotinya saya menggunakan resep dasar roti manis yang sudah pernah saya bagi di post sebelumnya, bisa dilihat di resep dasar roti manis tanpa telur disini. Atau bisa juga versi yang pakai telur disini, semua sama-sama empuk dan bikin nagih.

Oke, kita langsung ke resepnya aja ya.


Resep Roti gulung sosis

Menjadi 8-10 roti

Bahan untuk roti:
🍞 350 g terigu serbaguna
🍞 15 g ( 1 sdm) susu bubuk
🍞 20 g gula pasir
🍞 4 gr ( 1 sdt) ragi instant
🍞 240 g susu cair
🍞 40 g mentega
🍞 1 sdt garam

Cara Membuat:

1. Campur semua bahan dalam mangkok besar KECUALI mentega dan garam. Lalu uleni hingga tercampur rata dan setengah kalis. Lalu masukkan mentega dan garam. Lanjutkan mengulen hingga kalis elastis. Cek keelastisan dengan cara "windowpane test". Lihat gambar dibawah untuk ilustrasinya.
Cara mengetes apakah adonan sudah windowpane:  ambil adonan dan coba rentangkan lebar tanpa robek. Kalau sudah mencapai tahap itu berarti pengulenan selasai.

Note: Proses menguleni hingga tahap windowpane ini memastikan gluten dalam adonan sudah terbentuk sempurna. Proses ini penting untuk menghasilkan roti dengan tekstur halus dan lembut/ cotton soft yang lebih awet.

2) Bulatkan adonan dan taruh dalam wadah bersemir minyak tipis. Tutup dengan plastik film dan istirahatkan hingga mengembang dua kali lipat volumenya. Lama proses fermentasi tergantung dari suhu dan kelembaban ruangan masing-masing ya.

3) Kempiskan adonan dan bagi menjadi 8 atau 10 bagian sama rata. Bila ingin rapi dan akurat bisa ditimbang. Saya timbang adonan kurleb 65 gr (menjadi 10 buah), bulatkan.

Untuk isian dan topping:
🍞 8-10 sosis sapi/ ayam/ kalkun (saya pakai kalkun), rendam air panas beberapa menit
🍞 keju cheddar, parut atau potong memanjang (kali ini saya nggak pakein)

🍞 3-4 sdm pasta tomat, untuk saus isian
🍞 6-7 sdm saus kecap, untuk saus isian
🍞 garam dan merica bubuk sesuai selera
🍞 thyme dan oregano kering  masing-masing 1 sdm 

🍞 saus kecap dan mayones untuk topping
🍞 parsley kering untuk topping

Membuat saus untuk isian:

 Taruh pasta tomat dalam mangkok, tambahkan air panas secukupnya saja sampai konsistensinya mirip saus tomat tapi lebih kental.
Tambah saus tomat, garam dan merica, thyme dan oregano kering. Aduk rata sampai tercamğur. Sisihkan.
 Taruh saus tomat dan mayones untuk topping ke piping bag secara terpisah. Bisa juga pakai botol saus. Sisihkan.

Membentuk roti:

1) Cara membentuk bisa dilihat di poto step by step dibawah ini ya.
Ambil satu bagian adonan roti lalu gilas memanjang, beri saus isian ditengahnya lalu taruh sosis, jika pakai keju bisa ditambahkan juga.
Lalu kerat-kerat bagian pinggir adonan roti di sisi kanan dan kiri (lihat gambar)

2) Lipat adonan roti menutupi ujung sosis atas dan bawah. Lalu tutup sosis dengan adonan saling menyilang sampai ujung bawah. Lakukan sampai semua adonan habis. Tata dalam loyang beralas kertas baking, beri jarak satu sama lain agar tidak lengket ketika dipanggang nanti.

3)Diamkan hingga mengembang kurang lebih 30 menit-tergantung suhu dan kelembaban ruang masing-masing ya. Sementara itu panaskan oven suhu 175-180℃. 

4) semprotkan saus tomat dan mayones diatas roti sosis sebelum dipanggang. Taburi dengan parsley kering dan keju jika suka. Panggag kurang lebih 15-20 menit atau sampai keemasan.

Note: Waktu dan suhu memanggang tergantung kondisi oven masing-masing.
