Jerk refers to a style of cooking in which the main ingredient—which most often is chicken but may also be beef, goat, boar, seafood, or vegetables—is coated in spices and slow-cooked over a fire or grill.

In Indonesian cuisine alone, jerk isn't something new. With a bunch of herb varieties and spices we have, jerking is common for us.

And today I will share one of my favorite jerk grilled chicken. It's easy and quick to prepare with maximum flavor. This is not Indonesian food but it reminds me of one cause it's spicy and full of flavor.

What we need.

Chicken. We can use any part of the chicken. Bone-in or boneless. But make sure to adjust your grilling time and temperature for different parts. For example, the breast part tends to get dry quicker than the other parts so you should grill it at medium-high temperature for about 8 to 10 minutes, flip them at halfway.
For chicken thighs, grill them over high heat (about 200℃) and grill for about 10-12 minutes depends on its size. Flip halfway.

Chili pepper. I use two kinds of chili peppers, red chili pepper and birds eye chili pepper/chili padi. For less spicy I use sweet kapia chili pepper with less amount of chili padi peppers. You can play around with how spicy you wanna go with adding or lessing the chili padi pepper.

Onion and garlic. Yellow or white onion can be used. Sometimes I use shallot as well with the same amount as I use yellow/ white onion.

Parsley. For another option, you can use chervil (french parsley).

Lemon. You can also use lime. Take zest and juice.

Smoked paprika powder.

Recipe.

Spicy Jerk Grilled Chicken

Ingredients:
  • 500-600 gr chicken ( I use chicken breast, and butterfly then cut lengthwise)
  • salt and black pepper for chicken
  • 150 gr (3-4 pcs) red chili pepper or (2 medium) kapia pepper
  • 5-6 birds eye chili pepper/ chili padi (depends on how spicy you wanna go)
  • half of big onion (1 medium)
  • 6-7 big cloves  of garlic
  • 1 lemon. take the zest and the juice
  • 6-7 stalks of parsley
  • 1 Tbsp smoked paprika powder
  • 2 tsp or to taste salt
  • 2 tsp of sugar
  • 4-5 Tbsp olive oil or other vegetable oil.

How to make:

1) Cut chili peppers, onion, and garlic into chunks, then roast them over medium-high heat until slightly browns. Move into a blender jar, add lemon zest, lemon juice, parsley, smoked paprika powder, salt, and sugar. Add in olive oil also, blend to smooth.

2) Season chicken with salt black pepper powder. Add the spice paste and marinate the chicken for at least 1 hour or overnight. Today I use chicken breast, I butterfly the breast then cut it lengthwise. After I marinated the chicken I thread the chicken onto a bamboo skewer.
It's optional, you can directly grill your chicken without thread it onto skewers.

3) Heat your grill at least 15 minutes before. Grill the chicken until done.
For chicken breast grill it at medium-high temperature for about 8 to 10 minutes, flip them at halfway.
For chicken thighs, grill them over high heat (about 200℃) and grill for about 10-12 minutes depends on their size. Flip halfway.
Note: You also can grill in the oven, adjust the time and temperature.

Masih dalam suasana musim panas ya.... suami sukanya yang bakar-bakar gitu. Biasanya suami request sesuatu buat acara bakar-bakar akhir minggu. Seringnya ya minta  Turkish meatball atau Köfte bahasa Turkinya. Atau ayam dengan bumbu khas Turki juga. 

Karena di apartment kita gak bisa bakar-bakar pakai arang, kita memang ada acara ke rumah mertua untuk bakar-bakar bersama keluarga yang lain, disana kan ada halaman dibelakang rumah yang lumayanlah agak luas buat bakar-bakar. 

Karena saya bosan dengan menu khas Turki, sekalian saja saya bikin meu ayam yang hari ini mau saya bagi. Ayam bakar bumbu pedas yang mudah banget bikinnya. Ayam dimarinate bumbu pedas semalaman lalu dibakar. Kalau tak ada bakaran dari arang, bisa juga kok dibakar diatas kompor atau dalam oven.

Rasa dari ayam bakar bumbu pedas ini pedas gurih dan sedkit asam segar. Pokoknya enak banget deh. Bisa dinikmati dengan aneka lalapan dan sambal juga. Kali ini saya bikinnya gak pedas, sebab anak saya juga pengen makan ayam katanya. Pokoknya tingkat kepedasan bisa disesuaikan selera masing-masing ya.

AYAM BAKAR BUMBU PEDAS

Bahan-bahan:
  • 500-600 gr ayam ( saya gunakan ayam bagiam dada)
  • garam dan merica bubuk-untuk ayam
Bumbu:
  • 150 gr (5-7) cabe merah keriting (saya pakai cabe kapia yang manis karena tidak pedas)
  • 5-6 cabe rawit (bisa tambahi sesuai selera pedasnya)
  • 1 bawang bombay ukuran kecil (atau separuh ukuran besar)
  • 6-7 bawang putih
  • 1 jeruk lemon, parut kulitnya dan peras juice nya (bisa pakai limau)
  • 6-7 batang peterseli
  • 1 sdm bubuk smoke paprika
  • 2 sdt garam (atau sesuai selera)
  • 2 sdt gula
  • 4-5 sdm minyak zaitun atau minyak sayur lain
Cara membuat:

1) Bumbuhi ayam dengan garam dan bubuk merica. Sisihkan dalam lemari es.

2) Potong kasar cabe, bawang bombay, dan bawang putih. Sangrai tanpa minyak hingga kecoklatan dan layu. Lalu haluskan bersama bumbu lain; daun peterseli, parutan jeruk lemon dan juicenya, bubuk paprika, garam dan gula. Tambahkan juga minyak zaitun/ minyak sayur dan blender hingga halus-agak kasar juga boleh.

3) Campur ayam dengan bumbu marinate dan diamkan minim 1 jam atau semalaman dalam lemari es. 
Bakar ayam hingga matang sambil dioles sisa bumbu.
Sajikan hangat.
