It is a Chinese fusion dish that is popular in America rather than in Asia or even China
This food becomes more popular after being "mentioned" in one of the popular Tv shows 'The Big Bang Theory'.
In that comedy TV series, the character Sheldon's favorite Chinese food is orange chicken.

The variety of orange chicken most commonly found at North American fast food restaurants consists of chopped, battered, and fried chicken pieces coated in a sweet orange-flavored chili sauce, which thickens or caramelizes to a glaze.
This dish is kinda my comfort food, especially when I feel homesick or I need something "Asian" flavor for my own at home.
After you gather your ingredients and finish your preparation. You are ready to go.
There are three steps to making this orange chicken; marinating the chicken, frying it, and making the sauce.
For this recipe, I use chicken thigh. Of course, you can use chicken breast, but for me, the thigh is juicier than the breast part. Especially we will double-fry the chicken later.
Why double-fry? Double-fry makes the battered chicken crunchy and will not be soggy after being coated with the sauce. That's the secret. π

Ingredients.
Chicken marinate:
π 350 gr chicken meat ( I use chicken thighs). Cut into small bites.

π 3-4 cloves of garlic, finely minced
π 3 tbsp Orange juice
π 1 tsp Salt
π ½ tsp black pepper powder
π orange rind from 1 orange
For coating:
π 50 gr ( 5Tbsp) AP flour
π 50 gr (5 Tbsp) rice flour
π 50 gr (5 Tbsp) cornstarch
π ½ tsp baking powder
π pinch of salt
π 150 ml cold Water
π Enough cooking oil for deep frying
Orange Sauce:
π 2 tsp finely minced ginger
π 2-3 tsp chili flake
π 60 gr sugar
π ½ cup of fresh squeezed Orange juice
π 2 tbsp Soy sauce
π 3 tbsp Vinegar
π orange rind from 1 orange
π 1 tbsp cornstarch diluted in 2 tbsp water
How to make:
1) Marinate the chicken. Mix everything ingredient for marinating chicken. Set aside for at least 15 minutes in the refrigerator.
2) In a medium bowl, mix and whisk ingredients for coating. Heat enough cooking oil on medium heat.
Dip marinated chicken into a coating dough and fry until golden brown. You may fry them in batches. Remove and drain from oil. Then fry for the second time (double fry) so it's crispy and will not be soggy when coated with the sauce later.
Set aside.
3) Make the orange sauce.
Mix everything in a bowl except cornstarch water. stir well until the sugar dissolves. Heat a wok over medium heat, and add the sauce mixture into the wok. Stir well until bubbling. Then stir in the cornstarch water while stirring and cooking until the sauce thickens.
4) Stir in the fried chicken, and mix well until all chicken is coated by the sauce. Remove from heat and serve immediately.

Orange chicken atau ayam saus jeruk terkenal sebagai makanan siap saji ala restoran yang menyajikan makanan Asia dan Cina di Amerika. Sebenarnya makanan bukan dari negeri Cina.
Penggagas dan pembuat asal orange chicken ini adalah seorang chef bernama Andy Kao. Dia mengklaim membuat dan mengembangkan makanan ini di salah satu restoran Cina bernama 'Panda Ekspress'. Makanan ini dikembangkan dari perpaduan makanan asli khas Cina yaitu general tso chicken dan sweet and sour chicken (ayam asam manis) yang kemudian menjadi terkenal di Amerika.
Kepopulerannya makin naik ketika disebut-sebut di serial komedi televisi terkenal "The big bang Theory".
Sesuai namanya, makanan ini berasa asam manis dengan aroma jeruk yang kuat. Rasa asam didapat dari perasan jeruk sunkist yang segar dengan campuran cuka yang memperkuat rasa asamnya.
Salah satu makanan favorit saya terutama ketika kangen tanah air. Kebetulan musim dingin seperti ini juga musim jeruk. Di pasar banyak sekali ditemui dan dijual aneka macam jeruk. Mulai jeruk mandarin hingga 'orange blode orange'.

Ayam saus Jeruk.

Hasil jadi 2 - 3 porsi
Bahan-bahan:
Bumbu marinasi ayam:
π 350 gr ayam tanpa tulang ( saya gunakan bagian paha).Potong kecil
π 3-4 siung bawang putih, cincang halus
π 3 tbsp perasan jeruk segar
π 1 sdt garam
π ½ sdt merica bubuk
π parutan kulit jeruk sunkist
Balutan tepung ayam:
π 50 gr ( 5sdm) terigu
π 50 gr (5 sdm) tepung beras
π 50 gr (5 sdm) pati jagung atau tapioka
π ½ sdt baking powder
π sedikit garam
π 150 ml air dingin
π Minyak goreng secukupnya
Saus Jeruk:
π 2 sdt jahe cincang halus (dari 1 cm jahe)
π 2-3 sdt bubuk cabe kasar
π 60 gr (4-5 sdm) gula
π ½ gelas perasan jeruk segar (bukan juice kalengan ya)
π 2 sdm soy sauce
π 3 sdm cuka masak (saya pakai cuka apel)
π parutan kulit jeruk sunkist
π 1 sdm pati jagung larutkan dengan 2 sdm air
Cara membuat:
1) Marinasi daging ayam. Campur semua bahan marinasi denga potongan ayam, aduk rata. Tutup dengan plastik dan diamkan minimal 30 menit.
2) Siapkan adonan balutan ayam. Campur semua tepung, baking powder, dan garam. aduk dengan whisk. Tambah air dingin sambil diaduk hingga halus.
Panaskan minyak goreng dengan api sedang. Masukkan ayam yang sudah dimarinasi ke adonan balutan (coating). Goreng hingga keemasan. Lakukan sampai habis. Goreng ayam sekali lagi agar lebih garing dan tidak lembek ketika dibalut saus nantinya. Sisihkan.
3) Saus jeruk.
Campur semua bahan untuk saus jeruk kecuali campuran pati jagung dan air. Aduk rata hingga gula larut. Panaskan wajan dan masak campuran saus jeruk tadi. Masak dengan api sedang saja sambil diaduk-aduk hingga mendidih. Lalu masukkan larutan pati jagung (maizena), aduk cepat hingga saus agak kental.
4) Terakhir masukkan ayam goreng tepungnya. Aduk-aduk hingga semua ayam terbalut saus jeruk. Angkat dari api.
Sajikan hangat segera, bisa ditaburi wijen sangrai ketika disajikan.
