Or maybe you didn't know that beef/ cow skin can be so delicious when it is cooked properly.
Some countries like in Asia or Africa are familiar with this beef skin. Just like in Indonesia, mainly on Java island.
We called this beef/ cow skin "kerecek or krecek" in Java.

Krecek or kerecek can be made of cow or beef or buffalo skin. On islands like Bali-which mostly non-Muslim, they make "kerecek" from pig skin.
This "kerecek" is commonly found in Indonesian cuisine. We can find it fresh, clean, and ready-to-cook cow/beef skin in any traditional market.
Some are dried and can be fried as "kerupuk" or crackers.

Some skin looks thin but some are very thick, especially from the head part. The best is of course a thick one.
Fresh krecek/ cow skin can be cooked into many kinds of dishes, just like what I am going to share today.
It's a "sate krecek". One of the popular street snacks in Indonesia. We also eat this spicy sate as a protein as well, together with rice and with other side dishes.
For those who don't want too much spicy, you can skip the birdseye chili.
If you can access fresh beef skin, try to find the thick one. But thin beef skin can be used also.
Beef/ cow skin is also sold in dried. This dried skin can direct fry them in plenty of cooking oil and eat it as crackers.
But when you want to cook it, just boil it for about 5 minutes or until tender.

Indonesian Cow Skin Satay.

Make: ±15 skewers
Ingredients:
๐ถ 500 gr pre-boiled fresh cow skin* (see note)
๐ถ 5 pearl shallots (or 1 medium)
๐ถ 5 cloves of garlic
๐ถ 3 red chili peppers (you can use sweet or spicy ones)
๐ถ some birdseye chili peppers
๐ถ 2 kaffir lime leaves
๐ถ 1 tsp salt
๐ถ 1 tsp sugar
๐ถ ½ tsp white/ black pepper powder
๐ถ 3 tbsp Indonesian kecap manis (sweet soy sauce)
๐ถ ±2 tbsp oil
Note: (*) I use dried cow skin (about 250 gr), and boil it in hot water for about 5 minutes or until tender.
How to make:
1) Wash and boil fresh beef/cow skin with a bay leaf until tender. If you use dry cow skin, boil for about 5 minutes or until tender, then wash and drain well.
Now you have cow/ beef skin ready to cook.
2) Pound the spices until smooth; shallots, garlic, chili peppers, and kaffir lime leaves. Heat about 2 tbsp oil in a wok. Sautรฉ the spice puree until fragrant and looks oily.
3) Stir in white/black pepper powder, salt, and sugar. Mix well. Add in the cow skin, followed by kecap manis (sweet soy sauce). Add a small amount of water.
Continue to cook until the water is dry. Check the taste, you may want to add some sugar, salt, or sweet soy sauce.
4) Remove from stove and let it chill to room temperature. Then wave the cow skin into bamboo skewers. Serve it immediately.
Note: You can warm up and grill over a grilling pan. Brush the pan generously with oil before grilling.

Sate krecek kulit sapi.

Hasi jadi: ±15 tusuk
Bahan-bahan:
๐ถ 500 gr krecek segar* (lihat note dibawah)
๐ถ 5 bawang merah
๐ถ 5 bawang putih
๐ถ 3 cabe merah
๐ถ cabe rawit sesuai selera pedasnya
๐ถ 2 daun jeruk
๐ถ 1 sdt garam
๐ถ 1 sdt gula
๐ถ ½ sdt merica bubuk
๐ถ 3 sdm kecap manis
๐ถ ±2 sdm minyak goreng
Note: (*) saya pakai kulit sapi kering (kurleb 250 gr), dan masak kurang lebih 5 menit atau sampai empuk.
Cara membuat:
1) Cuci bersi krecek/ kulit sapi, lalu rebus dengan 1 daun salam hingga empuk. Jika pakai kulit sapi kering, rebus dalam air mendidih kurleb 5 menit dengan daun salam, Lalu cuci bersih dan tiriskan.
2) Haluskan bumbu-bumbu; bawang merah, putih, cabe merah, cabe rawit, dan daun jeruk. Tumis dengan sedikit minyak hingga harum dan berminyak.
Masukkan merica bubuk, garam dan gula. aduk rata.
3) Masukkan krecek kulit sapi, lalu kecap manis, dan sedikit air, aduk rata.
Masak hingga air menyusut. Cicipi rasanya. Tambah garam atau kecap manis jika suka.
4) Matikan api. Lalu tusuk dengan tusukan sate. sajikan.
