- 5 eggs
- 4~5 phyllo dough (ready to use or you can make it earlier)
- enough cooking oil for frying martabak
for stuffing:
- 3 stalks of leeks, cut into 2-3 cm
- ground beef 200 gr
-3 garlic cloves medium size- chopped finely
- 1 medium onion- chopped finely
- Curry spice powder 2 teaspoons
- 1/2 tsp ground pepper
- 1/2 tsp chilli powder (optional-if you like it spicy hot)
- salt to taste.
Make stuffing:
- Saute garlic and onion until wilted, add ground meat, stir-fry until the meat is browned, put curry seasoning, ground pepper, chilly powder and salt. mix well.
- Turn off the stove, add leeks, stirring for a while. Set aside.
How to make martabak:
1)Beat eggs until loose, put stuffing ingredients and mix (test a taste-more or less salt can be added in this step)
2) with wide teflon pan (wide griddle) heat small amount of oil , put one piece phyllo dough , add stuffing and spread it on surface, fold the sheet like envelope folded. Fry both surfaces until browned. Do same procedure to 4 phyllo dough. Set aside

3) Take another 1 sheet phyllo dough, place in a teflon pan (wide griddle), arrange (stack) those 4 pieces we made earlier, spread stuffing mixture between them and wrap them all as folding envelopes.Fry until well browned both surfaces.
Now Indonesian Egg Martabak can be served warm with pickled.
