Beside rice, noodle is staple meal in Indonesia.
In fact we have so many type of noodle commonly consumed e.g; 
1. egg noodle (mie telor)--see my homemade egg noodle here , here and here.
2. Cellophane noodles (so'un) -- made of potato starch mix with green bean flour. The texture is very soft, suitable for soup, fried so'un noodle or filling for Indonesian fried dumpling. Sold in dry form, soak in hot water until soft and then ready to be processed into various kinds of cuisine.
3. Kwetiau / Rice stick noodles. Made by steam rice flour and water.
4. Bihun / Rice Vermicelli. Rice vermicelli is made of rice flour, the color is pure white and the texture is very soft. This noodle is very easy to cook so no need to be boiled, just soaked in hot water. Usually sold in dry form in plastic packaging.

Beside those noodle İ mentioned above we also familiar with neighbouring countries noodle, such as soba, somen noodles, or ramen from Japan.
Or some noodle type from China like Misua and Hokkien noodle.

Indonesian Fried Vermicelli / Bihun goreng kecap
Serve 4

İngredients:
  • ±250 gr vermicelli, soaked in warm water for 10-15 mnt then drain
  • 200 gr shrimps ( you can mix with chunk chicken meat)
  • 2 medium carrot, jullien cut
  • 1 bak choy / ¼ part medium napa cabbage/ cabbage, shredded
  • 7-8 small red shallot, finely slice
  • 5 cloves of garlic, finely chopped
  • 1 tsp salt or to taste
  • 1 stalk celery leaf, roughly chopped
  • Fried sliced shallot for serving
  • Acar timun or pickle for serving
Mix sauce ingredients:
  • 1 tsp black pepper powder
  • 2-3 tbsp kecap manis (sweet soy sauce)
  • 2 tsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp peanut oil or other vegetable oil
  • 2 tsp oyster sauce
How to:

1) Place the soft and drained vermicelli in big bowl. Pour the mix sauce ingredient into noodle and toss it well until all vermicelli cover by the sauce. This is how İ make my fried vermicelli with intense infused of the sauce. Set a side.

2) İn a big wok/ pan, heat about 3 tbsp peanut oil (or other vegetable oil) over high heat, and stir fry sliced shallot and garlic. Sauteé until in begin to brown slightly. Stir in shrimp ( or chicken) and continue to cook until cook. Add in carrot, continuously stir until it wilt before add the cabagge.

3) Low the heat to medium. Mix in noodle and chopped celery and toss nicely with two wooden spoon or tongs. Season with salt and continue to toss. Check the taste, you may need more salt or pepper. Toss for about 3 or 4 minutes then remove from heat.

Serve with sprinkle of fried shallot and Indonesian cucumber pickle, see lower part how to make it.

For pickles:
  • 2 medium carrot, cut matchstick
  • 2 medium cucumber, cored and cut matchstick
  • 6~7 shallot halved
  • few birdeye chili
  •  ½ Tbsp salt
  • 1 Tbsp sugar
  • 1 ½ Tbsp white vinegar
  • 1 Tbsp water
How to make:
Mix and toss all ingredients and keep in jar with a lid.

Masakan paling gampang dan pasti semua moms juga bisa bikinnya ya...
Tinggal divariasikan isi proteinnya dan sayurannya.

Lagi pengen bihun goreng udang.. jadi campurannya udang aja sekalian ngabisin stock. Kalau moms punya bakso ikan atau ayam atau sapi bisa juga ya ditambahin. Pokoknya sesuka kita dan sesuai isi kulkas 😊

Resep Bihun goreng kecap
Menjadi sekitar 4 porsi

Bahan-bahan:
  • ±250 gr bihun kering, rendam air hangat kurleb 10-15 mnt lalu tiriskan
  • 200 gr udang atau ayam (bisa campur bakso juga)
  • 2 buah wortel ukuran sedang. potong tipis panjang
  • 1 bak choy / ¼ bagian sawi putih kecil atau kol atau bisa sawi, potonf halus kol
  • 7-8 bawang merah, rajang halus
  • 5 bawang putih, rajang halıs
  • 1 sdt garam atau sesuai selera
  • daun seledri, rajang kasar
  • bawang goreng untuk taburan
  • Acar timun sebagai pelengkap
Aduk jadi satu bahan saus:
  • 1 sdt merica bubuk
  • 2-3 sdm kecap manis
  • 2 sdt kecap asin
  • 1 sdm minyak wijen
  • 1 sdm minyak kacang atau minyak goreng lain
  • 2 sdt saus tiram

Cara membuat:

1) Campurkan bahan saus dengan bihun yang sudah diseduh, aduk rata sampai tercampur rata, sisihkan.

2) Panaskan kurleb 3 sdm minyak kacang atau minyak goreng lain, tumis bawang merah dan bawang putihsampai kering, masukkan udang (atau ayam dan bakso jika pakai), aduk-aduk hing udang matang.

3) masukkan wortel, masak hingga agak lunak. Lalu masukkan sayuran lainnya, lanjutkan menumis hingga sayuran layu. Terakhir masukkan bihun dan potongan daun seledri. Aduk balik hingga rata. Gunakan dua sendok kayu atau tongs (penjepit) untuk mengaduk agak bihun tidak patah-patah. 
Cicipi rasanya, tambahkan garam atau merica sesua selera jika perlu.

Angkat dan sajikan dengan taburan bawang merah goreng dan acar.
