Indonesia has many....probably hundreds of variants of snacks. Start from traditional snacks e.g many kind of kueh basah (literally means wet/moist snacks), fried snacks (in Indonesian call gorengan) and other type of jajanan (snacks) mostly known as street food/ snack; for example batagor, siomay, kerak telur and more.
Kueh basah are more often steamed than baked and usually has a sweet taste, but some are also savory. But not all of them use steamed method, named kue basah mostly because they are moist.

Just like what İ want to share today. İt's including in kue basah- calls Serabi Kinca. İt's a pancake-like, served with sweet coconut milk sauce. Traditionally the pancake is cooked on a clay concave wok and heat over a traditional clay stove with charcoal called an anglo stove.
Unfortunately, mine was broken during my flight from İndonesia to Turkey few years ago. So İ made this favorite kue basah using small teflon pan diameter ±13cm. İf you have iron cast pan it will work as well.
İngredients for pancake:
🍳 175 gr AP flour
🍳 1 tbsp rice flour
🍳 ½ tsp salt
🍳 ½ tsp sugar
🍳 1 medium egg
🍳 500 ml medium thick coconut milk
🍳 1 pandan leaf, knotted
🍳 2 tsp pandan paste
🍳 1 tsp baking powder
Sweet Coconut milk sauce:
🍳 600 ml coconut milk medium thickness
🍳 150 gr gula jawa / palm sugar
🍳 50-100 gr sugar or as your taste (you can use cane sugar also)
🍳 1 pandan leaf, knotted
🍳 pinch of salt
🍳 2 tsp rice flour or cornstarch
HOW TO MAKE:
1) For the pandan pancake; Heat coconut milk and pandan leaf to simmer. Turn off the heat and let it stand until luke warm. Discard the pandan leaf.
2) İn a jar of blender mix all other ingredients and warm coconut milk- except baking powder-and blend until mixed through and smooth. You can use hand blender also or electric mixer on low speed. Let it sit for about 30 minutes.
3) Heat the small pan at medium low heat. Mix in baking powder and mix well.
4) Spoon batter about 2 ladles (or ¼ cup) into small pan (diameter ±13 cm), let the bubble appears on the surface. Then cover the lid and continue to cook until surface gets dry and cooked. Use medium low heat always.
Making coconut milk sauce:
Mix all ingredients for sauce, stir continuously and cook over medium heat until boiling.
Serve the pancake serabi with the sauce. Enjoy 😄
Serabi atau surabi atau srabi atau sorabi.... namanya banyak ya..mirip-mirip di tiap daerah. Merupakan jajanan pasar tradisional yang berasal dari Indonesia. Ada dua jenis serabi, yaitu serabi manis yang menggunakan kinca (saus santan dan gula merah). Dan ada serabi asin dengan atau tanpa taburan oncom yang telah dibumbui di atasnya.
Tapi apapun variasi dan daerahnya, pada dasarnya serabi/ surabi ini adalah kue basah sejenis pancake yang dibuat dari tepung terigu dan atau campuran tepung beras.
Secara tradisional serabi ini dimasak diatas wajan tanah dengan menggunakan kompor anglo atau tungku anglo yang berisi arang. Dengan demikian serabi mempunyai aroma dan cita rasa yang khas dari proses memasak yang unik tersebut.
Tapi jika kita tidak punya wajan tanah dan tungku anglo..kita bisa saja kok membuatnya dengan peralatan yang ada di dapur,misalnya wajan teflon berdiameter kecil seperti yang saya buat kali ini.

Assalamu'alaykum...... Merhaba dari Türkey.
Serabi ini tidak saja terkenal dari Bandung atau Solo saja.. tapi bisa ditemukan di beberapa daerah lain di seluruh nusantara. Dengan berbagai variasi saus ataupun toppingnya yang disesuaikan dengan selera daerah tersebut.
Tapi apapun variasi dan daerahnya, pada dasarnya serabi/ surabi ini adalah kue basah sejenis pancake yang dibuat dari tepung terigu dan atau campuran tepung beras.

Resep Serabi kinca
Bahan:
🍳 175 gr terigu serba guna
🍳 1 sdm tepung beras
🍳 ½ sdt garam
🍳 ½ sdt gula
🍳 1 telur ukuran sedang
🍳 500 ml santan kekentalan sedang
🍳 1 daun pandan simpulkan
🍳 2 sdt pasta pandan
🍳 1 sdt baking powder
Kuah:
🍳 600 ml santan kekentalan sedang
🍳 150 gr gula merah sisir
🍳 50-100 gr gula pasir atau sesuai selera manisnya
🍳 1 lembar daun pandan simpulkan
🍳 sedikit garam
🍳 2 sdt tepung beras atau pati jagung (misal maizena)
CARA MEMBUAT:
☛ Panaskan santan dan daun pandan hingga mendidih. Diamkan hingga hangat, ambil daun pandannya.
☛ Campur semua bahan serabi kecuali baking powder lalu mixer kecepatan rendah hingga rata. Bisa juga pakai blender. Tutup dengan plastik wrap dan diamkan kurleb 30 menit.
☛ Sebelum masak, campurkan 1 sdt baking powder dan aduk rata.
☛ Panaskan wajan teflon ukuran kecil tanpa dioles apapun. Tuang adonan serabi 1- 2 sendok sayur, biarkan hingga berlubang-gunakan api kecil saja. Setelah berlubang-lubang permukaannya, tutup dan lanjutkan masak hingga matang dan kering permukaannya.
Bisa juga gunakan wajan tanah khusus serabi. Gosok permukaan wajan tanah dengan dengan parutan kelapa agar berminyak sebelum digunakan.
Membuat kuah / kinca:
☛ Campur semua bahan untuk kinca, masak dengan api sedang hingga mendidih sambl terus diaduk-aduk.
