What is "Putu Bambu"?

Putu Bambu, other name is "kue putu", is a traditional Indonesian "kue" (snack). Made of rice flour filled with coconut/ palm sugar and steamed inside a small bamboo tube (pipe-like)-hence the name.

This Javanese traditional snack is a street food sold by street vendors, and also can be found in traditional markets (pasar) along with many other traditional "kue"

"Klepon" , is one kind of Indonesian traditional snack. It's a dumpling made from glutinous rice flour with palm sugar filling, wrapped in fresh shredded coconut.

The original and traditional flavor is "Pandan" just like my previous "Klepon recipe" here.

In Indonesian, snacks are called kudapan, or makanan kecil (lit. "small food"), or makanan ringan (lit. "light food"). 
They might taste savory or sweet, but snack foods are a significant aspect of Indonesian cuisine which is very diverse. 

Traditional kue or snacks — a collection of steamed or fried snacks with traditional-based ingredients, exist in many forms.

Besides the ordinary main course, Indonesian people also like to eat snacks (snacking).
We have many kinds of snacks or we call them "kue" or "jajanan"
Kue in the Indonesian language is used to refer to not only these kinds of traditional snacks, but also all types of cake and some types of pastries. Kue is more often steamed than baked and normally has a sweet taste, but some are savory. Kue is categorized under " jajanan pasar" (market buys) or street food.

In Java, traditional kue is categorized under jajan pasar (litteraly: "market buys" or "market munchies"). 
The colorfully decorated jajan pasar is usually given as a food gift or served to accompany tumpeng (the main dish) during traditional Javanese ceremonies.

What is "cilok"?

Cilok (from Sundanese language), is an Indonesian ball-shaped dumpling made from aci (tapioca starch). 
It's a Sundanese snack originating from West Java, Indonesia. 
In Sundanese language, cilok is an abbreviation of aci dicolok or "poked tapioca", since the tapioca balls are poked with lidi  (skewer made from the midrib of the coconut palm frond).

Cilok balls are boiled until cooked or deep fried in ample cooking oil and might be served with peanut sauce, kecap manis (sweet soy sauce), sambal, or chili sauce.
The texture of cilok is quite chewy, its shape and texture are quite similar to Japanese dango, although almost all cilok variants are savory compared to sweet dango.

Cilok is a popular street snack, usually sold by traveling vendors using carts or bicycles frequenting residential areas, marketplace, busy street-side, or stationed in front of a school. The chewy tapioca balls with savory peanut sauce are a popular snack among Indonesian school children

Is a small Indonesian biscuit (kue kering) shaped somewhat like a cat's tongue (long and flat). They are sweet and crunchy. This cookie is a Dutch-influenced cookie due to the historical tie between Indonesia and the Netherlands. In the Netherlands, this cookie is known as katte tong, and is ultimately derived from the European cat tongue biscuit.

In French, it's called langues-de-chat and this biscuit actually comes from the Netherlands.

Rempeyek is derived from the Javanese onomatopoeia "peyek", depicting the sound of a crisp cracker breaking.

Rempeyek is often associated with Javanese cuisine, served to accompany "pecel/ petjel" (vegetables in peanut sauce) or other meals, or as a snack. Today, it is common throughout Indonesia, and is also popular in Malaysia following the migration of Javanese immigrants in the early 19th century.

It's my favorite cracker. Made from rice flour with some spices and fried in deep oil. The frying and making methods are typical and very unique. That is, on a deep frying wok, spread out the batter dough on the edge of the wok until it produces a very thin layer of cracker, I made a simple video also to give you an illustration of how to make this unique and traditional Indonesian "rempeyek".












Topping can vary from peanuts, green beans, black eye beans, small soybean, or dried small anchovies until dried small shrimp. A little tricky and need more patience in making it.

We call it "singkong" or "ubi kayu" in the Indonesian language.
Cassava or another name is yuca. It is long and tapered, with a firm, homogeneous flesh encased in a detachable rind, about 1 mm thick, rough and brown on the outside. Commercial cultivars can be 5 to 10 centimeters (2 to 4 inches) in diameter at the top, and around 15 to 30 cm (6 to 12 in) long. A woody vascular bundle runs along the root's axis. 

The flesh can be chalk-white or yellowish. Cassava roots are very rich in starch and contain small amounts of calcium (16 mg/100 g), phosphorus (27 mg/100 g), and vitamin C (20.6 mg/100 g).

However, they are poor in protein and other nutrients. In contrast, cassava leaves are a good source of protein (rich in lysine), but deficient in the amino acid methionine and possibly tryptophan.

Indonesian call this "bolu kering" means dry cake. "Dry" because the texture indeed dry outside, almost like a cookie.
And this vintage cake has been around for a long time. From several sources, this "Bolu" cake was very popular in the 1960s. The cake has various forms, some are fish, oval, or flower-shaped, and mostly has mini size.

The texture of this cake is a bit rough, a bit dry outside but moist inside. But it's super tasty and has a very distinctive aroma. Its light taste and small shape make it perfect for snacking.

Traditionally this mini cake consists of only 3 ingredients; eggs, sugar, and flour. Old recipes require emulsifiers too and for adding the aroma we use vanilla extract/ essence. 
The process also simple, just whisk the eggs and sugar until stiff then adding flour.
But today I will not share the traditional version.

“SETIAP ANGGOTA BADAN MANUSIA DIWAJIBKAN BERSEDEKAH SETIAP HARINYA SELAMA MATAHARI MASIH TERBIT; KAMU MENDAMAIKAN ANTARA DUA ORANG YANG BERSELISIH ADALAH SEDEKAH; KAMU MENOLONG SESEORANG NAIK KE ATAS KENDARAANNYA ATAU MENGANGKAT BARANG BAWAANNYA KE ATAS KENDARAANNYA ADALAH SEDEKAH; SETIAP LANGKAH KAKIMU MENUJU TEMPAT SHOLAT JUGA DIHITUNG SEDEKAH; DAN MENYINGKIRKAN DURI DARI JALAN ADALAH SEDEKAH.” (HR BUKHARI DAN MUSLIM).

During Ramadan, Muslim households will fast till dusk falls and break the fast with an iftar meal.
In Indonesia mostly we make or buy snack to enjoy during iftar, we call it Ta'jil (read; taqjeel)Ta'jil itself comes from Arabic language means to fast-breaking, so it has nothing to do with the food. But in Indonesia, the term ta'jil is becoming commonly used as an expression of usually sweet iftar appetizers. Prophet Muhammad s.a.w gave the example of eating dates as the beginning of iftar.

Kue is a fairly broad term in Indonesian to describe a wide variety of snacks; cakes, cookies, fritters, pies, scones, and patisserie. Kue is made from a variety of ingredients in various forms, some are steamed, fried, or baked. Kue are popular snacks in Indonesia, which has the largest variety of kue.

Pukis is made from yeast mixture, egg, sugar, flour, and coconut milk. The mixture then poured into a half-moon mold and baked over a fire stove (not an oven). The traditional way, it's cooked over charcoal.

İt's been a long time I didn't post any snack recipe. In fact, I am a "snacking" person. I do love enjoying my afternoon tea /coffee with something that keeps me full until dinner.
And today I will share one of my fave ever, called "Karipap Pusing"

Similar to a Pasty, Karipap is another hugely popular snack in South East Asia. In Indonesia, it is called Pastel with its own twists. It is a snack of Southeast Asian origin. It is a small pie consisting of curry with chicken and potatoes in a deep-fried or baked pastry shell. The curry is quite thick to prevent it from oozing out of the snack.

Karipap Ayam is one of the most popular street snacks across South East Asia. They are truly delicious snacks. Crisp flaky pastry shells filled with a mild chicken and vegetables (potato and carrot mostly) curry.

Rosettes / Honeycomb  Fried Cookies / Kuih Loyang / Kembang Goyang

In Indonesian we call it "Kembang Goyang", its traditional snack from Indonesia. 
Kembang means flower. Goyang literally means shaking. Cause we shake the mold (mostly flower shape) after dip into batter and fry in hot oil to release the cookie.

In old time, Indonesian made this cookies only for special occasion such as wedding ceremony, circumcision ceremony or other traditional ceremony. Also during some religious holiday celebration. 

Kembang Goyang basically made of rice flour which is mixed with eggs, sugar, a pinch of salt, and coconut milk. Even though some recipe use tapioca starch and or flour to enrich the texture. It is super crispy and ultra-thin, you'll enjoy not only 3 or 4 pieces ... you want to take 1 jar! 😄

Other combinations also on color and flavors. Mostly we find this snack in mild sweet flavor, but sometimes people make it savory as well. Adding traditional pandan flavor and color is common. If you want to play around with colors and flavors try with rose-pink color, or ginger-yellow. I remember my late grandmother added mild ginger flavor in it.
Adding sesame seeds also can be vary- just like what I made today.

This fried snack also famous to neighboring countries with different name. In Malaysia, Singapore, Brunai , Thailand and further more. Some call it rosette cookies, lotus cookies or kueh loyang. Or behieve / honeycomb cookies, depends on the mold shape used.

Kemarin bersih-bersih dan bongkar lemari yang isinya loyang-loyang dan peralatan baking... Ehh.. ketemu cetakan kembang goyang yang udah lama terlupakan. Terakhir bikin kembang goyang sekitar 2 tahun lalu.... wiiihhh..lama juga ya 😃
Bukan apa-apa... bikin kueh macam begini atau bikin rempeyek kadang males... nongkrong depan kompornya yang bikin males ya...hehehhe.
Naahh... setelah nyingkirin rasa males.. akhirnya kesampaian bikin kembang goyang lagi.

Kembang goyang ini konon kue tradisional asal Betawi, sepertinya peninggalan jaman kolonial. Walau dilansir berasal dari Betawi, kembang goyang ini juga banyak ditemui di Jawa Timur maupun Jawa Tengah dan Jawa Barat.

Kembang goyang sendiri mendapatkan namanya karena bentuknya yang seperti bunga dan digoreng dengan cara digoyangkan dari cetakannya di dalam minyak panas hingga terlepas dan digoreng matang merata.

Resep tradisionalnya terbuat dari tepung beras. Tapi ada juga versi yang dicampur tapioka dan atau tepung terigu untuk variasi tekstur nya.
Dalam perkembangannya, kembang goyang dibuat dengan berbagai warna dan berbagai varian bentuk cetakan.

Indonesia has many....probably hundreds of variants of snacks. Start from traditional snacks e.g many kinds of kueh basah (literally means wet / moist snacks), fried snacks (in Indonesian call gorengan) and other type of jajanan (snacks) mostly known as street food/ snack; for example batagor, siomay, kerak telur and more. 
Kueh basah are more often steamed than baked and normally have a sweet taste, but some are savory as well. But not all of them using a steamed method, named kue basah mostly because they are moist. 

Just like what İ want to share today. İt's including in kue basah- calls "Bolu kukus mekar". İt's a cup cake-like, cooked by steam process instead of bake in oven.  We call it "Bolu Kukus Mekar" in Indonesian language. Bolu means cake, Kukus= Steamed and "Mekar" means blooming like a flower. 
As you can see on my pictures here the steamed cup cake has crack surface like blooming.
This is also one of Indonesian traditional snack that been exist from long time ago.

Just like what İ want to share today. İt's including in kue basah- calls Serabi Kinca. İt's a pancake-like, served with sweet coconut milk sauce. Traditionally the pancake is cooked on a clay concave wok and heat over a traditional clay stove with charcoal called an anglo stove.

Unfortunately, mine was broken during my flight from İndonesia to Turkey few years ago. So İ made this favorite kue basah using small teflon pan diameter ±13cm. İf you have iron cast pan it will work as well.
