You may agree that chicken is the cheapest protein source that we cook and eat daily. 
Same here at my house, my kid, and I love chicken so much.

I like my chicken in many ways. Fry, grill, in soup or stew. For you who always looking for idea for kid's lunch box, you should try my homemade chicken nugget, or my cheese chicken balls, or Indonesian "kaki naga" .

And for my today post, ฤฐ am going to share my new fave Spicy Plum sauce Chicken. The sweet and sour in this recipe remind me of sweet and sour chicken, but it's deliciously different.



Maybe you remember previously I'd shared my homemade plum sauce. Beside soy sauce and kecap manis (sweet soy sauce), plum sauce is one of my staple sauce in my pantry.
So if you are Asian food lover... you should have that sauce also in your pantry. You will ready anytime whenever you have Asian food party ๐Ÿ˜

So as I promise I will share a recipe using my homemade plum sauce, it's spicy plum sauce chicken. ฤฐt's surprisingly delicious and I believe you gonna love it as well.
Don't be alert with long list of ingredients, it's worth to try ๐Ÿœ

Spicy Plum sauce Chicken Bowl

Ingredients for chicken:

๐Ÿ” 300-400 gr boneless and skinless chicken breast, cut into bite side
Batter for chicken:
๐Ÿ” ½ cup (65 g) all-purpose flour, sifted
๐Ÿ” ¼ cup cornstarch or tapioca starch
๐Ÿ” ½ tsp baking powder
๐Ÿ” 50-60 gr egg white  
๐Ÿ” ⅓ cup (80 ml) ice-cold water 
๐Ÿ” 1 tbsp oil 
๐Ÿ” Pinch of salt
๐Ÿ” Oil for deep fry
Mix all batter ingredients (except oil for deep fry) in a medium bowl. Using balloon whisk mix until combine and smooth.
Add the chicken into the batter, stir to evenly coat with the batter.
Heat enough oil in the wok, gently drop chicken pieces into oil, try not too crowd the wok so it won't be clumping and stick each other.
Fry until golden red, draining the excess oil by laying the chicken on a dish lined with paper towels.


Spicy Plum Sauce:

๐Ÿ” 4 cloves of garlic, smashed and finely chopped
๐Ÿ” 2 cm fresh ginger, finely chopped
๐Ÿ” 2 spring onion, finely slice white part. Keep green part later for garnish
๐Ÿ” 3-4 Tbsp plum sauce, see my homemade version here
๐Ÿ” 3-4 Tbsp water
๐Ÿ” 2 Tbsp brown sugar
๐Ÿ” 1 Tbsp sesame oil
๐Ÿ” 2 tsp light soy sauce
๐Ÿ” 1 tsp oyster sauce
๐Ÿ” 2 red chili, slice ( ฤฐ use dried chili)
๐Ÿ” pinch of salt as taste
๐Ÿ” Sesame seeds for sprinkle

How to Cook:

1) Mix sauce ingredients; plum sauce, brown sugar, sesame oil, oyster sauce, light soy sauce and water. Set a side.

2) Heat a tablespoon peanut oil on the wok, sautรฉ garlic and ginger for few minutes. Stir in white part green onion. Continue to cook for 1 minute then add red chili and sauce mixture.

3) cook until sauce slightly thickened. Add salt as needed and check the taste.

4) Last mix in cooked chicken and mix until chicken covered with the sauce.

5) Serve warm over white steamed rice and sprinkle of sesame seed and green onion.

Daging ayam termasuk salah satu protein yang paling sering saya sajikan di rumah. Selain harganya lebih ekonomis dari daging, anak juga saya favoritnya ya ayam ๐Ÿ˜ค
Kalau suami saya sih..tetep..khas orang Turki..lebih suka daging  ๐Ÿ˜Š

Daging ayam memang paling sering saya variasikan... mudah dan praktis memang. Cek semua postingan dan resep ayam di kategori "ayam dan unggas" di link ini.
Salah satunya adalah Ayam dengan saus buah prem ini. Rasanya mirip dengan ayam asam manis dengan saus buah prem yang khas.
Saus buah prem atau dalam bhs Inggrisnya plum sauce banyak dijumpai sebagai saus yang siap pakai dan dijual untuk kebutuhan masakan Asia. Tapi jika tidak tersedia atau tidak kita temuai... bisa lho kita buat sendiri saus buah prem ini di rumah... asal buah prem nya juga tersedia ya ๐Ÿ˜‰.

Ayam Saus buah Prem/ Spicy Plum Sauce Chicken Bowl

Bahan untuk ayam goreng:

๐Ÿ” 300-400 gr daging ayam tanpa tulang, potong kecil sesuai selera
๐Ÿ” ½ gelas (65 g) tepung terigu serba guna, ayak
๐Ÿ” ¼ gelas pati jagung atau tapioka
๐Ÿ” ½ sdt baking powder
๐Ÿ” 50-60 gr putih telur
๐Ÿ” ⅓ gelas (80 ml) air es
๐Ÿ” 1 sdm minyak
๐Ÿ” garam sejumput
๐Ÿ” minyak untuk menggoreng
Campur semua bahan balutan ayam (keculi minyak untuk menggoreng) Aduk rata dengan whisk balon. Masukkan potongan ayam dan aduk sampai semua ayam terbalut adonan.

Panaskan minyak goreng, lalu goreng potongan ayam. Masukkan potongan yang sudah berbalut adonan satu potong per satu potong agar tidak lengket satu sama lain. Goreng dengan api panas sedang sampai kecoklatan matang. Tiriskan dari mลŸnyak.


Bahan untuk saus:


๐Ÿ” 4 siung besr bawang outih geprak dan cincang halus
๐Ÿ” 2 cm jahe, geprak
๐Ÿ” 2 daun bawang. Potong kasar bagian putihnya. Bagian hijau potong untuk penyajian
๐Ÿ” 3-4 sdm saus buah prem, see my homemade version here
๐Ÿ” 3-4 sdm air
๐Ÿ” 2 sdm gula merah atau gula putih biasa
๐Ÿ” 1 sdm minyak wijen
๐Ÿ” 2 sdt light soy sauce (kecap asin yang tidak terlalu asin dan rendah sodium)
๐Ÿ” 1 sdt saus tiram
๐Ÿ” 2 cabe merah besar, buang isinya dan iris kasar
๐Ÿ” garam sesua selera
๐Ÿ” biji wijen untuk taburan

CARA MEMASAK:

1) Campur jadi satu; saus buah prem, gula, minyak wijen, saus tiram,kecap asin dan air. Sisihkan.


2) Panaskan sedikit minyak goreng diatas wajan, tumis bawang putih dan jahe sampai layu. Masukkan daun bawang (bagian putihnya saja), tumis sampai layu. Lalu masukkan irisan cabe merah dan bahan campuran saus diatas. Aduk-aduk sampai rata.

3) Masak sampai saus agak mengental, cicipi rasanya. Bisa ditambah garam atau gula sesuai selera. Lalu masukkan potongan ayam goreng, aduk-aduk sampai semua potongan ayam terbalut saus.


Sajikan hangat dan taburi dengan daun bawang (bagian hijau) dan wijen bersama nasi putih.
