When Ramadan is coming, and I am thinking about preparing healthy, warm, and comfort food for iftar, the first thing that comes to my mind is this lentil soup
Warm and hearty, it would be very nice for iftar. Whether when it is summer or winter it is indispensable for iftar menus with its soft taste. This lentil soup is very easy to accompany with any other menu, meat or chicken. 

It is also a soup that is practical and quick to prepare.

Lentil soup is rich in vitamins, iron, folic acid, fiber, and potassium. This soup, which is low in calories and high in nutritional value, will help you feel full and energetic, and can also be easily consumed during diet. And of course, it could warm the stomach after long hours of fasting without feeling too full. 

As long as you are conservative with the amount of oil you add, it is one of the healthiest and most delicious dishes of Turkish cuisine.

When serving this lentil soup, placing a small slice of lemon next to the soup bowl is a simple method you can use to strengthen its visual appearance. Such little things are very easy to prepare and do not take any time, but still make the guest feel how thoughtfully thought has been given to the table and of course to the guest. I love things like this from both the host and guest's perspective.

As I mentioned above, this meal is pretty much easy and quick. If you have leftover, just keep it in an airtight jar or container and keep it in the refrigerator. Consume it within 3 days, and warm up before serving.
Or you can freeze it and warm it up before serving. Sometimes the soup gets thickened after storing, add some vegetable stock (or just water) during warm-up to get the consistency you like.

Mercimek Çorbası (Turkish Lentil Soup. Hearty recipe with video)

Serve 4-5 shares

Ingredients:
🥣 1 cup (250 gr) red lentils, wash and drain
🥣 1 medium carrot, peeled and finely cubed
🥣 1 medium onion, roughly chopped
🥣 2 cloves of garlic
🥣 2-3 tbsp olive oil
🥣 pinch of turmeric powder (optional)
🥣 1300-1500 ml (4-5 cups) vegetable stock (or just water)
🥣 2 tsp (or to taste) salt

To serve:
lemon


How to make:

1. Heat olive oil in a pot, sauté chopped onion, garlic, and carrot. Stir fry until fragrant and onion becomes translucent.

2. Mix in red lentils and a pinch of turmeric (if using), and continue to stir for a few minutes.

3. Add vegetable stock (or water), stir, and loosely cover the pan. Let it cook until everything is soft. you should check and stir once in a while to make sure the lentils don't stick to the bottom of the pan.

4. After everything is cooked and soft. Remove from the stove. Use a hand-handled blender (or move into a blender jar) and blend it until smooth. Reheat again over medium heat, add the salt, mix, and taste it.
If you think the soup is too thick you may add a bit of vegetable stock, if you want your soup thicker, boil for a few minutes more to get thicker soup.
