Celeriac Chicken Noodle Soup

Serve: 4-5
Ingredients:
🥣 250-300 gr chicken breast
🥣 2-3 tbsp olive oil
🥣 100 gr ( 1 medium) onion, chopped
🥣 3 cloves of garlic
🥣 200 gr ( half medium) celeriac, cubes
🥣 200 gr (1 big) carrot, cubes
🥣 ±1200 ml chicken or vegetable broth (more for thinner soup)
🥣 half cup "tel şehriye" or shortcut angel hair pasta (you can use spaghetti, crush it)
🥣 1 tsp salt or to taste
🥣 ¼ tsp turmeric powder
🥣 ¼ tsp white/ black pepper powder
🥣 1 stalk celery, leaf part only, finely chopped
How to make:
1) Heat olive in a big pan. Fry chicken breast until golden brown on each side. Remove from pan, and set aside.
2) In the same pan, stir-fry chopped onion and garlic until fragrant and translucent. Stir in celeriac and carot. Continue to cook for another 2 minutes.
3) Add chicken breast, then half part (about 600 ml) of the broth. Add ¼ tsp turmeric powder. Cover the lid and cook until the vegetables are tender and the chicken breast is cooked through.
4) Meanwhile toast the shortcut angel hair pasta with 1 tbsp oil until lightly brown, Do not burn it. Set aside.
5) Remove the chicken from the soup after the chicken is cooked and the vegetables are tender. Shred the chicken into thin pieces.
6) Blend the vegetables until smooth. Add another 600-700 ml chicken broth (or just water) and cook again over medium heat. Add the shredded chicken and cook until boiling.
7) Add toasted pasta and mix. Season with salt and pepper. Continue to cook until bubbling before adding finely chopped celery leaves. Don't forget to check the taste.
Serve it warm with lemon juice.
