Green lentil is rich in iron, lean protein, and folate. Although the benefits of green lentils are not well known, they have serious effects on health. Although the benefits of green lentils are very diverse, it is very good food for conditions such as diabetes, insulin resistance, or hypoglycemia due to their high fiber content. 

So what are the benefits of green lentils? Here are the benefits of green lentils, which have positive effects on our health.

Where Are Green Lentils Grown Best and Most? 
It grows mostly in Canada, Australia, India, and the USA. 
In Turkey, mostly it grows in Nevşehir, Aksaray, Konya, Manisa, Ankara, Çorum, and Yozgat cities.
And today I will share one of the common daily meals in Turkish houses. Every mom here should have their own recipe for this meal.
It's very easy to make and I am sure you are gonna love it as well.
It said this meal is famous from Uşak city, Türkiye.


Yeşil Mercimek Yemeği / Green Lentil Dish

Serve 3-4

Ingredients:
🥣 1 cup of green lentils
🥣 1 medium onion, finely chopped
🥣 2-3 cloves of garlic, finely chopped
🥣 2-3 tbsp olive oil
🥣 ½ tbsp tomato paste
🥣 ½ tbsp sweet chili paste
🥣 3-4 cups of hot water/ broth
🥣 1 tsp salt or to taste
🥣 pinch of sugar (optional)

How to cook:
1) Wash and soak green lentils for about 1 hour. Drain well.
2) Boil the green lentils with enough until it's soft (me; about 20-25 minutes). Set aside.
3) In another pan, heat 2-3 tbsp olive oil, sauté chopped onion and garlic just until wilted. Then add tomato and sweet chili paste, and continue stirring until fragrant.
4) Add in the boiled green lentils (together with the water if there is). Add another 2 or 3 cups of broth (or water). Season with salt and a pinch of sugar (optional).
5) Continue to cook until boiling for a few minutes. Check the taste, and adjust as needed.

Serve it warm with a fresh squeeze of lemon and sprinkle with chili flakes if you like.
