It would not be an exaggeration to say that stew is one of the oldest dishes in the world.
Different varieties of this dish later spread eastwards to Afghanistan, Uzbekistan, and South Asia and westwards to the Ottoman Empire reaching the Levant and the Balkans.
You may love this Yüksük Çorbası / Delicious Turkish Dumpling (mantı) Soup.
Turkish people very much love yahni dish, because Turkish believe that this yahni dish is one of Prophet Muhammad's (sav) favorite dishes.
Another reason is that yahni dish is made from ingredients that almost all Turkish people love, which are: meat, onions, carrots, eggplant, beans, and tomatoes. In Turkiye, we can find many variants of this Yahni dish base on the ingredients used and the place where it comes from.
And when you see your family dip the bread into the dish and clean their plate with their bread, it means they very much love your cook and appreciate your effort to prepare it.
Nothing fancy when you want to cook this dish, any kind of meat from the animal part you can use. You can use start from brisket to tail.
Even you can use chicken or poultry to make this "yahni". If you use chicken it will call "tavuk yahnisi". If you use fish, it will call "Balık yahnisi"
As I mentioned above, this dish traditionally cooks in a clay pot, but if you don't have a clay pot it doesn't mean you can not make this dish.
Use any equipment you have and you are ready to go.
And today I will share one of "yahni" recipes using meat and pearl onion called "arpacık soğan yahnisi". Arpacık is pearl onion in the Turkish language.
Making this "yahni" is easy, but one thing that we should take note of is the cooking method. This dish uses a slow cooking method, take your time and low the heat until the meat is tender. Add a little amount of water if it's not yet tender.
In some places, people cook this yahni in "taş fırın" or stone oven. You can imagine how juicy and wonderful the aroma using this stone oven slow cooking method.
Arpacık soğanlı Yahnisi / Turkish Pearl Onion Meat Stew

🍲 100 gr butter

🍲 1 tbsp tomato paste
🍲 250-300 gr pearl onion/ arpacık soğan
🍲 1 tsp black pepper powder

How to cook:
1) Melt the butter then sauté the meat until it releases its juices. Keep stir-frying until all the meat's juice is dry.

2) Add in minced garlic and tomato paste, mix well before adding the water (about 5 cups). Add also pearl onion and close the lid, and lower the heat to medium-low.
Let it cook until the meat is tender. Add water if needed until the meat has softened.
3) After the meat is soft/ tender add 2 tbsp lemon juice, salt, pepper, and chili flake (if using) and stir until fully incorporated.
Serve hot.

"Yahni" atau "yakhni" , berasal dari Persia di abad pertengahan. Nama "yakhni" sendiri berarti pot atau panci dari tanah liat yang dipakai untuk memasak hidangan ini. Berbagai varian dari makananan ini juga menyebar hingga ke timur yaitu Afganistan, Uzbekistan dan Asia Selatan. Juga ke arah Barat yang meliputi wilayah Ottoman/ usmaniyah hingga Balkan.
Di Turki sendiri "yahni" bermakna hidangan yang dimasak dalam panci (Tencere), biasanya berbahan mulai dari sayuran, daging, ayam hingga ikan yang dimasak dalam saus kental berbumbu khas.
Kuahnya tidak sebanyak seperti membuat soup, jadi cukup bersaus agak kental.
Tidak perlu bahan yang istimewah jika ingin memasak hidangan ini, Jika menggunakan daging sebagai bahan utamanya, bisa menggunakan bagian daging manapun. Mulai dari sandung lamur hingga ekor.
Bahkan kita bisa menggunakan ayam atau unggas untuk membuat "yahni" ini. Kalau menggunakan ayam sebagai bahan utama , makan namanya "tavuk yahnisi" (tavuk=ayam). Jika Anda menggunakan ikan, itu akan disebut "Balık yahnisi"
Seperti yang saya sebutkan di atas, masakan ini secara tradisional dimasak dalam pot/ panci tanah liat (gerabah atau claypot), namun jika kalian tidak memilikinya bukan berarti kita tidak bisa membuat hidangan ini. Gunakan panci apa pun yang ada.
Dan hari ini saya akan membagikan salah satu resep "yahni" berbahan daging dan bawang kecil-kecil yang disebut "arpacık soğan yahnisi". Arpacık adalah bawang berukuran kecil dalam bahasa Turki, ukurannya sebesar bawang merah kita. Ada yang berwarna merah ada yang berwarna putih juga. Sifatnya mirip bawang merah kita.
Membuat "yahni" ini memang mudah, namun yang harus kita perhatikan adalah cara memasaknya. Hidangan ini menggunakan metode memasak slow-cook, jadi gunakan api cenderung kecil dan dimasak dalam waktu yang lama hingga daging empuk.
Di beberapa tempat, orang memasak yahni ini di "taş fırın" atau oven batu. Aroma dan kelezatan "yahni" yang dimasak dalam oven batu ini tentu berbeda, lebih harum khas oven batu dan lebih lezat.

🍲 2 sdm perasan jeruk lemon (dari setengah lemon)
Cara membuat:
1) Lelehkan mentega dalam panci. Masukkan potongan daging, masak hingga kelaur air daging. Aduk terus hingga air daging mengering.

2) Masukkan bawang putih dan pasta tomat. aduk rata. Lalu tambahkan air kurang lebih 5 gelas. Tutup panci dan masak dengan api kecil hingga daging empuk. Jiak air menyusut tapi daging belum emğuk, bisa tambahkan air lagi.
3) Setelah daging masak dan empuk, masukkan bawang merah (arpacık soğan), lemon juice. aduk rata.
Bumbuhi dengan garam, merica dan chili flake. Masak lagi kurang lebih 5-7 menit sampai bawang merahnya tidak keras lagi. Cicipi rasanya.
Sajikan hangat segera.

Hidangan ini biasa disajikan dengan roti khas Turki, Turkish pide bread, Patlıcan beğendi atau mashed potato.
