During Ramadan, Muslim households will fast till dusk falls and break the fast with an iftar meal.
In Indonesia mostly we make or buy snack to enjoy during iftar, we call it Ta'jil (read; taqjeel)Ta'jil itself comes from Arabic language means to fast-breaking, so it has nothing to do with the food. But in Indonesia, the term ta'jil is becoming commonly used as an expression of usually sweet iftar appetizers. Prophet Muhammad s.a.w gave the example of eating dates as the beginning of iftar.

And today I will share another Indonesian traditional kue ( snack ) call "pukis".  
Kue is an Indonesian bite-sized snack or dessert food. Kue is a fairly broad term in Indonesian to describe a wide variety of snacks; cakes, cookies, fritters, pies, scones, and patisserie. Kue is made from a variety of ingredients in various forms, some are steamed, fried, or baked. Kue are popular snacks in Indonesia, which has the largest variety of kue.

Pukis is made from yeast mixture, egg, sugar, flour, and coconut milk. The mixture then poured into a half-moon mold and baked over a fire stove (not an oven). The traditional way, it's cooked over charcoal.

Base on ingredients and how to make it, people outside Indonesia will consider this snack is a modification of waffles. But it is not waffle! 😊
Variations vary, given a sprinkling of chocolate grains, cheese, pineapple jam, sukade (candied dried mix fruit, usually from papaya and cut into small pieces and colorful) or nuts. Other variation on giving pandan and chocolate flavor
This snack has a distinctive color and shape. The upper part is yellow (basic color of this snack) and the bottom is skinned brownish due to the cooking method direct on heat.

Pukis / Traditional Indonesian snack

Yield about 24 pcs

Yeast batter:

🌙 1 Tbsp (15 gr) AP flour 
🌙 1 tsp (5 gr) dry instant yeast
🌙 3 Tbsp (50 gr) şuke warm water
🌙 1 Tbsp (15 gr ) sugar

  Mix all ingredients for yeast batter, cover with plastic film and let it rest until foamy.

Ingredients A:
🌙 175 gr thick coconut milk ( you can use canned coconut cream)
🌙 125 gr sugar
🌙 1 tsp fine salt
🌙 150 gr fresh milk
🌙 50 gr Condensed milk
🌙 1 pc pandan leaf (you can replace with 1 tsp vanilla extract)

  Put all ingredients A in a medium saucepan and heat until bubbling, stir continuously while cooking. Let it stand to room temperature, then discard the pandan leaf (if using). 

Ingredients B:

🌙 4 eggwhites
🌙 5 egg yolks
🌙 100 gr caster sugar
🌙 350 gr AP flour
🌙 50 gr cornstarch flour
🌙 1 tsp powdered vanilla
🌙 125 gr butter, melted and let sit to room temperature

other ingredients:
2 Tsbp cocoa powder, mix with 3 Tbsp boiling water to make paste
Other variation you can use pandan paste
topping with ground nuts or coco chips

How to make:

1) Sift together; AP flour, cornstarch, and vanilla powder set aside. 

2)  In a clean bowl, whisk egg white until foamy, then whisk in sugar in three batches. Continue to whisk until a stiff peak is formed. Add in egg yolk, whisk well each addition.

3) Lower your mixer then whisk in flour mixture alternately with coconut milk mixture. Start with flour and last with flour as well. Add in yeast batter, whisk with low speed until well combined.

4) Fold in melted butter and fold until incorporated. Cover with plastic wrap and let it rest about 1.5 - 2 hours, or until you can see the batter rises.

5) After 105-2 hours, mix the batter to remove any excess bubble. Take  of the batter and mix with chocolate paste or pandan paste. Let another part plain. 
Heat pukis mold with medium heat only, but make sure it's really hot before you pour your batter. Lightly brush the mold with butter/ margarine. 

6) Make sure the mold is hot enough, pour plain batter into the mold ¾  full, vary by adding chocolate batter until almost full. Set up timer 12-15 minutes. Cover the mold and cook over medium heat until skin is lightly golden brown. Remove from the mold and immediately brush with very soft butter.

Oh iya... kali ini edisi kangen jajanan Indonesia. Kue yang ngangenin. Dulu pas di Indonesia kalau ngabuburit selalu nyari ini selain jajanan gurih dan minuman lainnya. Nah, kalau situasi seperti ini di Indonesia, susah gak sih teman cari takjil diluar? atau tetep sama aja?
Kalau di Turki sih gak ada istilah takjil-takjil begitu. Begitu masuk iftar ya udah, paling selalunya ada ya soup, atau orang Turki sebutnya çorba sebagai makanan pembuka sebelum makanan utama. Gak ada istilah nyemil dulu kayak di kita ya. Begitu adzan maghrib terdengar, makan kurma, minum air putih lalu soup itu.

Saya bikin pukis ini dua varian ya, cokelat dan pandan. Lagi gak punya topping apa-apa jadi polosan aja. Tapi rasanya enak sekali, beneran 😏
Seratnya juga bagus, kayak yang di poto itu ya. Bikin pukis sudah berkali-kali sih... cuman ya gitu.. gak pernah sempat poto-poto dan didokumentasikan.. seringnya gitu 😊
Sampe yag kali ini saya wanti-wanti ke anak saya... kalau udah ada yang mateng jangan dimakan dulu ya.... hehehehe.... dia udah faham sekarang.. "Mau dipoto-poto dulu ya Mammi? " 😃

Oke deh..langsung catet-catet ya resepnya..siapa tahu cocok di lidah.

Hasil kurleb 24 buah

Bahan Biang:

🌙 1 sdm (15 gr) terigu 
🌙 1 sdt (5 gr) ragi instan
🌙 3 sdm (50 gr) air hangat
🌙 1 sdm (15 gr ) gula pasir

Bahan A:
🌙 175 gr santan kental
🌙 125 gr gula pasir
🌙 1 sdt garam halus
🌙 150 gr susu cair
🌙 50 gr susu kental manis
🌙 1 lembar daun pandan (bisa ganti dengan 1 sdt vanili pasta)

Bahan B:

🌙 4 putih telur
🌙 5 kuning telur
🌙 100 gr gula pasir halus
🌙 350 gr tepung terigu serba guna
🌙 50 gr pati jagung (misal; maizena)
🌙 1 sdt vanili bubuk
🌙 125 gr mentega, cairkan dan diamkan suhu ruang

Bahan tambahan:
2 sdm bubuk kakao larutkan dengan 3 sdm air panas
Note: bisa pakai perisa pandan sebagai varian lain.




Cara membuat:

1) Buat biang: Campur semua bahan, whisk dan diamkan kurleb 15 menit.

2) Dalam panci, campur semua bahan A dan masak hingga gula larut dan hampir mendidih. Aduk-aduk agar santan tidak pecah. Diamkan sampai suhu ruang. Ayam jadi satu terigu, pati jagung dan vanili bubuk, sisihkan.

3)  kocok putih telur hingga berbusa, lalu masukkan gula kastor secara bertahap sambil dikocok kecepatan tinggi hingga hard peak. Lalu masukkan kuning telur satu persatu sambil dikocok .

4) Masukkan tepung bergantian dengan santan sambil tetap dimikser kecepatan rendah saja. Lalu masukkan bahan biang, kocok sampai rata dengan kecepatan rendah hingga rata. 

5) Masukkan lelehan mentega, aduk dengan spatula hingga rata. Tutup dengan plastik film dan diamkan 1,5 - 2 jam sampai adonan keliahatan naik/ mengembang. 

6) Panaskan cetakan pukis dengan api sedang, olesi dengan mentega leleh tipis-tipis. Ambil adonan pukis, aduk-aduk hingga buih dipermukaannya tercampur. Ambil  bagian dan campur dengan pasta cokelat, aduk rata. 

7) Setelah cetakan cukup panas, tuang adonan putih lalu adonan cokelat sampai ¾ penuh lalu tutup cetakan. Set up timer 12 menit dan panggang pukis kurleb 12-15 menit dengan api sedang cenderung besar. Angkat dan segera olesi dengan mentega cair/ lembek.
