My today post is another Indonesian traditional snack (Jajan pasa (kue)). If you are my regular readers you must notice that lately I post many Indonesian snack. Yes.. those posts to enliven "concurrently post" with theme #30daysindonesiantraditionalsnack on "Your Kitchen My Kitchen" group in FB. So during this April member may post anything with that theme.
Jajan Pasar (kue) is Indonesian bite-sized snack or dessert food. Kue is a fairly broad term in Indonesian to describe a wide variety of snacks; cakes, cookies, fritters, pies, scones, and patisserie. Kue are popular snacks in Indonesia, which has the largest variety of kue.
Ingredients for filling:
- about 300 gr desiccated coconut (you can use fresh shredded coconut)
- 250 ml water (if you use fresh shredded coconut, use only 150 ml)
- 1 pandan leaf
- few drops pandan paste
- 150 gr sugar (more if you like)
- pinch of salt
Ingredients for making pancake:
- 150 gr all purpose flour
- pinch of salt
- 1 medium egg, lightly beaten
- about 350 ml coconut milk ( I use medium thickness)
- few drops pandan paste
Mix all pancake ingredients except pandan paste. Use wooden spoon or balloon whisker to mix well and well combine. Take about 200 ml from that dough, stir in pandan paste and pour into sauce bottle.
Heat non stick pancake pan over medium heat, drizzle pandan batter from sauce bottle over hot pan make any pattern you like (eg zebra pattern) or just random drizzle like mine, wait few second until it slightly dry on surface, then pour white batter over it, make very thin pancake layer by moving your pan around circle. let it cook 1 or 2 minute until slightly dry on edge, turn it over and continue cook other side for 1 minutes. Remove from pan, cover with damp cloth to prevent drying.
Finishing.
Take one pancake, put filling on 1/3 part and fold like you fold an envelope, then roll to close it. Do to the rest of pancake and filling till finish.
Your roll pancake ready to go.

*BAHASA INDONESIA
Bahan yang dibutuhkan:
untuk kulit:
- 150 gram tepung terigu protein sedang
- sejumput garam
- 1 butir telur, dikocok lepas
- 350 ml santan (saya gunakan santan instan)
- beberapa tetes pasta pandan
Campur semua bahan kulit kecuali pasta pandan. Aduk rata hingga licin. Ambil adonan sekitar 200 ml, campur dengan pasta pandan dan taruh dalam botol saus untuk membuat motif.
Panaskan wajan dadar anti lengket. Tuang adonan hijau sesuai selera, biarkan agak kering di permukaan, lalu tuang adonan putih diatasnya, ratakan membentuk dadar yang tipis. masak hingga pinggiran dadar agak kering dan bisa dilepas dai wajan dengan mudah. Balik dan masak sisi satunya sekitar 1 menit saja. Angkat dari wajan dan tutupi dengan serbet agar tidak kering.
- 300 gr kelapa parut kasar (saya gunakan kelapa kering)
- 150 gr gul pasir (bisa ditambah jika ingin lebih manis)
- 1/4 sendok teh garam
- 1 lembar daun pandan, disimpulkan
- pasta pandan dan sedikit pewarna hijau
- 250 ml air (jika gunakan kelapa parut segar kurangi air menjadi sekitar 150 ml saja)
Masak semua bahan isi hingga gula larut dan air agak menyusut. Sisihkan.
Penyelesaian:
Ambil selembar dadar, isi dengan adonan isi, lalu lipat seperti amplop dan gulung rapi.
Siap disajikan.
