Is a small Indonesian biscuit (kue kering) shaped somewhat like a cat's tongue (long and flat). They are sweet and crunchy. This cookie is a Dutch-influenced cookie due to the historical tie between Indonesia and the Netherlands. In the Netherlands, this cookie is known as katte tong, and is ultimately derived from the European cat tongue biscuit.
In French, it's called langues-de-chat and this biscuit actually comes from the Netherlands.

In Indonesia, kue lidah kucing is widely known. This pastry is a special dish on some Indonesian occasions such as Eid ul-Fitr, Christmas, and Chinese New Year along with many other traditional cookies like; kaastengels, putri salju, pastel mini, Butter cookies or simple chocolate cookies, and more.
And today, I will share that "must-have" cookie for each Indonesian family during Eid ul-Fitr holiday.
If you search across the internet for this cookie recipe, you will find various recipes for it, but the typical recipe for this cookie is using egg whites. This is the best way to use leftover egg whites if you have it in the refrigerator.
But my today's cat tongue cookie recipe is also using egg yolk, so this is a rich version of traditional langue-de-chat.
The result is, beside crunchy it has rich and buttery crumbs which I like. It is up to you which one you prefer, but you should try this recipe first ๐

(A)
๐ธ100 ml (110 gr) egg whites
๐ธ 100 gr margarine
๐ธ 175 gr icing sugar, sifted
๐ธ ½ tsp milk essence ( I skip)
๐ธ ½ tsp powdered vanilla ( I use 1 tsp vanilla essence)
๐ธ 2 egg yolks
(C) sift together:
๐ธ 25 gr milk powder
๐ธ 250 gr AP flour
๐ธ pinch of salt
(B)
๐ธ 200 gr butter๐ธ 100 gr margarine
๐ธ 175 gr icing sugar, sifted
๐ธ ½ tsp milk essence ( I skip)
๐ธ ½ tsp powdered vanilla ( I use 1 tsp vanilla essence)
๐ธ 2 egg yolks
(C) sift together:
๐ธ 25 gr milk powder
๐ธ 250 gr AP flour
How to make:
1) Grease some "lidah kucing" baking mold with margarine, and set aside. Preheat the oven to 140-150℃.
2) In a clean, grease-free bowl, whisk the egg white with a pinch of salt until hard peak. Set aside.
3) In another bowl, whisk butter, margarine, sifted icing sugar, and vanilla essence until creamy and pale. Whisk in egg yolk and continue to whisk for another few minutes.
4) Sift in dry ingredients in the C list. Continue to whisk until well-corporated. Then add the meringue, and fold nicely until everything is well combined.
5) Move into a piping bag with 1,5 cm open star tip. Spritz on the prepared baking tray. Bake in preheated oven 15-20 minutes until crunchy and golden brown. Watch out carefully cause this cookie is easily browned so fast.
Adjust time and temperature according to your own oven. Recognize your own oven condition.
6) Move and let it chill over the cooling rack before storing it into an airtight jar.

Ingredients A:
๐ธ 200 gr mentega
๐ธ 100 gr margarin
๐ธ 175 gr gula bubuk
๐ธ ½ sdt milk essence ( saya tidak pakai)
๐ธ ½ sdt powdered vanilla ( saya pakai 1 sdt vanilla essence)
๐ธ 2 kuning telur
Bahan B (campur dan ayak):
๐ธ 25 gr susu bubuk full cream
๐ธ 250 gr tepung terigu protein sedang
๐ธ 200 gr mentega
๐ธ 100 gr margarin
๐ธ 175 gr gula bubuk
๐ธ ½ sdt milk essence ( saya tidak pakai)
๐ธ ½ sdt powdered vanilla ( saya pakai 1 sdt vanilla essence)
๐ธ 2 kuning telur
Bahan B (campur dan ayak):
๐ธ 25 gr susu bubuk full cream
๐ธ 250 gr tepung terigu protein sedang
Bahan C:
๐ธ 100 ml (110 gr) egg whites
๐ธ 100 ml (110 gr) egg whites
๐ธ sejumput garam
Cara membuat:
1) Olesi cetakan "lidah kucing" dengan margarin tipis-tipis, sisihkan. Panaskan oven suhu 140-150℃.
2) Dalam mangkuk bersih bebas minyak, kocok putih telur dengan sedikit garam hingga hard peak. Sisihkan.
3) Di wadah lain, kocok mentega, margarin, gula halus, dan esens vanila hingga lembut dan pucat. Kocok kuning telur dan lanjutkan mengocok selama beberapa menit saja.
4) Ayak bahan kering (bahan C). Kocok kecepatan rendah sampai menggumpal saja. Kemudian tambahkan meringue/ kocokan putih telur, aduk lipat sampai semuanya tercampur rata.
5) Pindahkan ke dalam piping bag dengan ujung bintang diameter kira-kira 1,5 cm. Semprotkan di atas loyang yang sudah disiapkan. Panggang dalam oven yang sudah dipanaskan sebelumnya 15-20 menit sampai renyah dan berwarna keemasan. Hati-hati karena kue ini cepat sekali kecokelatan. Jadi sesuaikan waktu dan suhu sesuai dengan oven masing-masing ya. Kenali kondisi oven kamu sendiri.
6) Pindahkan ke atas rak pendingin sebelum disimpan ke dalam toples kedap udara.
