Soto is a very common Indonesian food. It is a traditional soup in a thin but well-seasoned broth. In Indonesia soto also one of many street foods around. Even it also cooked at home but the taste and flavor of the street food version still make people keep looking for it.

Soto can be prepared with chicken or beef and some mix with offal, along with vegetables.

In Indonesia, you can find many kinds of "Soto" represents their local heritages and they vary from one another. 

Jakarta, which is the home for Betawi people, has their own “Soto Betawi” with its sweet, creamy, coconut-milk base. Some regions also have Soto Ceker, a chicken foot soto which is usually offered as a variation of the usual Soto Ayam. 

Using a cow’s or goat’s tripe in soto also very popular in many regions. Like Soto Madura (from Madura island) also use tripe (or offal). Soto Betawi (from Jakarta) also use offal served in yellow spicy coconut milk soup with vermicelli, potato, and vegetables.

Soto Tangkar, a Soto made of chopped goat or beef ribs and beef brisket cooked in coconut milk soup with various Indonesian herbs and spices.

Janhagel or Jan Hagel  (pronounced “Yahn Hahgel”) is one of typical Dutch cookie. It is a rectangular, brittle cookie, covered with granulated sugar (the 'hagel') and almond shavings. It's an old Dutch specialty. Make from a mix of buttery and flaky delicate shortbread crust coupled with crunchy nuts—traditionally either walnuts or almonds—and sanding sugar.

Previously, this cookie was known as 'Strontboen' Jan Hagel. Because when farmers had cleaned the stable the staff ate Jan Hagel.

Jan Hagel cookies (or Jan Hagel koekjes, as the Dutch call them) are one of those delicious recipes that are passed down from generation to generation.

As well as in Indonesia, this vintage cookie is very famous together with other Dutch-influenced cakes, snacks, or cookies like Kaastengels cookie, oliebollen, bitterbalen, or many other foods. Please do check those links to get more idea.

In Indonesia-with very much dutch influenced-, this cookie also special for holiday cookies such as Ied el Fitr, Christmas, or other religious holidays. Every house bake their own cookies recipes which mostly passed from grand-grandmothers to grandmothers to mothers 😊

The ingredient key that makes this cookie stand out from other cookies is speculaas spice or in Indonesian language, we call it "bumbu spekoek". 

Speculaas spice mix is an aromatic blend of spices and often used in Dutch cuisine. Speculaas spice mix is also known as Spekulatius, Speculoos, and Spekolaus.

A chiffon cake combines methods used with sponge cakes and conventional cakes. It includes baking powder and vegetable oil, but the eggs are separated and the whites are beaten before being folded into the batter, creating a rich flavor like an oil cake, but with a lighter texture that is more like a sponge cake.

The cake tin is not lined or greased, which enables the cake batter to stick to the side of the pan, giving the cake better leverage to rise, as well as support in the cooling process when the cake is turned upside down to keep air bubbles stable.

Istanbul not only famous for its historical and beautiful places. It is also famous for its delicious and unforgettable traditional cuisine which around centuries ago. Also as a tourism city, Istanbul grows as a street food-city as well. When you visit Istanbul, you should try "Kumpir" or baked potato stuffed with dozens of vegetables and some protein such as boiled egg and sausage. It is easy to find this "kumpir" all around Istanbul but famous spots are in Ortaköy area or Beyoğlu area. For a homemade version, you can check my "kumpir recipe" here.

But if you are in Eminönü area, you should love another street food there "balık ekmek" or Fish sandwich in Turkish style.

If you watch "No reservation with Anthony Bourdain", you might see in one episode while he was visiting Istanbul and tried one street food at famous Taksim street-- Islak hamburger.

So today I will share that Istanbul street food delicacy.

Islak hamburger (or just ıslak burger) literally means wet hamburger. Sounds funny? maybe not. Cause this burger is actually wet and moist.

So what is "ıslak burger"?

It's one of our street flavors that many Istanbul residents are addicted to. A miraculous invention that looks like a shrunken hamburger from a distance 😃. Not really a "photographic" meal to show in your ınstagram post either. But we never doubt to call it "hamburger" cause, after all, it consists of a meatball between that hamburger bun.

Chiffon cake is a very light cake made with vegetable oil, eggs, sugar, flour, baking powder, and flavorings.

Its distinctive feature is from the use of vegetable oil, instead of the traditional fat which is solid at room temperatures, such as butter or shortening. This makes it difficult to directly beat air into the batter. 

As a result, chiffon cakes (as well as angel food cakes and other foam cakes) achieve a fluffy texture by having egg whites beaten separately until stiff and then folded into the cake batter before baking. Its aeration properties rely on both the quality of the meringue and the chemical leaveners.

A chiffon cake combines methods used with sponge cakes and conventional cakes. The diversity in Indonesia has led to a rich culinary heritage. From the famous Satay to Indonesian salad gado-gado, every Indonesian food is really worth to try. Just like this "Ayam Taliwang"

Ayam Taliwang is made with chicken (preferably free-range), which is grilled previously. Once it has been grilled halfway, then it marinates and tenderizes with a spice paste. Then it grilled until cook trough.

Although Ayam Taliwang is said to be a dish favored by Sasak nobility, Abdul Hamid claims to have invented the dish in 1970. It is named after Karang Taliwang in Mataram, the capital of Lombok.

Ayam Taliwang is a grilled chicken with spicy savory with distinguished taste from one key ingredient; Kencur root or sand ginger.

Known as Kaempferia galanga, kencur is a plant in the ginger family that is found primarily in open areas in Indonesia, southern China, Taiwan, and Cambodia. At a glance, the rhizome (root) of Kencur resembles ginger appearance but has a different, distinctive flavor. It has a strong taste with a pungent after taste.

This herb root commonly used in many Indonesian foods, especially Balinese and Javanese foods.

You can find in Asian market or Indonesian market at your local.

Plecing kangkung is an Indonesian spicy water spinach dish from Lombok island. Plecing kangkung made from blanched kangkung leaf (water spinach) served cold with fresh plecing sambal relish made from ground red chili pepper, shallots, and bird's eye chili.

As a side dish for Lombok Ayam taliwang dish, plecing kangkung usually also served with additional vegetables such as bean sprouts, string beans, fried peanuts and urap's grated spicy coconut dressing. Outside Lombok island, plecing kangkung is also commonly served in neighboring island Bali.

Tas Kebab is a Turkish style meat stew. The meat used can vary like beef, lamb, or veal. One of traditional home meal that serves at local restaurants here.

It is one of the meat dishes sitting in the corner of the Ottoman kitchen. It got its name from the way it is cooked. Traditionally it cooks in a copper pan.

This dish can be served with Turkish bread or with Turkish pilav (rice).

In addition, traditionally, while tas kebab was served, yogurt with garlic was also served.

I am not really in the mood of baking lately. Since the online class for my daughter starts a few weeks ago, I also get involved in it cause you know, 9 years old kid can not really understand how to set up a camera or microphone or if a problem suddenly comes up with the zoom or computer, I should always ready beside her. Since morning to half day.

Biryani is a mixed rice dish, its origins among the Muslims of India. It can be compared to mixing a curry, later combining it with semi-cooked rice separately. 

This dish is especially popular throughout the Indian subcontinent, as well as among its diaspora. It is made with Indian spices, rice, and meat (chicken, beef, lamb, prawn, or fish), and sometimes, in addition, eggs and/or potatoes in certain regional varieties. 

The word 'biryani' is derived from a Persian word, birian, which means 'fried before cooking'. It is a popular dish that has acquired a niche for itself in South Asian cuisine. The dish has spread across a wide swath of South Asia, reaching as far west as Iraq and as far east as Indonesia.

Ingredients vary according to the region and the type of meat and vegetables used. Meat (of either chicken, goat, beef, lamb, prawn, or fish) is the prime ingredient with rice. As is common in dishes of the Indian subcontinent, vegetables are sometimes also used when preparing biryani. Corn may be used depending on the season and availability. 

The spices and condiments used in biryani may include ghee (clarified butter), nutmeg, mace, pepper, cloves, cardamom, cinnamon, bay leaves, coriander, mint leaves, ginger, onions, tomatoes, green chilies, and garlic. The premium varieties include saffron. 

In all biryanis, the main ingredient that accompanies the spices is the chicken or goat meat; special varieties might use beef or seafood instead. The dish may be served with dahi (curd) chutney or raita, korma, curry, a sour dish of aubergine, boiled egg, and salad.

My post today is about one of the street food in Istanbul - Balık ekmek, literally means fish bread.

This fish sandwich is one of the traditional street flavors of Turkish cuisine, is identified with Eminönü in particular. When you walk along the Galata bridge and Eminönü port area, you will find many fisherman boats decorated in such colorful and beautiful ornaments with Turkish red flags selling this popular Istanbul street food.

People queue up in a long line at a certain boat that is believed "the best" among others. Last summer, I was among that crowded. But since I was with my girl, I was just looking for a less queuing seller not to make my kid suffer for boring 😊 

This fish sandwich prepared with typical Turkish sandwich bread, pan-grilled fish, mostly mackerel (turk; uskumru) or bonito (turk; palamut),with various vegetables and pickles. I saw some served with onion/ red onion sliced some didn't. No fancy plate, fork, and knife nor whatsoever, it's just wrapped with a piece of paper and you are good to go. We can sit down to enjoy our fish sandwich at some stools and bench prepared by the seller near their boat. Don't forget to order şalgam suyu or a turnip juice drink to enjoy with this dish.

This street food is prepared and sold on (fisherman) boats, sold on the coastal shores which are also of great interest to tourists.

Drinking tea is an old tradition of the human race. China might be the first country that drinks tea. But Turkey is the number one country that consumes more tea in the world. According to statista.com and theatlanthic.com, Turkey consumed almost 7 pounds per person per year, followed by Ireland and United Kingdom.

Turkish people love their tea hot. Not only in wintertime, the same in the summertime. 

Not commonly like other countries that enjoy their tea in a mug or a cup, Turkish tea served in a small Turkish tea glass. The glass' shape is known as "ince belli" or literally mean slim-waisted or people call it Tulip-shape glass. The glass has about 125 ml capacity.

Yes, summer still around, even the weather forecast said the heat will be increase to around 39℃ this week in my area. Nothing tastes better on a hot summer day than fresh-from-the-freezer ice pops. I know, we can get any kind of ice pops at any market around the corners, easy and "no pain" at all. Unfortunately, many store-bought ice pop varieties contain artificial ingredients, high fructose corn syrup, and food dyes 😣

So why don't we make our own? We can control the ingredients we use. There are so many different combinations and flavors we can make, just be creative 😊
