I am a spice person. I love spices and herbs and they must be in my pantry, complete, A to Z. 
Indonesia is a tropical country rich in herbs and spices products, from east to west Indonesian regions. That influences our way of life and how we cultivate hundreds of herbs and spices. To our cuisines, foods, and drink, maintain our daily health until medicines.

Even written in our history that many western countries occupied Indonesia after Christopher Columbus "discovered" one island (Maluku island) in Indonesia and found that the island had has many herbs and spices like ginger, nutmeg, peppercorns, and cloves. Since then, Vanco da Gama came from Lisbon, Portugal followed by Cornelis de Houtman came from Netherlands. Far away they sailed to found and dominate Indonesian spices which the value as high as gold at that time.
That was a marking point at which the "trade revolution" began in Europe. 
"Traders became conquerors. Asian-African nations were colonized and this opened the door to the era of Imperialism. Java was occupied in the 16th century, Maluku in the 17th century and gradually the Netherlands took control of our islands successively. "--said 1st president Soekarno in his book.

That's a little bit of history about spices and herbs written in our history book, some of us might didn't know about it.

So now let's talk about my sharing today, it's also about a spice which already used since our grand-grand-grand-grand parents. Which is now what I am going to share with you. We call it " Bumbu spikoek / spiku".Bumbu means spice mix in Indonesian language. Spekoek (old Indonesian spelling) or spiku is a cake which made using this spice. So in the old-time, this spice mix only uses for making Indonesian spekoek/spiku lapis legit or Indonesian thousand layers cake.
But then after years, people started using that spice mix in other recipes as well. We can use this spice mix in apple strudel, banana cake, Ontbijtkoek cake, or in some cookie recipes.

Maybe you remember my previous Jan hagel cookies recipe. Or Speculaas butter cookies, or my Spicy checkerboard cookies. They are absolutely heart-warming holiday cookies and a winner for tea time.
You have to taste it to understand what I am talking about this wonderful spice mix. This spice mix is so aromatic made from some spices in a certain amount and then grind it to powdery smooth. 

In Indonesia, I can find this spice blend easily in every baking shop or market. But since I live in Turkey I can't find this speculaas spice mix ready to use. I brought some from my homeland every time I visit Indonesia. I love this speculaas spice mix and use it a lot, so when I run out of it, no other way out except blend my own spice mix. I keep some of speculaas spice in purpose to copy the aroma and taste as close as I can. I use "Merak" brand from my hometown Surabaya to copycat the flavor and taste.


There are many brands in the market and maybe each brand has its own special composition blend of Speculaas Spices. But basically, all mixes include at least, cinnamon, nutmeg, clove, aniseed, white pepper, and coriander. Some additional spices to add are ginger, cardamom, and mace. Sometimes if I have some stock, I add some dried orange zest into my speculaas spice mix as well to enrich it.

In Dutch cuisine, this Speculaas spice mix is often used also. Speculaas is also known as Spekulatius, Speculoos, 
Speculaaskruiden, and Spekolaus in the Dutch language.

So here you are, my own speculaas or speculoos spice mix. I have two kinds of recipe, one I use from whole spices then roast them 1st to bring them back alive and release the aromas then I grind them with a spice grinder to powdery smooth-my fave.

The second way which is a short cut way is blending all powder spices and sift them to mix well, easy and no time consume.

Speculaas/ Speculoos Spice mix

Make about 8 Tbsp (120 gr)
Doble recipe as you need.

Recipe 1:
πŸƒ 6 tbsp ground cinnamon 
πŸƒ 1 tsp ground ginger
πŸƒ 1 tsp cardamom seed*
πŸƒ half nutmeg*
πŸƒ 2 tsp cloves *
πŸƒ 1 tsp  aniseed *
πŸƒ 1 tsp white peppercorn*
πŸƒ ½ tsp coriander seed* 
πŸƒ 1 staranise (optional) *
πŸƒ 1 pc mace (optional) *

How to:
1. Pan roast all ingredients with mark (*) until aromatic. Use the lowest heat only to avoid burning. Let it completely cool to room temperature.
2. Use a spice grinder or pestle and mortar to grind that roasted spices to smooth. Sift it and regrind the coarse one until you get all the spices powdery smooth. 
3. Mix with ground cinnamon and ground ginger then sift together. Keep in a dry air-tight container.

Second recipe:

πŸƒ 1 tsp ground ginger 
πŸƒ 1 tsp ground nutmeg
πŸƒ 1 tsp ground cloves 
πŸƒ ½ tsp ground aniseed
πŸƒ ½ tsp ground white pepper
πŸƒ ½ tsp ground coriander seed 
πŸƒ ½ tsp ground star anise optional 
πŸƒ ½ tsp ground cardamom optional
πŸƒ ½ tsp ground mace optional 

Mix all ingredients and sift together. Store this speculaas mix into a dry and clean air-tight container.

Apa kabar semuanya. Inshaallah kabar baik dan sehat selalu ya. 
Siapa yang gak kenal bumbu spekoek? iya bumbu beraroma wangi dan menggugah selera ini biasa kita gunakan dalam berbagai macam kek dan kue kering. 

Masih ingat dengan kue kering Jan Hagel yang sebelumnya saya sharing kan? Semua pasti suka dengan kue kering jadul itu ya. Selain itu bumbu khas ini biasa dipakai untuk membuat kue lapis legit atau ontbijtkoek cake dan cake beraroma rempah lainnya. Bisa juga untuk dicampurkan kedalam cake pisang untuk memperkaya aroma cake pisang.

Sewaktu tinggal di Indonesia, mendapatkan bumbu spiku ini tentulah tidak sulit. Tiap toko bahan kue atau bahkan di market-market pasti tersedia campuran bumbu beraroma menggugah ini. Tapi ketika tinggal jauh dari kampung halaman, dan stok bumbu spiku sudah menipis bagaimana?

Solusinya ya bikin sendiri ya. Mungkin karena kultur bumbu dan rempah di Turki berbeda dengan kita, mencari bumbu khas ini tentunya tidak ada. Dari sisa bumbu spekoek yang saya bawa dari Surabaya beberapa waktu yang lalu, saya ingin mencoba membuatnya sendiri berdasarkan aroma dan rasa bumbu spekoek itu. Merk nya "Merak". Saya pikir sudah mirip-miriplah aroma dan flavornya dengan yang merk "merak" itu. 

Saya yakin tiap merk dan produsen mempunyai takaran dan komposisi masing-masing. Tapi pada dasarnya bumbu spekoek mempunyai bahan dasar yang harus ada yaitu; kayumanis, pala, cengkeh, adas manis, merica, dan ketumbar. Beberapa bumbu tambahan terkadang ditambahkan untuk menambah cita rasa dan aroma yang khas seperti misalnya; jahe, kapulaga dan bunga pala.
Kalau membuatnya sendiri di rumah terkadang saya juga tambahkan parutan kuit jeruk sunkis. Kulit jeruk saya parut halus (jangan sampai terkena bagian putihnya), lalu saya sangrai juga bersama bahan yang lain lalu digiling sampai halus. Makin memperkaya aroma bumbu spekoek saya lho.

Resep bumbu spikoe 1:

πŸƒ 6 sdm bubuk kayu manis 
πŸƒ 1 sdt bubuk jahe
πŸƒ Separuh buah pala*
πŸƒ 2 sdt cengkeh *
πŸƒ 1 sdt adas manis *
πŸƒ 1 sdt merica butiran*
πŸƒ ½ sdt biji ketumbar* 
πŸƒ 1 sdt kapulaga butir*
πŸƒ 1 buah bunga lawang (optional) *
πŸƒ 1 buah bunga pala (optional)*

Cara membuat:
1. Sangrai bahan bertanda (*) diatas wajan dengan api kecil sambil terus diaduk, jangan sampai gosong ya. Sangrai hingga harum. Sisihkan hingga suhu ruang.

2. Setelah dingin haluskan dengan gilingan bumbu atau tumbukan bumbu. Ayak dan pisahkan bagian yang kasar. Tumbuk kembali yang kasar dan ayak hingga semua halus. Campur dengan sisa bumbu lain dan ayak jadi satu.
 
3. Simpan dalam toples bersih kedap udara. Bumbu spiku siap digunakan kapan saja.

πŸƒ 1 sdt bubuk jahe
πŸƒ 1 sdt bubuk pala
πŸƒ 1 sdt bubuk cengkeh
πŸƒ ½ sdt bubuk adas manis
πŸƒ ½ sdt bubuk merica putih
πŸƒ ½ sdt bubuk ketumbar
πŸƒ ½ sdt bubuk kapulaga
πŸƒ ½ sdt bubuk kembang lawang (opsional)
πŸƒ ½ sdt bubuk bunga pala (opsional )
Note: Pastikan semua bahan masih dalam kondisi bagus dan segar (baru)

Campur dan ayak jadi satu semua bahan diatas dan simpan dalam toples bersih kedap udara.
Bumbu spikoe siap digunakan kapan saja.
