The cultural diversity in Indonesia makes Indonesian cuisine has the most unique and rich in the world.
Meals are generally simple, the plentiful use of various roots, spices, grasses, and leaves adds zest to most dishes. The common use of the chili pepper may mislead some to believe that all Indonesian dishes are spicy and hot. But actually not really true. Most of our meals have relatively mild spices and tastes.
In addition, most Indonesian food is prepared with contrasting flavors, such as a spicy-sweet or hot sauce served over a bed of plain white rice, a popular meal throughout the country.
And today I will share one of vegetarian food that fresh yet flavorful; Plecing kangkung

Plecing kangkung is an Indonesian spicy water spinach dish from Lombok island. Plecing kangkung made from blanched kangkung leaf (water spinach) served cold with fresh plecing sambal relish made from ground red chili pepper, shallots, and bird's eye chili.
As a side dish for Lombok Ayam taliwang dish, plecing kangkung usually also served with additional vegetables such as bean sprouts, string beans, fried peanuts and urap's grated spicy coconut dressing. Outside Lombok island, plecing kangkung is also commonly served in neighboring island Bali.
Making this plecing kangkung is extremely easy and fast. Just blanched or steam the vegetables then flush it with chili relish.

For less spicy, you can reduce bird eye chilies and seeded the red chili pepper.
And if you do not have water spinach, you can easily replace it with spinach, it's a great alternative also. Just do not cook your spinach too long otherwise it will too mushy, just blanched in boiling water for few minutes and drain it well.
Plecing Kangkung / Indonesian water spinach with freshly chili relish

How to make:
Ingredients:
🍋 1 bunch (±200-250gr) water spinach
🍋 Bean sprout (optional)
🍋 Peanut, fried or roasted
🍋 4-5 small shallot (or 1 medium)
🍋 7-9 red chili pepper (seeded for less spicy)
🍋 ±20 bird eye chili pepper (reduce for less spicy)
🍋 1 big tomato (2 small)
🍋 1 tsp dry shrimp paste, toasted
🍋 1 tsp salt or to taste
🍋 pinch of sugar
🍋 fresh-squeezed lime/lemon juice
1) Prepare the vegetables; Steam the water spinach or cook in boiling water with a pinch of salt. Drain well and set aside. Blanched the bean sprout in a hot water for a few minutes and drain well. Set aside.
2) Seeded and small chopped red chili pepper. Chop the shallots, bird eye chili, and tomato. Use mortar and pestle, ground them with salt, a pinch of sugar, and toasted dry shrimp paste. Add fresh-squeezed lime (or lemon) juice, mix well.
3) how to serve:
Place water spinach and bean sprout on a serving plate, flush it with chili relish, and add some fried/ roasted peanut. Serve immediately.
