Kapuska #turkishfood ( Turkish style Cabbage stew)

Yesterday I went to the local market in our neighborhood and found many cabbages in low price. It seems cabbage season is on the air..hehehe.. In Turkey, we only can find cabbage mostly during winter together with broccoli, cauliflower.

For very big size of cabbage (around 4 kg) I got only 3 tl. So maybe I will post many things using cabbage after this 😃

And today I made this Kapuska or Cabbage stew. The kapuska name is derived from the Russian language mean cabbage, but although the name is imported, the dish is a Turkish version of a cabbage stew common in Russia and Eastern Europe. Kapuska is widely known and eagerly consumed in Thrace, as a result of Eastern European impact and Albanian and Bulgarian immigrants, and is consumed in the Black Sea region of Turkey neighboring Russia.

Kapuska is cooked in different ways in Turkey: with garbanzo beans, bulgur, rice, ground meat, lamb, beef, or vegetarian.



Kapuska #turkishfood ( Turkish style Cabbage stew)

Ingredients: serve 3
  • Approximately 300 gr cabbage, finely chopped lengthwise/  kubis, cincang halus memanjang
  • About 100 gr minced meat/ daging cincang
  • 1 medium carrot, roughly shredded / wortel, serut kasar
  • 2 Tbsp bulgur or rice / gandum atau beras
  • 1 medium onion, finely minced / bawang bombay ukuan sedang, cincang halus
  • 1 Tbsp tomato paste (you can mix with chilly paste)/  pasta tomat (bisa dicampur dengan pasta cabe)
  • 1 tsp red pepper flakes / flake cabe kering
  • 1/2 tsp black pepper powder / merica bubuk
  • 1 tsp salt or to taste / garam sesuai selera
  • pinch of sugar (optional but it will kick the flavor) / gula 
  • pinch of powdered cumin./ kumin
  • 1 Tbsp butter + 1 Tbsp olive oil / mentega + minyak zaitun
  • 1 glass of water (about 200 ml) / air
How to:
In medium pan, heat butter and olive oil stir in onion, then carrot, bulgur/ rice and minced meat. Stir fry until meat getting juicy. Add tomato paste and chilly paste (if use), stir fry for few minute.
Mix in cabbage, stir until slightly soft. Then seasoning with red pepper flakes, black pepper powder, cumin (if use), salt and sugar. Add water. cook until cabbage soften for few minutes.

Better enjoy with Ayran and Yogurt with garlic sauce.
