Merhaba..... Have you been to Turkey before? 
Turkey, where you can indulge your eyes with countless beautiful and historical places and scenes. And the place which satisfy your taste with dozens of shockingly delicious street foods. 

Many of my previous post of Turkish food are street food with homemade style cause İ love experiment and taste new flavor of Turkish street food then try to copy for cooking at home.
But of course İ love to learn basic and traditional Turkish food that local women serve for their family as well.
And my post today is Etsiz Çiğ Köfte, literally means meatless raw "meatball". İt's no meat version of Çiğ Köfte (read; chee kuf-te),  one of Turkey's favorite fast food/ street food. The raw meat (non fat) mixed and knead with fine grain bulgur and many kind of baharat / spices. Çiğ Köfte traditionally shaped in small long balls serve with many fresh vegetables, cucumber pickle and chili pepper pickle, with adding of sour pomegranate molasses (nar eksisi) and lemon juice. Some love to enjoy with lavash (flatbread) while other just wrap it with lettuce.

Aşure Günü or in Arabic ʻĀshūrā’ (عاشوراء) day is the 10th day of Muharram month (first month in Islamic calendar). In Islamic believed many important occurrences happened in this month. This month also important for Muslims and we also do Fasting a couple days in this month.
In Turkey, people make this aşure in Aşure day (Aşure Günü). Aşure or ashure is Turkish dessert congee made from mix dried fruits, grains, and nuts. Besides serve among the family, this dessert is generally shared among neighbors, relatives, and friends. Also calls Noah's pudding

And this year is my first time making this aşure... for few years before mostly I got this sweet congee from my neighbors. From some aşure I got from them I saw the ingredients is very much vary from each person, neither the grains they mix in or the dried fruits or nuts and even topping when they serve.

But when you go to the traditional market to buy "aşure packet/set" generally it's consists of whole wheat grain, dried apricot, dried figs, golden sultana/ raisins, hazelnuts, almond and peanuts with clove and cinnamon as spices.

You can really vary add or cook this aşure with ingredients you have but still, it should mix from grain (whole wheat), dried fruits (fig, apricot, raisins) and nuts (white bean and chickpea)... the rest are really according to your taste. This aşure or Noah's pudding should have a cinnamon aroma. Some people add few cloves but others didn't.

Kısır (Turkish style bulgur salad)

My today post is Kısır... one traditional Turkish side dish. It makes from fine wheat bulgur as main ingredients, soak in hot water then mix with tomato paste and vegetables . Served cold, and often serve as salad also. The vegetables adding in it can be vary according to your taste and availability in your frigged.

I remember this is my first Turkish food I can eat before I can adapted my taste to other Turkish food. I like this dish because it so fresh, with slightly sour taste form lemon juice and sumac easily acceptable by my Asian tongue. And I like vegetables mixed in it too...

This is my other recipe's version of Kısır. But if you make it more traditionally you can see  my previous post here



Serve about 2 or 3 portion.

  • 1 cup fine bulgur
  • 1 cup hot boiling water.
  • half yellow onion, finely chopped
  • 2 tbsp olive oil
  • 1 tbsp tomato paste ( I use homemade one)
  • 1/2 tsp cumin powder
  • 1 tsp sumac
  • 1 tsp smoke paprika powder or sweet cayenne pepper (optional)
  • salt to taste
  • fresh lemon juice to taste.

Domates Fesleğen Soslu İçli Köfte / Turkish stuffed meatballs in tomato basil sauce


Domates Fesleğen Soslu İçli Köfte which means Meatball (cooked) in tomato sauce and basil ... Yes .. This is another variation of köfte or Meatball from Turkey. İçli Köfte usually fried in oil or boiled in water ... but this time I try to cook in tomato sauce and basil instead of regular fried or boiling water ... inspired by İçli Köfte in a Restaurant at Kayseri, Turkey.

Domates Fesleğen Soslu İçli Köfte / Turkish stuffed meatballs in tomato basil sauce

Ingredients I:
- 1 cup fine wheat (fine bulgur)
 - 2 tablespoons semolina
- 150 gr ground beef
- 1 egg
- ½ tbsp sweet chilly paste
- 1 tablespoon flour
- Salt, pepper powder, cumin powder to taste to taste
mix and knead ingredients until well blended. Cover and set aside.

Kısır



Kısır is a traditional Turkish side dish made from fine bulgur, parsley, and tomato paste. The main ingredient, bulgur, is a cereal food generally made from parboiled durum wheat. For kısır, a finely grounded bulgur, unlike the coarse bulgur used for pilav, or sometimes couscous is used. Common additional ingredients include parsley, tomato paste, onion, garlic (in some regions), sour pomegranate juice (in southern regions of Turkey) or lemon, lettuce leaves, cucumber, and a lot of spices. It has a reddish color due to tomato paste admixture. It can be eaten cold and used as a salad or meze.






Ingredients:
1 cup finely- bulgur soaked with 1 1/4 cup hot water and cover. Let stand until bulgur tender about 15-20 minutes.
- 1~2 tbsp Salça (tomato paste)
- 5 sheets of lettuce- finely chopped .
- 1 bunch green onions - 
finely chopped 
- 1 bunch celery - 
finely chopped 
- 1 medium tomato fruit - seeded and cut into small cube.
- 2 medium cucumber - seeded, cut into small cube.
- 1/2~1 lemon - take the juice (if there is a pomegranate acid sauce, can be blended and reduce the amount of lemon).
- If you like olives, can also be blended.

How to make:
Mix all ingredients and mix well. Can be served cold topping with red pepper powder
