Ramadhan is the ninth month of the Islamic calendar, observed by Muslims worldwide as a month of fasting (sawm), prayer, reflection, and community. A commemoration of Muhammad's first revelation., the annual observance of Ramadan is regarded as one of the Five Pillars of Islam and lasts twenty-nine to thirty days, from one sighting of the crescent moon to the next.

Fasting from dawn to sunset is fard (obligatory) for all adult Muslims who are not acutely or chronically ill, traveling, elderly, breastfeeding, diabetic, or menstruating. The predawn meal is referred to as suhur, and the nightly feast that breaks the fast is called iftar. Although fatwas have been issued declaring that Muslims who live in regions with midnight sun or polar night should follow the timetable of Mecca, it is common practice to follow the timetable of the closest country where night can be distinguished from the day.

The spiritual rewards (thawab) of fasting are believed to be multiplied during Ramadan. Accordingly, Muslims refrain not only from food and drink, but also from tobacco products, sexual relations, and sinful behavior, devoting themselves instead to salat (prayer) and recitation of the Quran.

Like other Turkish families, breakfast and bread are something in my house that inseparable 😊. We enjoy bread breakfast until dinner.
We always eat bread at our breakfast time. Yes, I have also one or two jars of cereal, but those only for "very" emergency use 😄 . Even my kid is not a fan of breakfast with cereal.

Besides bread, pastry, bagels, or soft bread (we call it poğaça) are also served at breakfast time. And if you visit Turkiye and you go to a local restaurant (or hotel restaurant) for breakfast, you will find traditional Turkish breakfast. Which you can find anything... I mean everything! They will serve start from bread to pastries (any kind of pastries), menemen, fried egg in Turkish " sucuk" (Turkish spicy sausage), many kinds of jams, and more. And of course, breakfast in Turkiye is not complete without a hot Turkish tea 😊

In Turkey there are a few types of Poğaça... some use yeast (they call mayalı Poğaça) and some use baking powder. My post now it's yeast poğaça type.

No yeast version close to pastry texture or shortbread more than bread-y texture. For the non-yeast version, you can visit my previous post here. Or Check the category section " Börekler" for more variation.

And as I mentioned before, my today post is poğaça with yeast- so I can call it breakfast bread. Because the texture is more to soft bread (typical Asian soft bread). Poğaça have many topping and filling variation.

If you are my blog regular reader you may already be familiar with this Simit. It's a famous ring-like bread. It has an extremely crusty and yummy texture outside covered with sesame seeds, and delicious chewy-soft inside.
So famous until it becomes like Turkey's icon or symbolic.

People here love to enjoy them at breakfast or brunch time. You can find Simit sellers mostly in the early morning on streets or any other places in Turkey. And some breakfast cafes provide them while they are hot and fresh from the oven in the morning only. With hot tea accompany it make this "bagel" very popular as a breakfast/ brunch menu in Turkey.

Serve it with cheese spread, white cheese, or any kind of cheese you love, olive and cherry tomatoes, or cucumber as a salad. Or simply dip into olive oil herb with thyme....Hmmm...yummy👍

If you love Turkish food, you may hear about simit or Turkish bagel. A big ring shape bread covered with sesame seeds is one of the famous street food in Turkey.

And today I will share another Turkish delicacy; Açma or Turkish soft bagel. Yep.... this is a soft version of a Turkish bagel. If simit has crunch skin outside while chewy inside, this soft bagel version has a cotton-soft texture.

Usually, it is also sold together with simit and other traditional or nontraditional Turkish patisserie products.













Açma is generally made without filling, but during the processed butter applied over the dough before rolling it into a ring shape. That butter gives such a delicious and distinguished taste when you tear the bagel, it'll wire-like texture.

You may already hear about "pide". It's one of Turkish fast food that no one can resist for the second portion.
Here we have many kinds of "pide". There is one type of pide bread which especially served during the month of Ramadan calls "Ramazan pidesi". It's a simple flatbread sprinkled with sesame seeds.

But What I am going to share today it's not that kind of pide. Today I will share Pide with topping and it's shaped like a boat/ kayak.

Pide is a flatbread with various topping and bakes traditionally in a stone oven.
Pide and its varieties are widespread through Turkey and are established as an important food. The base is a flat-bread of a similar style to pita, chapati, or western pizza crust. 

A proper pide should be baked in a brick or other stone oven. Toppings (or can be as filling) vary widely and include but are not limited to cheese, onions, peppers, tomatoes, sausage, pastrami, eggs, mushrooms, ground beef, and parsley.

My sausage wrap with eggless soft bread filling with perfect tomato sauce and topped with mayonnaise ketchup, exactly like what you get from the bakery around the corner. You can vary this bakery-style roll bread with filling and topping by adding some cheese to enrich your breakfast or brunch time.

This bread is amazingly gone viral across the internet, especially on Instagram.
After "dalgona" coffee, now another viral dish from South Korean, it's Korean cream cheese garlic bread (육쪽마늘빵). It is one of-you can say-Hasselback bread but in Asian style.

Never think that this garlic bread is the same as European-style garlic bread. This Korean-style is absolutely different. Korean garlic bread has a soft and creamy texture while European garlic bread has a crispy-chewy texture with a savory palate.
With slightly sweet savory with cream cheese filling, this Korean style garlic bread is favorite street food in Korea.

Some sources say this famous bread originated from Gangneung City in Gangwon Province. This food was actually a Korean street food.
Pain Famille's bakery makes garlic-like loaves of six cloves, also known as six-sided garlic. There are also those who slice transversely like sausages using rather long bread. But what is popular today is round bread with star-shaped slices.

During pandemic and quarantine time, I see many people have a trend to bake their own bread. I am with you my friends, baking our own bread is giving us undescribed happiness and satisfaction. Nothing more heaven than the smell of bread baking in the oven.

I started baking my own bread since 2009 when I am married my husband. Learning by doing. You can check my "Bread and buns" category to see my "baking bread journey" 😊 . And I am still want to learn more and bake more 🥖

The most bread I bake and serve to my family is sandwich white bread. Also, Turkish Pide bread which always on our dinner table every weekend. There are some versions of Pide bread, No-knead version, knead version, and Pide bread with poolish method.

And today I will share my latest bread recipe; a hearty, rustic of no-knead artisan bread
Artisan bread is a term that has no absolute definition but refers to a style of short shelf-life bread that is usually offered unpackaged (in baskets) and consumed immediately after baking for maximum freshness.
The term artisan bread conjures the image of artisan bakers who are masters of their craft, shaping bread by hand and only using the basic bread ingredients: flour, water, yeast, salt, and most importantly time. Just like other European countries, bread is a staple for Turkish. Turkish people eat bread (turkçe: ekmek) start from breakfast to dinner. Bread is of such importance in Turkey that even to throw bread is an insult. No bread should ever go to waste

We eat bread with a slice of white cheese, dip it into olive oil for breakfast, spread with jam or tomato paste (salça). Eat with Turkish sucuk (dry spicy sausage) and eggs or just simply dip into a creamy soup.

Bread in Turkish culture varies according to the region, the way it is cooked, and its ingredients. Dor an example; Trabzon bread, one of the famous bread from Black Sea region. It differs from other bread it has long making process. 

There is also "bazlama" which is famous from Ankara. It's a single-layered, flat, circular, and leavened bread with a creamy yellow color, found in Turkey. It has an average thickness of 2 cm and diameters ranging from 10 to 25 cm, cook over pan instead of baking in the oven.
I will share this "bazlama" bread next time.

Gömeç ekmek (gömeç bread) also call "breakfast break (kahvaltı ekmeği), a specialty from Konya Province. It's a flatbread similar to ramazan pide (but different). Traditionally made by a group of women and bake in the public stone oven similar to the tandoori oven.

Turkish (flat bread) Ramadan Pide with #poolish method / Ramazan Pidesi (poolish ön mayası) | Çitra's Home Diary

Ramadan pide, is one of the Ramadan staples here in Turkey. It's a traditional soft-leavened Turkish bread. Round or oval and rather flat in form, and having a weave-like patterned crust, Ramazan pidesi is made of wheat flour with yeast and topped with egg glaze and sesame and or nigella sativa seeds.
It is traditionally served for the iftar and sahur meals during the holy month of Ramadan.


With Ramadan starting, everyone is waiting for the moment they get a hot Ramadan pide for iftar (fast-breaking meal) and put butter on it or dip into a hot soup (çorba). Enjoying the enchanting smell before eating the whole piece in a second. 

And seeing a long queue in front of fırın/ public bakery before iftar time to get this delicious flatbread fresh from the oven is a common view. But since the COVID-19 pandemic, people hesitate to go out and no crowd being allowed.
Most public bakery already produces this pide bread before 6 PM and are already wrapped up waiting for people to buy or they will distribute to the neighborhood. 


Baking bread at home has also become more popular these days. During the pandemic, people tend to cook or make anything at home including baking bread.
But for me, baking bread it's not about a trend. I love baking my own bread cause my husband loves to eat homemade bread.

Roti canai (pronunciation tʃanai) or roti cane (pronunciation tʃane) is a type of Indian-influenced flatbread found in Malaysia, Indonesia, and Singapore. It is often sold in Mamak stalls in Malaysia; also in Malay, Minangkabau and Aceh restaurants in Indonesia. It is known as roti prata in Southern Malaysia and Singapore and is similar to the Indian Kerala porotta. It is also found throughout Thailand, where it is called "Ro Tee" and is typically sold by Muslims, most often with street carts, and is usually Halal.

In English and in Chinese, roti canai is sometimes referred to as "flying bread" (飞饼 fēibǐng), a term that evokes the process of tossing and spinning by which it is made. In Chinese, Roti canai is originally called 印度煎饼 "yìn dù jiān bǐng", which means Indian pancake.

Traditionally roti canai is served with dhal (lentil curry) or any type of curries, such as mutton or chicken curry. However, the versatility of roti canai as the staple lends itself to many variations, either savory or sweet, with a variety of toppings and fillings, which includes eggs, banana, sardines, and onion. In Thailand, it is usually served sweet - typical fillings include condensed milk, peanut butter, jam, and nutella, without the curry.

Roti canai commonly is consumed with curries, as a dipping sauce or poured upon the roti. Variations of curries include lentil, vegetables, mutton, beef to chicken curry. However, as a staple food, the versatility of roti canai has enabled the cook to create some new recipes and derivatives with variations of toppings and fillings, either savory or sweet. One of the characteristics of roti canai and its derivatives is that it can be eaten with the hands, without the need for utensils. This makes it a convenient dish to consume while being filling. This characteristic makes it a dish of choice as breakfast or as late-night supper.

In Indonesia, roti canai is often called as "roti cane", "roti konde" or "roti maryam". and usually served with Kari Kambing (mutton curry). It is derived from Indian cuisine and came into Indonesia via the influx of Muslim Indian migration to Aceh Sultanate in Northern parts of Sumatra circa 17th century, and later to the rest of Dutch East Indies in early 19th century. Roti canai is more prevalent in Sumatra, especially in Aceh, North and West Sumatra. Roti cane has been adopted within Malay cuisine of Sumatra, Aceh cuisine, and Minangkabau cuisine. Consequently, there are Malay, Aceh, and Minangkabau restaurants that serve roti canai with mutton curry in Indonesia that are operated by ethnic groups other than Indians. This Indian-origin dish has been well-integrated into Aceh cuisine that it has been considered as theirs.

Pogačice (diminutive of pogača) is a type of pastry. Pogača, Poğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten in Bosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries), Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is called pogatschen in Austria. 









Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.
Mostly eaten for breakfast but also as appetizer during noon together with Turkish bulgur salad (kısır), or potato salad and hot tea.
