Sambal is a staple condiment in most Indonesian cuisine. Almost all Indonesian food requires sambal to be served together with it.

Sambal is an Indonesian chili sauce or pastes, typically made from a mixture of chili peppers with secondary ingredients, such as shrimp paste, garlic, shallot, sugar or palm sugar, and tomato or even peanut or other ingredients.

Chili oil is prepared basically by pouring hot vegetable oil slowly on chili pepper powder or chopped chili pepper. Many other ingredients can be added alongside to enrich flavors such as minced garlic, dried ginger, sesame seeds, sesame oil, Sichuan peppercorn, cinnamon, star anise, and bay leaf.

Chili oil can be consumed directly with other food. Like wonton in red oil and Noodles.

In Turkish cuisine, chili pepper-infused oils are used widely as a condiment. Turkish dumpling; mantı is served with chili-infused oil poured over the garlic yogurt sauce. The oil is prepared by mixing chili paste (Turkish: biber salçası) and certain spices and herbs such as black pepper, chili flakes or powder, and dried mint.

Curry is my regular meal. In Indonesia, we have so many kinds of curry based on the spices and herbs used also base on the protein we use. Start from seafood, poultries, eggs, beef until vegan version.













And today I will share a curry paste recipe from Indonesian neighbor country, Thailand. Indonesian food and Thailand food have many similarities. We use many varieties of spices and herbs and we love our food spicy.

Curry paste is one of my staple, anytime I want to make something it's ready anytime in my pantry. You can check many other homemade things I made here and here.

I always try to get as fresh ingredients as I can so I can get the authentic version that I am looking for. But if you can't find the fresh spice/ herb you can use the powder version.
I stir fry my curry paste to have a longer time to keep and it is just like a store-bought one. 
If you don't want to stir fry your paste, you can skip adding vegetable oil and keep the fresh (uncooked) paste in the freezer.

It is no doubt that garlic is ancient medicine. Imagine if it mixes with yogurt, what will happen? We can maintain our health by consuming a bowl of garlic yogurt in our daily diet.

In the days when modern medicine was not available, people used garlic for many years to protect their health. This method, which is traditional in many regions where modern medicine still does not reach, continues to be applied. It is consumed both its green stems also the dried clove.

Garlic taken with yogurt can be consumed more easily and facilitates digestion. And here some of the benefits:

Çökertme kebabı (pronounced 'Ch'kertme kebab') is a type of kebab from Anatolia. It's a lamb or veal or beef steak served with fried potatoes, garlic yogurt and tomato sauce. Grilled tomato and banana chili pepper also served as a side.

This dish is famous from Bodrum and Muğla province area of South West Turkey.
The dish's name derived from a village's name in the Milas district of Muğla province, Çökertme köyu.

This dish is a restaurant-style that now people choose to make it at home.

Pickle in Indonesian cuisine is part of side dish that complement main dish or other meal. Different from other type of pickle which brine in vinegar or other solution and ferment for period of times, Indonesian pickle is quick to make and consume it freshly after made.

Many vegetable and fruit  we use for our fresh pickle e.g carrot, cucumber, bean sprout, cabbage, pineapple, shallot and more.
We also have cooked pickle and generally serve as side dish- we call it "acar kuning" or yellow cooked pickle.

My Homemade Plum sauce / Saus Buah Prem

Plum sauce, is one of staple condiment in Asian cuisine. İt's sweet and sour basic sauce can be used for cooking or dipping sauce such as spring roll, dumpling, fried chicken, roasted duck and more.

Store bought plum sauce mostly has viscous brown to dark brown in color. Unlike when we make it at home, the color tends to light red to dark one.. just like plum's color.
İ have no idea what kind of plum used for making plum sauce at manufacture so they can produce light brown to dark brown color.

İ love to cook. A lot!
When İ was single, even İ lived alone I tried to cook for myself when İ wasn't too tired from work. Or I cooked mostly at the weekend together with my friends.

And early time I married my husband, İ spent most of my time in kitchen.
Experimented and tried some new recipes İ never cooked before. More over İ should learn how to cook Turkish food for my husband. So kitchen is my new office after İ got married.

Then there come new phase in my life when İ had my baby. İ couldn't stay in my kitchen as much as before.
Things got changed. İ increased my new interest on sewing and crocheting-and my kitchen schedule less and less for new experiment except fast and easy daily meal for us.

Busy in kitchen still my biggest yearning. So as my kid gets bigger, İ try to be busy trial and error for new recipe in the kitchen ( İ finally succeed bake macarons! ... yay! 😄) 
But still İ need to lessen my time in kitchen cause my kid need more attention and more my present.

Then İ finally manage having fun in kitchen yet still can play with my kid. İ Sometimes bring her to the kitchen to help me - of course an easy part for her 😍

Indonesian cuisine is one of the most vibrant and colorful cuisines in the world, full of intense flavor. It is diverse, in part because Indonesia is composed of approximately 6,000 populated islands of the total 18,000 in the world's largest archipelago, with more than 300 ethnic groups calling Indonesia their home. Many regional cuisines exist, often based upon indigenous culture and foreign influences. Indonesia has around 5,350 traditional recipes, with 30 of them considered the most important.

My today post is one of the famous İndonesian cuisine called Ayam bakar kecap. Ayam bakar literally means grilled chicken, kecap is sweet soy sauce. This sweet soy sauce (kecap manis) is one of the staple condiments in İndonesian cuisine especially in javanese cuisine. Traditionally the chicken grilled over charcoal and brushed with spiced kecap manis during the grilling process which gives more intense flavour.

In Java, ayam bakar usually tastes rather sweet because of the generous amount of sweet soy sauce either as marination or dipping sauce, while ayam bakar Padang, Bali, Lombok and most of Sumatra are usually spicier and more reddish in colour due to the generous amount of chilli pepper, turmeric and other spices, and the absence of sweet soy sauce.


Ayam bakar is usually served with sambal terasi (chilli sambal with terasi) or sambal kecap (sliced chilli and shallot in sweet soy sauce) as dipping sauce or condiment and slices of cucumber and tomato as a garnish as well as a side dish.

Sambal terasi

Sambal is a staple condiment in most İndonesian cuisine. Almost all İndonesian food requires sambal  to be served together with it. 

Sambal is a hot sauce typically made from a mixture of variety of chili peppers with secondary ingredients such as shrimp paste, garlic, shallot,  palm sugar, lime juice, kecap manis (sweet soy sauce) and rice vinegar or other vinegar. 
Sambal is an Indonesian loan-word of Javanese origin (sambel). It is native to the cuisines of Indonesia and neighboring countries like Malaysia, Singapore, Thailand and Brunei. It has also spread through overseas Indonesian populations to the Netherlands and Suriname.

Various recipes of sambals usually are served as hot and spicy condiments for dishes such as lalab (raw vegetables), ikan bakar (grilled fish), udang goreng (fried shrimp), ayam goreng (fried chicken), ayam penyet (smashed chicken), iga penyet (ribs) and various soto and soup.

Beside kecap manis/ sweet soy sauce and spicy chili sauce, teriyaki sauce is the staple sauce in my pantry. Those sauces I can use for almost any cook at any emergency time.

Anytime I back home visiting my family in Indonesia I usually bring some local product of teriyaki sauce and some other sauce. As Indonesian and Asian I have already gotten used to that local product name "saori". I think it's a local product with a Japanese license.

Of course, here there is some imported product as well and I already tested and compare some other teriyaki sauce with "saori" but still, I prefer my own teriyaki sauce taste.

And after some experiments tried to copy the taste of my fave teriyaki sauce so here is my recipe base on my preferred taste and as close as possible to that brand.

Ikan Bakar Bali sambal matah / Balinese grilled fish with sambal matah

Indonesian cuisine often demonstrates complex flavour,acquired from certain ingredients and bumbu spices mixture. Indonesian dishes have rich flavours; most often described as gurih (savory which equate to umami) and pedas (hot and spicy), and also combination of basic tastes such as manis (sweet), asin (salty), asam (sour) and pahit (bitter). Seven main Indonesian cooking methods are goreng (frying), bakar (roasting) or panggang (grilling), tumis (sautéing), sangrai (roasted), rebus (boiling) and kukus (steaming).

My post today is about indulge my craving of Indonesian food. It has been a while I didn't spoil my self with this best fave of mine ; Balinese grilled fish / Ikan Bakar khas Bali with sambal matah.

This grilled fish is commonly found when you were visit Bali. I think most of you already know where Bali island is. Sambal matah is Balinese style raw sambal. With sharp lemongrass and kaffir leaves flavor distinguish this sambal from other sambal types we have. And this sambal matah always serve with that full tropical flavors of Balinese grilled fish. Enjoy them with warm steamed rice, some raw vegetables salad, you'll get best Balinese grilled fish on the planet 😃




You can prepare the fish marinate 1st a night before if you plan having bbq/ grill time the next day. The fish should marinate in bumbu /spice at least 2 hours before the get best flavor mingle in fish meat. 
For fish I use local çipura/ çupra balık (gilt-head bream). You can sea bream or sea bass or snapper or yellow tail fish.

The best way to grill this fish is over charcoal-like my mom always does. Take your grilling stove outside and invite your neighbours with this fabulous fragrant of this Balinese grilled fish ^,^

Nasi Udang Sambal ala Bu Rudi / Indonesian Shrimp rice with garlic sambal

Surabaya is capital city of East Java province in Java island, also well-known as one of famous culinary destination in Indonesia. Yes, when you visit Surabaya you'll find widely various of delicious foods-traditional or even international.

And like as many other Asian cities, Surabya is also paradise of street food which mostly open almost 24 hours or start at evening. I am originally from Surabaya, so I know what kind of food you should try and where is the best around my city.

Among many famous foods, there is one which I will share today. Nasi Udang ala Bu Rudi. Nasi means rice, Udang means shrimp. Bu Rudi or madam Rudi is founder/ owner of the restaurant that serve this food.
The dish consist of white steam rice, crunchy fried shrimp, chili sambal, serundeng kelapa (spiced shredded coconut) and some fresh cucumber and Indonesian basil/ kemangi.

The typical of this famous menu is the extremely hot spice of it's chili sambal. I am talking very very seriously hot- even for some local people. You know east java food especially Surabaya's food famously spicy and hot in taste. But you can make your own sambal as your liking.

Dipping Sauce recipes (Aneka saus celupan untuk dim sum/ dumpling, dll) | Çitra's Home Diary
Ingredients:
  • about 1 cup Hot Chili sauce ( I use ABC chili sauce)
  • about half cup soy sauce
  • 3 Tbsp sesame oil
  • 2 Tbsp honey
  • sesame seeds (optional)
Mix all to combine. Keep in an airtight jar until ready to use

Sambal is a chili based sauce which is normally used as a condiment. Sambals are popular in Indonesia, Malaysia, Singapore, the southern Philippines and Sri Lanka, as well as in the Netherlands and in Suriname through Javanese influence. It is typically made from a variety of chili peppers and is sometimes a substitute for fresh chilis. It can be extremely spicy for the uninitiated. In Indonesia it self, we have many kind verieties of Sambal. One of it is "sambal Dabu-Dabu".
Sambal dabu-dabu It comes close to the Mexican salsa sauce, origin from Manado (east Indonesia). It consists of coarsely chopped tomatoes, calamansi or known as lemon cui or jeruk kesturi, shallots, chopped bird's eye chili, basil, vegetable oil, salt.
Today I made grilled fish served with sambal dabu-dabu, famous dish not only in Manado but also become favorite everybody across Indonesia. If you are fish lover, you should try this also and experience Indonesian flavor in you family dinner table once in a while.

Acılı Ezme (meze)

Acılı Ezme is hot spicy freshly mashed tomato with onion mix with other herb ingredients. The Hot spiced leveling can be vary according each one's taste and favor.

Lumpia sayuran dengan saus celupannya (vegetable springroll a la Indonesia with the dipping sauce)

Lumpia are pastries of Chinese origin similar to fresh popiah or fried spring rolls popular in Indonesia and the Philippines. The term lumpiaderives from Hokkien lunpia (traditional Chinese潤餅pinyinrùnbǐngPe̍h-ōe-jī: jūn-piáⁿ, lūn-piáⁿ), which is an alternate term for "popiah". The recipe, both fried and fresh versions, was brought by the Chinese immigrants from the Fujian province of China to Southeast Asia and became popular where they settled in Indonesia and the Philippines.
In the Netherlands and Flanders, it is spelled loempia which is the old Indonesian spelling for lumpia and has also become the generic name for "spring roll" in Dutch. A variant is the Vietnamese lumpia, wrapped in a thinner piece of pastry, in a size close to a spring roll though, the wrapping closes the ends off completely, which is typical for lumpia.

In my homeland, famous Lumpia mostly from Semarang (it's one city in central Java), so we call it Lumpia Semarang. Originally we stuffed it with young bamboo shoot (we call it "bung")  together with other vegetables. But since in Turkey I can not find young Bamboo shoot, I replace it with jerusalem artichoke... Nice though, using exactly same seasonings as the original Lumpia in my homeland, this Lumpia has satisfied my craving about my Indonesian food..
