Jan Hagel koekjes / Dutch spicy almond cookies / Resep Kue kering Klasik Jan Hagel | Çitra's Home Diary

Janhagel or Jan Hagel  (pronounced “Yahn Hahgel”) is one of typical Dutch cookie. It is a rectangular, brittle cookie, covered with granulated sugar (the 'hagel') and almond shavings. It's an old Dutch specialty.
Make from a mix of buttery and flaky delicate shortbread crust coupled with crunchy nuts—traditionally either walnuts or almonds—and sanding sugar.

Previously, this cookie was known as 'Strontboen' Jan Hagel. Because when farmers had cleaned the stable the staff ate Jan Hagel.

Jan Hagel cookies (or Jan Hagel koekjes, as the Dutch call them) are one of those delicious recipes that are passed down from generation to generation.

As well as in Indonesia, this vintage cookie is very famous together with other Dutch-influenced cakes, snacks, or cookies like Kaastengels cookie, oliebollenbitterbalen, or many other foods. Please do check those links to get more idea.

In Indonesia-with very much dutch influenced-, this cookie also special for holiday cookies such as Ied el Fitr, Christmas, or other religious holidays. Every house bake their own cookies recipes which mostly passed from grand-grandmothers to grandmothers to mothers 😊

The ingredient key that makes this cookie stand out from other cookies is speculaas spice or in Indonesian language, we call it "bumbu spekoek"
Speculaas spice mix is an aromatic blend of spices and often used in Dutch cuisine. Speculaas spice mix is also known as Spekulatius, Speculoos, and Spekolaus.

What do you see in the internet that can make you forget the time- or forget how many macarons did you eat already?...  😄

İ lost my self in the web world anytime İ click anything about cooking, start from bakeware sale until food photography.
And İ love crafting like crocheting, so İ mostly drifting away searching hundreds of patterns.. 😊

Eniweeeeyyy...my today post is my latest macarons baking.
Yep... İ enjoy to eat them as much as İ love to bake them. Give me a pro camera then İ will capture them in many styles! 😊
They are so adorable in front of camera, don't you think so?

What is macarons?
Macarons, a sweet treat meringue-based confection made of egg white, sugar, icing sugar, almond powder, and sometimes food coloring is added.
The confection is characterized by smooth, squared top, ruffled circumference (referred to as the "foot" or "pied"), and a flat base. It is mildly moist and easily melts in the mouth. Macarons can be found in a wide variety of flavors that range from the traditional (raspberry, chocolate) to the new (foie gras or matcha).

Basic Macarons with Chocolate Caramel Filling (Italian meringue method)

Resep dalam Bhs Indonesia ada di bagian bawah

Merhaba From Türkiye 👋

First of all, I'd like to thank you for visiting my blog. I hope you can come back, again and again, to check up any beyond Indonesian or Turkish food or something sweets that you might love. Your comments and emails brighten my days and make this simple blog thing worthwhile 😍💛

Making macarons is part of my baking journey. I still remember how many times İ failed baking them before İ finally had my happy ending story.

My 1st successful macarons were lemon macarons a couple of years ago, followed by some flavored macarons that become my favorite, especially Pandan macarons with coconut cream filling
For you who never try pandan in your macarons, you should try it...totally delish for your coffee time or entertain your friends.

Or maybe chocolate is your favorite.. you could see my dark chocolate macarons İ previously posted.
All those my macarons are using french meringue method which starts with raw egg whites, whipped until they're foamy enough to hold stiff peaks, then fold into almond icing sugar mixture.
For Macarons with French meringue method, you can visit my category list "MACARONS" .

Just for information, there are three methods to whip the egg white; French method ( İ mentioned above), the Swiss method, and the İtalian method.

Swiss meringue method combines the granulated sugar and egg whites upfront, whisking them together over a water bath to about 140°F (60°C), then whipping them until stiff peak stage.

You might know that macarons are highly unreliable cookies, even if you have made them several times. The results can vary from time to time, and sometimes you have no idea what went wrong when you got your macarons has no feet or crack or collapse after baking.
It takes some time to figure out what works for you, in your kitchen and oven.

When making macarons, most patisseries use the Italian method, due to the reliability of Italian meringue. People say it's very stable, which is important for a well-shaped macaron as well as fail-safe.

That's one of my reason also İ want to start my baking journey using İtalian meringue method for my macarons. İn this method we will whip the meringue with hot sugar syrup until it thick and glossy before adding it to almond mixture.

So voalla... here it is my blue macarons using my first italian meringue method 😍😎

For this method, İ uses liquefied egg white which is the egg white that had been placed in a clean jar, İ covered with cling wrap with some small holes to let water content evaporate. İ kept my egg white in the refrigerator for 3 or 4 days.

KUE KERİNG KACANG / INDONESİAN PEANUT COOKİES. #kuekeringlebaran #chrismastcookies #peanutcookies #kuekeringkacang #Indonesiancookies

This Peanut cookie is one of many other İndonesian old traditional cookies. İ grew up with these cookies. İ remember having these cookies every Eid Fitr holiday when my late grandmother or my family took me and siblings visited some relatives and family's friend.
At that time (around 1980's) we still could find this peanut cookie easily, at least every Eid Fitr or Christmas holiday. Until İ think around the middle 1990's it became less popular among other classic cookies (kaastengels, nastar, butter cookies, etc).

Even it became less popular compare to other classic and modern cookies, still, some small stalls sold this peanut cookie until İ didn't remember exactly when it became less and less to find especially in big cities.

İ left my homeland Surabaya around the year 2000 and started my new academic career in Jakarta and since then İ never ate or saw those cookies anymore until now year 2017 😢
But İ still remembers exactly how it tastes and İ miss it now.

Kue kering #PutriSalju II / snow white cookies II

Resep dalam bahasa Indonesia ada dibagian bawah

Selam everybody..... Merhaba from Turkey....

When latest week of Ramadhan like nowadays.... and when eid-el Fitr getting near...most muslim family in Indonesia would be very much busy preparing things for welcoming biggest Muslim religious festivals.

If you live in Indonesia, the vibrancy and spirit of Eid-el Fitr sorely can be felt in malls, supermarket, offices, terminals until kitchen at the last week of Ramadhan like now days.
Malls gets very much crowded triple like normal days. Kids are the happiest one cause they will have plenty of new clothes for Eid-el Fitr * I'm missing my childhood.
Hectic also increase at many terminals since people start flooded the terminal for travelling to their home town.

And since many family member mostly already home for spending last week of Ramadhan, the most busy person at home of course, MOMS! (^,^)

And part of the kitchen hectic in Indonesian families is making cookies. A lot of them. We make any kind of traditional cookies like Kaastengel, Nastar (pineapple tart), semprit butter cookies, and many others. Also this Putri Salju cookies.
These cookies are like "must cookies" on our living room table during Eid-el Fitr.

My today's post is another Putri Salju cookie. I made these cookies before but with a different recipe, check my previous Putri Salju cookies here for another version.
Both recipes I think is great and will give you the best snow-white cookies for your family and friends.

Try both recipes and tell me which one suits your taste.

Rose Macarons with rose jam butter cream filling

Selam everybody...... Merhaba from Turkey.

As spring blooms in every corner of my town, these eye catching rose macarons beautifully bloom with perfect feet in my oven. My overwhelming happy heart because I can add more collection for my macarons flavor. And proudly I can pass another macarons baking without fail.

This is true story... once you succeed baking nice, perfect and yummy macarons. I'll tell you, YOU CAN NOT STOP! ^,^
And you better start to find some new friend to enjoy them together. Or... maybe you start thinking to make money by selling them among friends and relatives.. why not?

Macarons is very expensive here. Once I tried to buy from local patisserie at one mall, I must paid 25 TL (Turkish lira) for 4 small macarons! Just convert it to your own money.
And for me nothing so special about that macarons I bought but they came with nice pastel color which I like, that's all.

And it was too sweet for me.

Long long time ago when I was visiting my sister who lived in Kajang, Malaysia at that time, I remember I ate macarons at Kuala Lumpur, in one cafe  inside petronas tower. . . I remember I ate chocolate macarons with chocolate filling. The tart was perfect and the sweet was just balanced with the bitterness of the chocolate. And that was I think best chocolate macarons I ate until.. I can bake it by my self.. lol.

Should I fly to Paris to taste better macarons? 😍 ^,^

Well.... just go to your local market to grab some almond meal. Then go to your kitchen to start baking them by your self. You will get cheap yet yummy macarons without flying to France.

Black Sesame Macarons with Dark Cocoa filling

Selam Everybody.... Mehaba from Turkey...

Macarons, is a french sweet meringue-based confection made with egg white, icing sugar, granulated sugar, almond powder or ground almond, and food colouring. The macaron is commonly filled with ganache, buttercream or jam filling sandwiched between two cookies. The name is derived from the Italian word macarone, maccarone or maccherone, the meringue.

Even basically these people fave just made with 4 ingredients plus food coloring (if using), now we can find many ideas of variety for this macarons. Like adding cocoa powder in it to make chocolate macarons. Or adding some Asian taste by adding matcha or pandan flavor in it.
And if you are my regular reader, you should know that previously I made new favorite; coconut macarons. In case you missed my other macarons recipe, you can check at "Macarons" category list.

And part of my obsession to make macarons' variety as many as I can, today I made black sesame seed macarons. Some of you maybe already familiar with black sesame seed macarons, meanwhile some of you never heard about it and wondering how it make and taste.

Yup..me neither ^,^ I never tried black sesame macarons before. That is why I am so curious about it. When I search for black sesame macarons recipe on the net, I found some of them used 100% black sesame seed for their nut-free macarons while other using ratio for almond and black sesame powder.

So for my black sesame macarons today I'll stick to my base recipe with a little modification adding black sesame powder. Oh, btw... I make my own black sesame powder by grinding some black sesame seeds in a spice grinder. Sift a few times to get a smooth powder.

Bring back the coarse one to the grinder to process until you get smooth powder. But be careful not to work it too long otherwise you'll end up with oily and gritty powder. Next time I will post how to make black sesame seed powder in separated post, this time I didn't take picture of it.

But it would be easier if you can access black sesame powder ready in your hand ^,^

Strawberry Galette

Selam Everybody... Merhaba from Turkey...

I like galette. No.. I love it! Especially fruity galette for dessert. The combination from flaky buttery crust and fresh fruits as topping is my number one list for my afternoon tea time.
And also it's perfect for our after dinner dessert cause it's fresh and light. Mostly I serve it with yummy creamy kaymak (Turkish clotted cream), but sometimes with simple vanilla ice cream. Or you can serve it with whipped cream, YUM!

Strawberry Galette| Çitra's Home Diary

Beside sweet galette for dessert, we can make a savory one as well with a vary of topping, my most fave is cheese combine with any vegetables and sausage.
But today I want to make a strawberry galette. I already made my homemade flaky pie crust a day before, so it's gonna be easy to go.
You can check my recipe for flaky pie crust here. But feel free to use your own pie crust recipe. Another idea is you can use pastry puff dough as well.

Pistachio Butter Cake Truffles

Assalamu'alaikum......

Tapi suami dan anak saya... wohooohooo... they are sweet tooth banget!

Jadi ceritanya manfaatin cake left over hasil baking 2 hari lalu. Sebenarnya cakenya sendiri masih bisa dimakan atau disimpan di freezer sampai dengan sebulan sih..tapi males ah nyimpen-nyimpen segitu lamanya. Kalau pengen lagi ntar baking lagi aja ^,^

Pistachio Butter Cake Truffles
Jadi kalau kalian punya cake sisa atau bosan dimakan gitu aja, coba deh resep ini. Untuk bahan-bahannya bisa dikonversikan sesuai banyaknya cake yang ada. Kalaupun gak punya cake sisa tapi pengen bikin, cake dasar apapun bisa kok dipakai, tetep aja konversikan bahan lainnya sesuai banyaknya cake. Paling gampang baking cake dari cake box siap pakai saja kalau ingin membuat cake truffles ini.

Aşure tarifi / Ashure / Noah's Pudding / Turkish mix fruits, grains and nut dessert for special occasion Aşure day

Aşure Gününüz Mübarek Olsun Dualarınız kabul Olsun

Merhaba From Türkiye 👋

First of all, I'd like to thank you for visiting my blog. I hope you can come back, again and again, to check up on any beyond Indonesian or Turkish food or something sweets that you might love. Your comments and emails brighten my days and make this simple blog thing worthwhile 😍💛

Aşure tarifi / Ashure / Noah's Pudding / Turkish mix fruits, grains and nut dessert.| Çitra's Home Diary. #aşure #asurerecipe #turkishdessert #porridge #middleeasterncuisine

Aşure Günü or in Arabic ʻĀshūrā’ (عاشوراء) day is the 10th day of Muharram month (first month in Islamic calendar). In Islamic believed many important occurrences happened in this month. This month also important for Muslims and we also do Fasting a couple days in this month.
In Turkey, people make this aşure in Aşure day (Aşure Günü). Aşure or ashure is Turkish dessert congee made from mix dried fruits, grains, and nuts. Besides serve among the family, this dessert is generally shared among neighbors, relatives, and friends. Also calls Noah's pudding

And this year is my first time making this aşure... for few years before mostly I got this sweet congee from my neighbors. From some aşure I got from them I saw the ingredients is very much vary from each person, neither the grains they mix in or the dried fruits or nuts and even topping when they serve.

But when you go to the traditional market to buy "aşure packet/set" generally it's consists of whole wheat grain, dried apricot, dried figs, golden sultana/ raisins, hazelnuts, almond and peanuts with clove and cinnamon as spices.

You can really vary add or cook this aşure with ingredients you have but still, it should mix from grain (whole wheat), dried fruits (fig, apricot, raisins) and nuts (white bean and chickpea)... the rest are really according to your taste. This aşure or Noah's pudding should have a cinnamon aroma. Some people add few cloves but others didn't.

Orange Macarons with orange curd & Cream Cheese Filling

Assalamu'alaikum ....
Merhaba from Turkiye my friends...

I thought orange season already over this April until last Wednesday I met them in my neighborhood bazar, of course the price slightly higher than usual. But who cares.. I love Orange..hehehhee.. So I bought only 2 kg for 6 turkish lira.

My Kid loves yogurt with fruit flavor so I already have an idea for it. Summer already knock the door and I'm thinking to make orange frozen yogurt later for my family dessert. It's okay, I will freeze them for it. Yes.... I love orange. We like to drink orange juice-fresh one (^,^). And since lately I just start my "macarons adventure" ... I'm thinking, why don't I make orange macarons also? It will be very refreshing and I'm sure my family will love it too... (^,^)

For the filling for this orange macarons I choose cream cheese filling with orange curd in the middle. But really you can go ahead with another filling as you like.

This time I didn't have any left over egg white, so I use fresh (not aged) egg white. I know..some people said macarons should make from aged (stay over night) egg white. But for me I don't have any problem using new egg white-as long as your egg white is in room temperature.

Tips: If you-in case- forget to take out your egg from fridge. Do like I usually did. Put your egg white over shimmering water for few minute while whisking it. Always check with your finger tip if your egg white already reach room temperature, remove from heat and continue whisking as procedure.

Green Tea Macarons with Green Tea Chocolate filling recipe

It's like a curse for me.... or you can call it addicted.... I'm talking about baking (and eat) macarons (^,^)

Yes, once I successfully baked nice macarons these previously weeks... my mind keep thinking to bake them again and again with many idea on flavors and variation. But I'm still afraid to try other recipe .... maybe next time. You know..after long journey with many recipe's trial and error until I finally decided this recipe which suit for me... Even Actually I want to try Italian meringue method for making my next macarons. But major reason is I still don't purchase candy thermometer yet.... Maybe next time , Inshaallah (^,^)

Do you like green tea? Green tea is made from the leaves from Camellia sinensis that have undergone minimal oxidation during processing. Green tea originated in China, but it has become associated with many cultures throughout Asia. Green tea has recently become relatively widespread in the West where black tea has been the traditionally consumed tea.

Green tea has become the raw material for extracts used in various beverages, dietary supplements, and cosmetic items. Many varieties of green tea have been created in the countries where it is grown. These varieties can differ substantially due to variable growing conditions, horticulture, production processing, and harvesting time.

Many claims have been made for the beneficial health effects of green tea consumption, but they have generally not been borne out by scientific investigation; excessive consumption is associated with some harmful health effects.

My today post is Matcha/ Green tea macarons with matcha Chocolate filling. The aroma during I bake this macarons it's just like soul therapy for me (^,^) . It has mild refreshing scent inside my house and since it's winter now, I didn't open any window, the scent stay long about few hours more... hhmmmm... I think you should try it too (^,^)
