Like other Turkish families, breakfast and bread are something in my house that inseparable 😊. We enjoy bread breakfast until dinner.
We always eat bread at our breakfast time. Yes, I have also one or two jars of cereal, but those only for "very" emergency use 😄 . Even my kid is not a fan of breakfast with cereal.

Besides bread, pastry, bagels, or soft bread (we call it poğaça) are also served at breakfast time. And if you visit Turkiye and you go to a local restaurant (or hotel restaurant) for breakfast, you will find traditional Turkish breakfast. Which you can find anything... I mean everything! They will serve start from bread to pastries (any kind of pastries), menemen, fried egg in Turkish " sucuk" (Turkish spicy sausage), many kinds of jams, and more. And of course, breakfast in Turkiye is not complete without a hot Turkish tea 😊

Tas Kebab is a Turkish style meat stew. The meat used can vary like beef, lamb, or veal. One of traditional home meal that serves at local restaurants here.
It is one of the meat dishes sitting in the corner of the Ottoman kitchen. It got its name from the way it is cooked. Traditionally it cooks in a copper pan.

This dish can be served with Turkish bread or with Turkish pilav (rice).

In addition, traditionally, while tas kebab was served, yogurt with garlic was also served.

Çökertme kebabı (pronounced 'Ch'kertme kebab') is a type of kebab from Anatolia. It's a lamb or veal or beef steak served with fried potatoes, garlic yogurt and tomato sauce. Grilled tomato and banana chili pepper also served as a side.

This dish is famous from Bodrum and Muğla province area of South West Turkey.
The dish's name derived from a village's name in the Milas district of Muğla province, Çökertme köyu.

This dish is a restaurant-style that now people choose to make it at home.

Turkish Breakfast bread with potato filling / Patates Poğaça



Pogačice (diminutive of pogača) is a type of pastry. Pogača, Poğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten in Bosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries), Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is called pogatschen in Austria. 









Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or feta cheese in Turkey and Bulgaria) is considered a particularly delicious specialty.
Mostly eaten for breakfast but also as appetizer during noon together with Turkish bulgur salad (kısır), or potato salad and hot tea.

Knowing about Turkish foods is like reading history book, so old with many surprising delicious fact. İt might because mostly Turkish cuisine is the heritage of Ottoman cuisine from centuries ago. 

It is also has mixture and refinement of Central Asian, Middle Eastern and Balkan cuisines. Therefore it is impossible to fit Turkish cuisine into a short list.

İncluding my post today is one of daily meal which mostly Turkish mothers serve for the family. Köfteli patates is home style meal that served generation to generation. Every kids fan of their mom's version of this food 😍


İt's a potato cook in tomato sauce, adding small meatball to meet the family taste. Some version adding ground beef instead of meatballs. Sprinkle with dried mint leaves this meal is a must to try when you visit Turkiye.

Cauliflower potato soup

serve 5-6 portions

İngredients:
  • 350 gr cauliflower/about half head of medium one, roughly chopped
  • 200 gr potato, peeled and small diced
  •  cup red lentil
  • 1 medium yellow onion, finely chopped
  • pinch of drıed oregano (you can use fresh one)
  • 2-3 tbsp olive oil
  • 1100 ml (±200 ml) broth, depending on how thick you wanna go (chicken or beef or vegetable)
  • 1 tsp salt or to taste
 for serving:
  • olive oil or melted butter
  • oregano
  • lemon

İzmir Köfte / Turkish Izmir Kofte (meatballs)

Köfte is a meatball made of ground meat, lamb, or beef. However, it can be made without any meat, like patates köftesi ( from potato) or mercimek köftesi (lentil).

The word köfte is sometimes preceded by the name of a town, which refers to the technique for cooking it or the ingredients or spices specifically used in that region, for example; İnegöl köftesi, İzmir köfte , Akçaabat köfte, pideli köfte (Bursa), Filibe köfte, Tire köfte, Islama köfte (mainly in Sakarya province) etc. 

It's main ingredients are minced meat, parsley, bread-egg (not necessarily, usually homemade köfte contains egg yolk and some crumbled bread) and a range of spices: cumin, oregano, mint powder, red or black pepper powder with onion or garlic. 

Kadınbudu köfte is another traditional specialty; minced meat is mixed with cooked rice and fried. 
Içli köfte can be described as a shell of "bulgur" filled with onion, minced meat and nuts. 
Çiğ köfte is a meze from south-eastern Turkey meaning raw meatballs, prepared with "bulgur" and raw minced meat. 
Terbiyeli Sulu Köfte is another meatball speciality cooked with flour, tomato paste and water in which lemon and egg sauce is added.

And today I made İzmir köfte or famed köfte from Izmir. İzmir is a metropolitan city in the western extremity of Anatolia and the third most populous city in Turkey, after Istanbul and Ankara. It is one of the most westernized cities in Turkey.

Red Lentil soup with carrot and potato

Autumn peak here.... even some area in southeast Turkey already snowy... West area like mine just counting the day because after "lodos"/ southwest hard windy few days ago temperature drops so fast..  
And comfort food always gets along for these days.... It warm you up and feel light for your stomach. Just like this lentil soup. I enrich lentil with carrot and potato to twist the flavor of this soup.

Patetes Gözleme (Turkish flat bread filled with potato)

Gözleme is a savoury traditional Turkish flatbread, made of hand-rolled dough that is lightly brushed with butter and eggs, filled with various toppings, sealed, and cooked over a griddle.

The name derives from the Turkish word göz meaning "compartment", in reference to the pocket of dough in which the various toppings are sealed and cooked. Traditionally, this is done over a saç griddle.

Fish and Chips

Fish and chip... the meal that commonly eaten across British. One source said it's the most favorite take away food nationally. It's so popular among the British even beat Mac D ( 8 fish and chips outlets every 1 Mac D's outlet)

The potato is thought to have been brought to England from the New World in the 17th century by Sir Walter Raleigh although it is believed that the French invented the fried potato chip.

Both Lancashire and London stake a claim to being the first to invent this famous meal - chips were a cheap, staple food of the industrial north whilst fried fish was introduced in London’s East End. In 1839 Charles Dickens referred to a “fried fish warehouse” in his novel, 'Oliver Twist'.

The populace soon decided that putting fried fish and chips together was a very tasty combination and so was born our national dish of fish and chips!

A combination of Britain’s new railways and trawler fishing meant that fish could be reliably supplied inland, which coincided with chip shops spreading rapidly. It provided an exciting meal for the family that otherwise had to make do with the bleak fare of the Industrial Revolution.

Starting with just one chip shop in 1860, by 1910 there were roughly 25,000, and by 1927 there were 35,000, which shows just how popular the meal had become.


Fish and chips also had a role to play in both world wars. Due to their popularity, the government kept them off the ration list to increase morale and ensure basic nutrition for the munitions workers. Queues were often hours long once word got around that the chip shop had fresh fish! Winston Churchill even referred to them as the “good companions”.

So, there you have it; fish and chips, a national institution that’s considered by many outside it to be quintessentially British, owes its introduction to 15th century refugees, has provided nutrition and a morale boost during the Industrial Revolution and two world wars, and tastes great to boot!

Smoked Paprika Roasted Chicken and potato

Hello world..! Merhaba Turkey.. Welcome April..!
Blackout in Turkey yesterday, Tuesday, 31 March 2015, because electric cut out for almost one day in almost all Turkey provinces (79 from 81 provinces). I'm living in Bursa, the electric cut about 8 AM until 5 PM... then again at 7.30 PM to around 8.30 PM.
My husband called from his office that whole Turkey has blackout so he couldn't work and would go home early.

At first, Some rumors said about cyberattack at TEİAŞ (Turkish Electricity Production Company). But according to news on local televisions, Prime Minister Ahmet Davutoğlu said all possible causes of the outage were being investigated and sabotage was not being ruled out, but said trouble with transmission lines was the most likely reason for the problem

Imagine a country without an electric... chaos everywhere... traffic light off, all metro , tramway and high speed train service stop and cancel. Police officers were deployed to manage traffic at major junctions where traffic signals were disrupted. Firefighters were also called to rescue people stuck in elevators. 

Those chaos were outside of my house... meanwhile me, husband and kid stayed did nothing but played ball inside house with our kid. No baking activity for me (^,^).. We just made simple dinner until electric brought a big smile again in our face....
I never imagine in older time before electricity being invested by Thomas Alva Edison.... What people did to their live? (^,^)
Well...that was yesterday chaos in Turkey..
Today everything back to normal again... Alhamdulillah... and I can notice that my kid didn't affected by unavailable of TV or youtube kids video from our computer at home... So I happily I can say she doesn't addicted by TV or video or any gadget.

And for today's dinner I made this smoke paprika roasted chicken, I complete it also with roasted potato. You can use sweet potato too if you like.

Kentang Isi (Stuffed Potato)

Today I'd like to share one of my family daily menu. This meal is very easy and nutritious..... Like me, who has kids at home must be very much dizzy to arrange nutritious menu for them, right?
This is also very practical for our children's lunch box or just for family picnic. You can vary the stuffing ingredients with your family's favorite. Start of vegetables until meat or even you have canned tuna.

Ingredients:
  • 6 medium sized potatoes
  • Boneless chicken about 200 grams, boiled and cut into small pieces (or shredded)
  • 2 medium carrots, boiled and cut into small cubes
  • 2 green onion, thinly sliced
  • 1 tablespoon butter at room temperature
  • 1 tbsp milk powder
  • cheddar cheese 100 gr + 100 gr (grated), more if you like
  • garlic powder around 2 tsp
  • pepper powder 1/2 tsp or to taste
  • salt to taste
  • small pinch of sugar
  • chopped celery for sprinkling

Do you know that many Indonesian cuisines influenced by other country? We have 'peranakan food' which influence by china. Some food also influences by Indian food and Arabic. And since Dutch colonial were in Indonesia long time ago, many Dutch influence in our cuisine heritage also. 

Like previously I mentioned on my last post, I shared some "dutch influence" foods in my previous post, like Oliebollen, Kaastengels, Kroketten, Bitterballen, and much more


Perkedel came from Dutch language, frikadel. Frikadel originally from Europe which is made from minced meat and fried. But in Indonesia we adapted that food according to our taste and our common ingredients. This perkedel made from mashed potatoes mix with minced meat then we fry it. Commonly we eat this as side dish or complement of Nasi tumpeng or nasi kuning (yellow rice)

And since I didn't make this perkedel so long..I kinda miss and crave about it... And also I wanna introduce more food variety as many as I can to my little girl. And if you want to make this vegetarian version you just can skip minced meat and just go ahead with use only potatoes.

Kroket Tuna / Tuna Potato croquette

Happy Sunday Everybody. 

Weekend for me is busy time.... well..as busy as week days actually (^,^).. But in week end I always spend more times to makes additional snacks for the family-- especially for my little one. For some kind of snack which can be frozen (make a head) I usually stock up a bit much so any time my Sahnaz wants a snack it can be ready in a minute ..just heat it in oven or just fry it.

This time I make tuna croquettes. I  mixed my croquettes with carrots for more healthy reason . But If  you want to make it and skip it .. go ahead .. but I prefer snack for my kid ..anything..with vegetables. 
You can make it in advance and store in freezer. Use within 1 week. 


Make about 20 pcs 

Ingredients:
- about 500 gr potato (peel and wash)
- 2 medium carrot
- 2 spring onion, chopped coarsely 
- Canned tuna 160 ~ 180 g (strain the oil )
- ± 40 g  butter or margarine (I use butter) 
- 2 tablespoons flour 
- 1/2 cup (120 ml)  milk
- 1 small onion. finely chopped 
- 3 cloves of garlic. finely chopped 
- Pepper powder to taste 
- Sugar and salt to taste

Kumpir in Portion

This is another version from my previous Kumpir recipe. Basically the recipe same, only I put them in small portion in occasional having some friends or family visit. And believe me, it's repeatable menu for your family too....


Prepare 4 large potatoes, wash clean. Prick in some parts with a knife, wrap with aluminum foil and bake in oven until cooked and soft. The time required can vary according to the size of  potatoes (it took me about 60 minutes)

This is one of my favorite Indonesian Snack. I remember I always have it during my afternoon tea at office, sometime with other traditional Indonesian snack like "lemper ayam" (spicy Chicken shredded between sticky glutinous rice)  and "bitterballen", and other traditional Indonesian snack.

Ingredients and How to make:
  • 4 large potatoes or 5 medium sizes. Steamed and peeled, mash while it's hot
  • 2 tablespoons milk powder 
  • 2 medium-size carrots. Cut into very small cubes. 
  • 1 piece (about 200 gr) of chicken breast, boiled and cut into small cubes or shredded 
  • ± 10 stalks celery, chose leaves only. finely chopped. 
  • ¾ cup whole milk 
  • 4 tablespoons flour. 
  • 3 cloves garlic, crushed and finely chopped. 
  • 4 red shallots, finely sliced (or 1 medium onion)
  • Salt, ground nutmeg, pepper powder and sugar to taste. 
  • 1 tablespoon butter for sauteing.

Susamli Patetes Poğaça / Turkish pastry filled with potato


Pogačice (diminutive of pogača) is a type of puff pastry. PogačaPoğaça or Pogacha (Cyrillic: Πогача) is a type of pastry eaten inBosnia and Herzegovina, Bulgaria, Croatia, Slovenia, Republic of Macedonia, Serbia (in Serbia, traditional in Belgrade bakeries),Montenegro, Hungary, Greece (where its called Bogatsa Μπογατσα) and Turkey (where it is called poğaça) with variations. It is calledpogatschen in Austria. Pogača is sometimes served hot as an appetizer instead of bread. Hot pogača filled with sour cream (or fetacheese in Turkey and Bulgaria) is considered a particularly delicious specialty.

You can vary this Poğaça stuffing with your other favorite filling, such as cheese, sausage or even minced meat or chicken (sometimes I fill it with chicken mushrooms too). It's great menu for your kid's lunch box. Or just carry out for brunch or tea break in husband's office.


Ingredients (make about 15 pieces)
Ingredients A:
 3 tablespoons flour
 1 cup warm milk
 1 package (10 grams) dry yeast
 3 tablespoons granulated sugar
Ingredients B:
 3 cups flour (few spoon more if necessary)
 1 teaspoon salt
 1 egg, beaten.
 ½ cup olive oil
 ½ ~ ¾ cup warm water
Ingredients C:
 2 medium-size potatoes. Steamed / boiled and mashed.
 ± 150 g cheddar cheese. grated/ shaved.
 ½ bunch dill or parsley, finely chopped (optional)
 Salt to taste.
 Combine all ingredients C and mix well as filling/ stuffing. Set aside.
Ingredients D (for topping):
 2 tablespoons molasses, mixed with 1 tablespoon water.
 Sesame.

Method:
1) Mix all ingredients A and mix well as a starter. Cover with towel and let stand in warm place until fluffy (I need ± 20 minutes)
2) Mix all ingredients B (except warm water). Mix in the starter (ingredients A) and knead until smooth. If necessary add warm water little by little while knead the dough until smooth and not sticky at your hand (or you can use your electric kneading mixer). Cover with plastic wrap or towel and rest the dough in warm place until doubles (I need ± 45 minutes)
3) Hit the dough to remove air and divide them into 13 ~ 15 small balls. Fill with stuffing mixture and shape round oval form (or according to your taste). Cover with towel and let them rest again about 30 minutes.
4) preheat oven to 180 º C. Place dough on baking sheet cover with baking paper or coated with margarine. Grease top of each dough with molasses mixture and sprinkle with sesame. Bake 15 ~ 20 minutes or until golden color. 
::Note
 Rocognize your own oven's condition is recommended. Different size and condition gives 
different heat result.

Simple Bake Stuffed Potato Cheese

Ingredients:
- 2 large-size potatoes, skin on. Boiled or baked (I steamed it)to cook.
- 100 gr minced meat.
- 1/2  large onion. Chop finely.
- 2 garlic cloves, finely chopped.
- Salt, sugar, and pepper to taste.
- 1 tablespoon butter for sauteing.
- Cheddar cheese. Grated
