Bak kwa, also known as rougan (Chinese: 肉干) or roupu (Chinese: 肉脯), is a Chinese salted dried meat product akin to jerky.

Even originating from China, Bak kwa is also popular in Singapore, Malaysia, and neighboring countries, especially during the Chinese New Year. 
This delicacy, introduced by Chinese immigrants, has adapted to local flavors. A distinctive feature is the preparation method, where the meat is charcoal-smoked rather than air-dried, giving it a unique smoky taste. The versions of bakkwa found in Singapore and Malaysia tend to be sweeter than those from mainland China, with a range of variations like chili bak kwa to suit local palates.

What is tandoori?

Tandoori is a fire burning in a pit built centuries ago to heat homes.
A unique soil mixture is prepared and shaped into a well. When wood was thrown into these pits and opened on the floors of houses in ancient times; large rooms were heated.

Over time, tandoori ovens, which were also used for cooking, are now preferred especially for cooking meat and bread.
In many regions of the country, tandoori bread was cooked enough to be consumed for a long time

the tandoori culture developed and it became a barbecue used for cooking lamb meat in the consistency of Turkish delight.
Tandoori has also become a name given to a dish commonly prepared by cooking lamb meat on a special skewer over a fire.
Tandoori has been an ideal cooking method for lamb. Restaurants have prepared natural tandoori in their places, especially for those who love lamb.

Lamb tandoori or tandoori kebab (Turkish language: Kuzu tandır or tandır kebabı), is a meat dish in Turkish cuisine. It belongs to the Akşehir region. It is prepared with lamb, onion, tomato, and peppers. Lamb pieces (sometimes a whole lamb) are baked in an oven called a tandır, which requires a special cooking method for hours. Served with bread and raw onions.

My today's post is pretty unique and something you will love
Klopo is the Javanese term for coconut in English. In the Indonesian language, klopo means kelapa. So sate klopo or sate kelapa is a satay wrapped in shredded coconut in the process of making it. When the satay is grilled, the grated coconut gives a distinctive and unique flavor and aroma to the satay. 

Traditionally sate klopo is dished up on banana leaves and eaten with lontong (rice cake). served with sate peanut sauce and Indonesian sweet soy sauce " kecap manis", sliced shallot, chili, and of course "serundeng" or spiced shredded coconut.

"Sate klopo" or sate kelapa, a famous dish that originated from East Java especially Surabaya and Madura Island.
Geographically, Surabaya and Madura island is very near and connected by a bridge. No wonder the satay seller mostly Maduranese people and they have the best sate klopo to enjoy every morning or early lunch.

Urfa kebab is a type from many kebabs in Turkish cuisine, which is unique to Şanlıurfa and the surrounding provinces. The words "Kebab" and "Urfa" came together and gave birth to the name Urfa kebab. Urfa kebab (some call "haşhaş" kebab) is the name given to this plain (but delicious), less spicy kebab.

The most distinctive feature that makes Urfa kebabs different from other kebabs is the meat used. Definitely not made with beef.
It is made only with lamb meat, lamb tail fat, chili pepper flake (pul biber), and salt. No other spices are added.

It said the very special Urfa kebab is made from at least one-year-old male lamb raised in the natural environment in the highlands. The meat then separated from the fat, nerves, veins, and membranes. Then the meat is rested in pieces for a day. Rested meat is minced with a two-handed sharp knife called kıymalı bıçak or mincing knife. Using a mincing knife makes your minced meat less watery.

Known as sate in Indonesian (and pronounced similar to the English), Indonesia is the home of satay, and satay is a widely renowned dish in almost all regions of Indonesia and is considered the national dish and one of Indonesia's best dishes. 
Satays, in particular, are a staple in Indonesian cuisine, served everywhere from street carts to fine dining establishments, as well as in homes and at public gatherings. As a result, many variations have been developed throughout the Indonesian Archipelago.

Indonesia has the richest variations of satay in the world. The satay variants in Indonesia usually named after the region it originated, the meats, parts, or ingredients its uses, also might be named after the process or method of cooking.

Just like what I am going to share today, it calls " Sate Padang". Padang is the capital city of West Sumatra province, so obviously where the name of this dish came from.

Iskender kebab or iskender doner is one of the famous kebab dishes of Bursa region where I'm living now. It takes its name from its inventor, İskender Efendi, who lived in Bursa in the late 19th century Ottoman Empire.
The 1st restaurant was in Kayhan Bazaar, Bursa in 1867. And until today become very famous and huge with many chains restaurant inside or outside Bursa.

The dish consists of döner kebab prepared from thinly and carefully cut grilled lamb topped with hot tomato sauce over pieces of pita bread and generously slathered with melted special sheep's milk butter and yogurt. Tomato sauce and melted butter are generally poured over the dish live at the table, for the customer's amusement.

"Kebapçı İskender" is trademarked by the İskenderoğlu family, who still run the restaurant in BursaThis dish is available in many restaurants throughout the country mostly under the name "İskender kebap", "Bursa kebabı", or at times with an alternative one made up by the serving restaurant such as "Uludağ kebabı".

The diversity in Indonesia has led to a rich culinary heritage. From the famous Satay to Indonesian salad gado-gado, every Indonesian food is really worth to try. Just like this "Ayam Taliwang"

Ayam Taliwang is made with chicken (preferably free-range), which is grilled previously. Once it has been grilled halfway, then it marinates and tenderizes with a spice paste. Then it grilled until cook trough.

Although Ayam Taliwang is said to be a dish favored by Sasak nobility, Abdul Hamid claims to have invented the dish in 1970. It is named after Karang Taliwang in Mataram, the capital of Lombok.

Ayam Taliwang is a grilled chicken with spicy savory with distinguished taste from one key ingredient; Kencur root or sand ginger.
Known as Kaempferia galanga, kencur is a plant in the ginger family that is found primarily in open areas in Indonesia, southern China, Taiwan, and Cambodia. At a glance, the rhizome (root) of Kencur resembles ginger appearance but has a different, distinctive flavor. It has a strong taste with a pungent after taste.
This herb root commonly used in many Indonesian foods, especially Balinese and Javanese foods.
You can find in Asian market or Indonesian market at your local.

My post today is about one of the street food in Istanbul - Balık ekmek, literally means fish bread.
This fish sandwich is one of the traditional street flavors of Turkish cuisine, is identified with Eminönü in particular. When you walk along the Galata bridge and Eminönü port area, you will find many fisherman boats decorated in such colorful and beautiful ornaments with Turkish red flags selling this popular Istanbul street food.

People queue up in a long line at a certain boat that is believed "the best" among others. Last summer, I was among that crowded. But since I was with my girl, I was just looking for a less queuing seller not to make my kid suffer for boring 😊

This fish sandwich prepared with typical Turkish sandwich bread, pan-grilled fish, mostly mackerel (turk; uskumru) or bonito (turk; palamut),with various vegetables and pickles. I saw some served with onion/ red onion sliced some didn't. No fancy plate, fork, and knife nor whatsoever, it's just wrapped with a piece of paper and you are good to go. We can sit down to enjoy our fish sandwich at some stools and bench prepared by the seller near their boat. Don't forget to order şalgam suyu or a turnip juice drink to enjoy with this dish.

This street food is prepared and sold on (fisherman) boats, sold on the coastal shores which are also of great interest to tourists.

First, Ramadhan Kareem to all my Muslim friends around the world. May the spirit of Ramadhan stay in our hearts and illuminate our souls from within.
We are happy can meet Ramadan again this year, but a little sad since this Ramadan we are in an unfortunate situation that makes us stay at home to isolate ourselves from the COVID-19 pandemic. 
Generally, we would have wonderful iftar together with families and friends. We invite each other to have an iftar dinner where beautiful and happy moments are shared.
Iftar, also known as fatoor, is the evening meal with which Muslims end their daily Ramadan fast at sunset. They break their fast at the time of the call to prayer for the evening prayer.
I hope this condition will end up soon and we can have a peaceful life back.

Today I will share our favorite, it calls Beğendili Köfte. Köfte is a traditional Turkish meatball (kofta) made from mincemeat mix with "baharat" or spices. The meat is used commonly beef or lamb or mixes both of them. Köfte is very popular here and everybody's favorite.

Beğendili from the word beğendil, it's an ember-roasted aubergine, finely minced then mixed in a creamy cheesy sauce similar to the bechamel sauce. This dish it's not only widely popular as a restaurant meal but also homemade versions are rich and served at home.

Kabar baik semua ya Inshaallah. Sudah seminggu ini hawanya menggigit sekali, tapi sejak awal musim dingin salju belum juga turun. Tahun ini di Turki tidak seperti tahun-tahun lalu, salju tidak turun terutama di wilayah Turki Barat. Saya masuk di wilayah Marmara.
Kalau salju tidak turun seperti semestinya, hawa cenderung dingin "kasar" menggigit sampai tulang, udara juga terasa tak nyaman. Ditambah bau kayu bakar atau batu bara dari rumah-rumah yang "bandel" tetap menggunakan dua bahan itu untuk penghangat- menambah polutan di udara makşn parah dan bikin nafas sesak.

Tapi tetap saja di tempat yang lebih tinggi seperti gunung Uludağ, musim dingin terasa kental dengan banyaknya salju dan turis yang datang 😊
Wilayah Turki sebelah timur, timur laut atau yang berbatas dengan bekas wilayah uni soviet, salju tebal dan beku disana.
Mudah-mudahan salju turun dalam waktu dekat ini, supaya udara lebih bersih dan hawa agak melembut. Amin.

Jadi critanya postingan kali ini menghibur diri dengan makanan tropis karena sangat merindukan suasana tropis yang hangat plus " sumuk" nya 😁

Originated in Java, Indonesia, Satay gradually spread its appeal over the entire East Asian and Southeast Asian peninsula, before becoming a hot meal of choice among the whole world of gastronomists. While applauding the refined and luscious taste of this dish, how many of you have really wondered about the brilliant blend between the satay and the accompanying sauce? Curiously, this sauce is called by the gourmets simply Satay Sauce, without knowing, that this is, in fact, a variant of peanut sauce.

I think now everyone is familiar with sate/ satay. One of Indonesia's most popular traditional foods and become everyone's favorite. And it's one of Indonesian national dishes among others eg; Rendang, nasi goreng, gado gado and more.


I am personally the number one fan of satay . In Indonesia itself there are many types of satay from various regions and of various ingredients.
For example, from Padang city (Sumatra), I like satay Padang. It made of beef/ ox tongue mix with beef meet, flush with thick yellow, curry-like sauce. Sumatranese typical food.
There is also "sate kelapa" (beef / chiken satay coated with grated coconut-My best favorite) -its mostly from Madura Island. Served with peanut sauce or simple dark sweet soy sauce.

And today I will show and share my recipe on how to make authentic famous Indonesian satay with satay peanut sauce, all from scratch. No worry... it's easy than you think 😊
First thing first. We must make satay peanut sauce in ahead. You can keep this sauce in an airtight clean jar, store in the refrigerator up to 5 days. in the freezer for up to 2 weeks, defrost before use. Warm up in a microwave or over low heat stove for 2 minutes or so.
