Selam Everybody.... Merhaba from Turkey...
We love pie especially fruit pie as dessert and tea time. And this mini apple pie is the best apple pie for our tea time. Serve individually with vanilla ice cream or simple whipped cream then flush with the syrup from the filling...hmmm...just heavenly yummy.
For pie shells
- 125 gr cold butter, cut into small chunks
- 180 gr all purpose flour
- 1 tbsp sugar
- pinch of salt
- 1 tsp almond essence
- 75~85 very cold water
- Combine flour, sugar and salt in a mixing bowl. Add in butter pieces and start to mix with pastry cutter until butter become smaller pieces and crumble among that flour. Slowly add cold water and lightly mix it with your hand. You may not use all your water, so add it carefully.
- Transfer that crumbled dough over counter and start to knead lightly to pull them together. In this stage you may add small amount of cold water, if you do, add it a spoon at a time. It's okay the dough slightly crumble, as long as you can form them into big ball you don't have to add more water.
- Flatten the dough into a disk then wrap with plastic film. Fridge it at least 2 hours before use.
For filling:
- about 600 gr apple, thinly slice
- 100~130 gr brown sugar
- 1 tbsp cinnamon
- ⅛ tsp ground nutmeg
- 1 tbsp cornstarch
- about 3 tbsp water
- 25 gr butter (about 2 tbsp)
- Melt butter in a pan / skillet. Add in apple sliced, sugar, cinnamon, ground nutmeg and cornstarch. Cook over medium heat just until apple slightly soft (but not mushy) and sugar dissolved about 7 minutes.
- Remove from heat and let it sit to room temperature. Strain apple from the syrup.
- Lightly heat the syrup until thicken a bit. Use it for serving later.

- 1 egg yolk beat lightly with 1 tsp oil
Making the pie:
Take the crust dough and roll it over lightly floured counter, roll it about 2~4 mm thick, cut into circle (larger than your tart pie tin). Then line your fluted pie tart tin with the dough, roll some dough also for the covers.
Pre heat oven at 180ºC. Fill with pie filling and cover, patching the edges then make small cross cut on top of it. Arrange them on baking tray. Brush them with egg yolk and sprinkle some brown sugar.
Bake them 25~ 30 minutes and until they golden brown and bubbling can be seen at cutting part. Remove from oven and let it cool to room temperature.
Serve with cream or ice cream and flush with the apple syrup.
BAHASA INDONESIA
Bahan kulit pie:
- 125 gr mentega dingin, potong kotak kecil
- 180 gr tepung terigu
- 1 sdm gula
- sejumput garam
- 1 sdt esens almond (atau esens vanilli)
- 75~85 air es
Cara membuat kulit pie:
- Campur tepung, gula dan garam dalam mangkok besar. Masukkan potongan mentega, gunakan garpu pastry untuk mengaduk. Bisa gunakan garpu makan, aduk hingga berbutir. Tambahkan air es sedikit demi sedikit sambil diuleni ringan (tidak seperti mengulen roti ya), dikepal-kepal saja hingga adonan bergumpal. Hentikan penambahan air es jika adonan sdh bergumpal.
- Pindah adonan ke meja dan mulai uleni ringan saja, jika diperlukan penambahan air es, lakukan sesendok demi sesendok. Tidak masalah adonan agak bergumpal yang penting adonan bisa dikepal dan dibentuk.
- Pipihkan adonan dan bentuk bulat pipih, bungkus rapat dengan platik film dan simpan dalam lemari es sebelum digunakan paling tidak 2 jam.
Bahan isi:
- sekitar 600 gr apel hijau, kupas dan potong tipis
- 100~130 gr brown sugar
- 1 tbsp bubuk kayu manis
- ⅛ tsp pala bubuk (pala parut halus)
- 1 tbsp pati jagung (misal maizena)
- kurleb 3 sdm air
- 25 gr mentega (sekitar 2 sdm)
- Lelehkan mentega dalam panci, masukkan potongan apel, gula, kayu manis, pala bubuk dan pati jagung. Masak dengan api sedang sekitar 7 menit hingga gula larut dan apel layu (jagan sampai hancur)
- Angkat dan biarkan dingin, lalu saring/ pisahkan apel dari sirupnya.
- Panaskan sirup sebentar diatas api sedang hingga agak mengental, sisihkan.

- 1 kuning telur kocok dengan 1 sdt minyak
