It has been a while since my last Chocolate Butter Cake I didn't share another butter cake recipe in my blog. Even though it doesn't mean I didn't bake one at home. In my house butter cake is one of our favorites coffee cakes to enjoy during the weekend or weekdays. It's an almost regular cake I bake at home besides chiffon cake.
And since Turkey got lockdown a lot due to the global pandemic, the whole family stayed at home a lot and for us, that's the best part of this pandemic ๐ Family has more time to see each other.
And it's my favorite time to bake a cake so it will finish in a short time ๐

If you are a butter cake lover you should try this recipe, I guarantee you are gonna love it and I don't mind you make my recipe a repeatable cake recipe for your family's time ๐
This butter cake also a favorite for me and my siblings back when we were small. I and my siblings grew up with this old and classic cake.
The cake is so moist and rich. If you are looking for perfect, delectable, and addict cake for coffee or tea time, you come to the right page. So, get ready to entertain your family and friends.... and ฤฐ!m sure you and your family gonna love it as well.
This recipe has a separated egg yolks method which makes the cake rise well without losing its moisture. If you check my previous recipe it has slightly different in some composition but both recipes are giving you great taste.
The marble is optional. you can use only chocolate marble or only red velvet marble or you can try both like what I am sharing today. For red velvet marble, use natural cocoa powder-not Dutch-processed one- which has a light and pale brown color.
For chocolate marble, I added black forest paste to enrich the chocolate flavor. But if you don't have it just skip it and add another tablespoon of dark cocoa powder.

If you have leftover (which I doubt it ๐), you can keep the cake in a clean container inside the refrigerator for up to 5 days. Slice the cake as you need and quickly warm it up in the microwave for a few seconds before enjoying it. Or just let it to room temperature.
Red Velvet & Chocolate Marble Butter Cake
Ingredients A:
๐ฐ 10 egg yolks
๐ฐ 375 gr butter, soft at room temperature

For one 22 cm bundt pan
Ingredients A:
๐ฐ 10 egg yolks
๐ฐ 375 gr butter, soft at room temperature
๐ฐ 2 tbsp sweet condensed milk
๐ฐ ½ tsp vanilla extract
๐ฐ 125 gr powdered sugar
๐ฐ 250 gr AP flour (or low protein flour)
๐ฐ 50 gr milk powder
๐ฐ ½ tsp vanilla extract
๐ฐ 125 gr powdered sugar

Ingredients B (meringue) :
๐ฐ 6 egg whites
๐ฐ 6 egg whites
๐ฐ 125 gr powdered sugar or caster sugar
๐ฐ 1 tsp fresh lemon juice
๐ฐpinch of salt
For marble pattern:
Red velvet
๐ฐ 2 tbsp natural cocoa powder (has light in color)
๐ฐ 2 tbsp boiling water
๐ฐ 1 tbsp plain yogurt
๐ฐ ½ tsp baking soda
๐ฐ Red food coloring (about 2-3 tsp or until your desired color)
Chocolate marble
๐ฐ 2 tbsp dutch process cocoa powder
๐ฐ 2 tbsp boiling water
๐ฐ Chocolate/ black forest paste (optional)
How to make:
1. Grease your bundt pan with butter/margarine and sprinkle with a thin layer of flour, set aside. Preheat oven to 160 ℃.
2. Make meringue;
In a clean, grease-free bowl, beat the egg whites with 1 tsp lemon juice and a pinch of salt. Beat until foamy. Add icing sugar or caster sugar gradually while still beating at high speed until reach hard peak stage. Set aside.
3. Beat butter and powdered sugar at high speed until fluffy and light. Add the vanilla and sweetened condensed milk, beat until well blended.
4. Then mix in egg yolks one at a time while still beating at medium speed only. Beat until well corporated.
5. Sift in the dry ingredients; flour and powdered milk. Add gradually. Mixer at medium speed each addition. Beat just until well blended, do not overmix.
6. Gradually add the meringue in 3 batches to the egg yolk batter, fold nicely each addition.
7. Divide the dough into 2 parts. 1 part for the white dough. Another part, divide again into 2 parts; one part mix with red velvet marble pattern ingredients. The other 1 part mix with a chocolate marble pattern ingredients.
8. Pour alternately the white, red velvet, and chocolate batter then makes a marble pattern with chopsticks but don't stir the pattern too much, the colors will be mixed.
9. Bake in preheated oven at 160 ℃ for 10 minutes then lower the temperature to 150 ℃ and continue to bake for 45-55 minutes or until cooked. Make sure the skewer comes out clean when you inserted in the middle of the cake.
Note: The baking time and temperature only guidance. Adjust according to your own oven condition. Recognize and adjust as needed.
10. Let it rest over the cooling rack before unmolding.

Nggak pernah bosen dengan legit dan wanginya butter cake ini. Jika ingin butter cake yang enak, legit dan gak "eneg", pastikan menggunakan mentega kualitas yang bagus ya. Jika ingin menyampurnya dengan margarin, pastikan margarin nya juga yang bagus jadi gak berasa "berlemak" di tenggorokan.
Saya nggak ngerti lagi merk-merk yang ada di Indonesia saat ini ya, jadi moms bisa sesuaikan dengan selera moms masing-masing.
Kalau saya disini menggunakan mentega semua. Mentega yang banyak dijual disini kebanyakan homemade dan wangi baunya. Walau banyak juga kok yang pabrikan tapi harum dan aroma menteganya khas. Jadi butter cake yang saya bikin enak banget dengan aroma butter/ mentega yang khas.
Oh iya, kali ini saya ingin membuat buttercake dengan red velvet dan cokelat marble. Tapi moms bisa variasikan dengan marble rasa lain sesuai selera misalnya cokelat-mocca atau pandan dan lain-lain.

Red Velvet & Coklat Buttercake marmer

Untuk 1 loyang tulban ukuran 22 cm
Bahan A
๐ฐ 375 gr mentega, suhu ruang
Bahan A

๐ฐ 125 gr Gula yang halus
๐ฐ 2 sdm susu kental manis
๐ฐ ½ sdt Vanila extract
๐ฐ ½ sdt Vanila extract
๐ฐ 10 butir Kuning telur
๐ฐ 250 gr Tepung serba guna
๐ฐ 50 gr Susu bubuk
Cara membuat :
1. Olesi loyang tulban dengan margarin dan taburi dengan terigu tipis-tipis, sisihkan. Panaskan oven suhu 160℃.
7. Bagi adonan menjadi 2 bagian. 1 bagian untuk adonan putih. 1 bagian yang lain dibagi lagi menjadi 2 bagian; satu bagian dicampur dengan red velvet . 1 bagian yang lain diberi adonan untuk cokelat marmer.
8. Tuang adonan putih, red velvet dan cokelat secara berselang seling lalu buat pola marmer denga sumpit, tapi jangan terlalu banyak mengaduk polanya, nanti tercampur warnanya.

๐ฐ 6 butir Putih Telur
๐ฐ 6 butir Putih Telur
๐ฐ 125 gr gula icing/ gula kastor
๐ฐ 1 sdt perasan jeruk lemon
๐ฐsejumput garam
Bahan marble:
Red velvet
๐ฐ 2 sdm bubuk kakao natural (warnanya lebih pucat)
๐ฐ 2 sdm air mendidih
๐ฐ 1 sdm yogurt plain
๐ฐ ½ sdt baking soda
๐ฐ pewarna warna merah (kerleb 2-3 sdt)
Chocolate marble
๐ฐ 2 sdm bubuk kakao dutch process (warnanya pekat)
๐ฐ 2 sdm air mendidih
๐ฐ Pasta black forrest (optional)
Cara membuat :
1. Olesi loyang tulban dengan margarin dan taburi dengan terigu tipis-tipis, sisihkan. Panaskan oven suhu 160℃.
2. Membuat meringue;
Dalam mangkok yang bersih dan bebas lemak, kocok putih telur bersama perasan jeruk nipis/ lemon dan sejumput garam. Kocok hingga berbusa banyak. Masukkan gula icing atau gula kastor secara bertahap sambil tetap dikocok dengan kecepatan tinggi sampai hardpeak. Sisihkan.
3. Kocok / mixer mentega dan gula halus dengan kecepatan tinggi sampai mengembang dan ringan. Masukkan vanili dan susu kental manis, lanjutkan mengocok sampai tercampur rata.
4. Lalu masukkan kuning telur satu per satu sambil tetap dikocok kecepatan sedang saja. mixer sampai rata.
5. Masukkan bahan kering dengan cara diayak; terigu dan susu bubuk. Tambahkan secara bertahap. Mixer dengan kecepatan sedang setiap penambahan. Kocok cukup hingga tercampur rata saja, jangan overmix.
6. Masukkan meringue (putih telur) secara bertahap kedalam adonan kuning telur, aduk lipat setiap penambahan.
7. Bagi adonan menjadi 2 bagian. 1 bagian untuk adonan putih. 1 bagian yang lain dibagi lagi menjadi 2 bagian; satu bagian dicampur dengan red velvet . 1 bagian yang lain diberi adonan untuk cokelat marmer.
8. Tuang adonan putih, red velvet dan cokelat secara berselang seling lalu buat pola marmer denga sumpit, tapi jangan terlalu banyak mengaduk polanya, nanti tercampur warnanya.
9. Oven dengan suhu 160℃ selama 10 menit lalu turunkan suhu ke 150℃ dan lanjutkan mengoven 45-55 menit atau sampai matang. Tes tusuk untuk memastikan.
Note: Waktu dan suhu pengovenan tergantung kondisi oven masing-masing ya. Kenali dan sesuaikan dengan kondisi oven masing-masing.
10. Setelah matang keluarkan dari oven dan taruh diatas rak pendingin sabelum dikeluarkan dari loyang.
