Selam everybody......Merhaba from Turkey.
This is one of my favorite Indonesian Snack. I remember I always have it during my afternoon tea at office, sometime with other traditional Indonesian snack like "lemper ayam" (spicy Chicken shredded between sticky glutinous rice) and "bitterballen", and other traditional Indonesian snack.
Ingredients and How to make:
- 4 large potatoes or 5 medium sizes. Steamed and peeled, mash while it's hot
- 2 tablespoons milk powder
- 2 medium-size carrots. Cut into very small cubes.
- 1 piece (about 200 gr) of chicken breast, boiled and cut into small cubes or shredded
- ± 10 stalks celery, chose leaves only. finely chopped.
- ¾ cup whole milk
- 4 tablespoons flour.
- 3 cloves garlic, crushed and finely chopped.
- 4 red shallots, finely sliced (or 1 medium onion)
- Salt, ground nutmeg, pepper powder and sugar to taste.
- 1 tablespoon butter for sauteing.
- 1 large egg, beaten.
- Enough flour.
- Enough Bread crumb (or you can use panko flour).
- Cooking oil for deep fry.
Method:
1) Puree the potatoes while it's hot, mix with 2 tbsp milk powder, pinch of salt, pepper powder. Set aside.
2) Heat the butter, saute onion and garlic until fragrant, mix in carrots, pour a little broth (or hot water), cook carrots until soft. Add chicken, seasoning with salt, pepper, nutmeg powder and sugar, check the taste. Mix in celery and stir well.
3) In small bowl mix flour and whole milk. Add the mixture into vegetable mixture in the pan/skillet. Stir well until thick. Combine the potatoes puree, stirring until all well blended. Remove from heat and let it warm at room temperature before shaping them.
4) Take small amount of the dough as big as 'ping-pong' balls, make round and oval shapes.
5) Take one oval dough, roll in the flour, then put in the beaten eggs. Coat with bread crumb. Do same thing to all dough you made.
Note: :: Make ahead tip: You can make these croquettes in a head up to step No. 5). Store in freezer up to 2 days.
6) Heat oil for deep fry, fry croquettes just until golden red (just about 2 ~ 3 minutes). Drain from remaining oil. Serve warm with bird eye chili or mayonnaise and ketjup/ tomato sauce.

BAHASA INDONESIA
- 4 ~ 5 kentang ukuran sedang. Kukus dan haluskan selagi panas
- 2 sdm susu bubuk
- 2 wortel ukuran sedang, potong kotak kecil
- 1 bagian (kira-kira 200 gr) dada ayam rebus, potong kotak atau suwir halus
- ± 10 batang seledri, cincang halus daunnya
- ¾ gelas susu cair
- 4 sdm terigu.
- 3 siung bawang putih, cincang halus
- 4 bawang merah (atau 1 bawang bombay ukuran sedang), iris halus
- Garam, bubuk pala, merica dan gula secukupnya
- 1 sdm mentega atau margarin untuk menumis
- 1 telur ukuran besar, kocok lepas
- terigu secukupnya
- tepung panko/ roti secukupnya
- minyak goreng
Cara membuat:
1) Haluskan kentang dan campur dengan 2 sdm susu bubuk, garam dan merica bubuk, sisihkan.
2) Panaskan margarin / mentega, tumis bawang merah dan bawang putih sampai layu. Masukkan potongan wortel, tuang sedikit air/ kaldu dan masak hingga wortel empuk. Masukkan potongan ayam dan seledri, bumbuhi dengan garam, gula, pala dan merica bubuk, aduk dan cicipi rasanya.
3) Dalam mangkuk kecil, campur terigu dan susu cair. Masukkan larutan terigu-susu kedalam wajan, aduk rata hingga mengetal. Lalu masukkan kentang halus, aduk rata dan matikan kompor. Biarkan dingin sebelum dibentuk.
4) Ambil sedikit adonan dan bentuk bulat lonjong. Gulingkan dalam terigu, lalu ke dalam kocokan telur kemudian ke tepung roti/ panko. Lalukan hingga adonan habis.

5) Panaskan minyak goreng dan goreng kroket hingga kecoklatan dengan api besar.

Wow! These look so perfect! Love them! My mother used to make them when I was little but she's too old now to cook. Hmm... maybe I'll make them to surprise her. Thanks for the reminder Citra :D
