I like galette. No.. I love it! Especially fruity galette for dessert. The combination from flaky buttery crust and fresh fruits as topping is my number one list for my afternoon tea time.
And also it's perfect for our after dinner dessert cause it's fresh and light. Mostly I serve it with yummy creamy kaymak (Turkish clotted cream), but sometimes with simple vanilla ice cream. Or you can serve it with whipped cream, YUM!
Beside sweet galette for dessert, we can make a savory one as well with a vary of topping, my most fave is cheese combine with any vegetables and sausage.
But today I want to make a strawberry galette. I already made my homemade flaky pie crust a day before, so it's gonna be easy to go.
You can check my recipe for flaky pie crust here. But feel free to use your own pie crust recipe. Another idea is you can use pastry puff dough as well.
This is very easy recipe yet freshly dessert. The crust was so wonderfully flaky and buttery. Try it and you gonna love it ^,^
Make 2 medium strawberry galettes
Ingredients for crust:

Make 2 medium strawberry galettes
Ingredients for crust:
- 350 g AP flour
- 40 gr caster sugar
- ¾ tsp salt
- 230 g very cold butter, cut into small 1" cube
- 1 medium cold egg, lightly beaten
- 1 tsp lemon juice
- 3 + 2 tbsp iced cold water, separated (I put ice cubes in glass with enough water)
- about 6 tbsp almond flour
- 1 kg fresh strawberry, hulled and halved
- 2 tbsp cornstarch
- 200 gr brown sugar (amount of the sugar depends on how sweet/ sour your strawberries, add as your prefer) and more for sprinkle
- 2 tsp cinnamon powder
- about 2 tbsp butter
- 1 egg yolk beat with 3 tsp milk for brushing the dough
- Whipped cream / Icecream/ clotted cream for serving (optional)
DIRECTIONS:
Prepare your crust dough. If you keep your dough in the freezer, defrost it into the fridge a night before you use it.
Working one disc at a time. Roll out the chilled dough into a circle and set on baking tray lines with baking paper. Spread about 3 tbsp almond flour over, leaving about 7 cm margin. Arrange half part of strawberry mixture on top. Fold the edges of the galette dough up over the berries. Brush the dough with yolk. Sprinkle more with some brown sugar and about 1 tbsp of butter pieces.
Do same method to other galette dough with remaining topping ingredients.
Bake until the crust is crisp and golden, 20 to 25 minutes. Serve warm or room temperature with sweetened whipped cream, ice cream or clotted cream.
Prepare your crust dough. If you keep your dough in the freezer, defrost it into the fridge a night before you use it.
If you make the dough straight away before making this galette, keep in fridge at least 1~2 hours before rolling it out.
Heat the oven to 200 °C. In a big bowl, mix together strawberries, brown sugar, cinnamon and cornstarch. Toss to combine.Working one disc at a time. Roll out the chilled dough into a circle and set on baking tray lines with baking paper. Spread about 3 tbsp almond flour over, leaving about 7 cm margin. Arrange half part of strawberry mixture on top. Fold the edges of the galette dough up over the berries. Brush the dough with yolk. Sprinkle more with some brown sugar and about 1 tbsp of butter pieces.
Do same method to other galette dough with remaining topping ingredients.

DeleteI LOVE making galettes! So easy and delicious. My favorite one to make is an heirloom tomato one with ricotta. Yummmm.

DeleteI'm a galette fan, too, Citra--the rustic nature of it means that you don't have to fuss too much, sloppy is okay. This one sounds especially good--strawberries and almonds are such a great combination! Thanks!

DeleteI also made a replica of your Strawberry Galette, last summer and posted it on my blog. Love yours too, and we must have used the same recipe...actually it's a pretty basic recipe for the dough, and the berries!
