A Swiss roll is a very impressive cake and looks quite difficult to make, which is why people often shy away from baking them.
ฤฐn fact actually..tell you the truth, it's one of intriguing dessert to try. ฤฐf you never bake one before you might feel kinda worry it'll end up cracking or disaster.
But once you succeed... believe me, you will not not stop until you bake many of them with many filling, many various flavors or even playing with the decoration and pattern ๐ค
To get nice center piece roll cake on your party or dinner table all you need is just easy and no fail recipe. fail free recipe makes you easier to be creative as I mentioned above; filling, flavors, pattern or decoration.

yield: 1 tray of 30 x 30 cm or 35 x 25 cm
ฤฐngredients:
๐ 6 big egg, separate yolk from white, room temperature
๐ 1 tsp lemon juice
๐ 110 g caster sugar
๐ 60 gr fresh squeeze of orange juice
๐ 2 tsp orange peel
๐ 60 gr vegetable oil
๐ Orange essence or vanilla (ฤฐ use orange essence)
๐ 110 gr AP flour
๐ 10 gr cornstarch
๐ 1 Tbsp dark cacao powder, mix with 2 Tbsp boiling water to make chocolate paste
How to:
๐ฎ Preheat oven to 160°C. Line one 30 x 30 cm or 35 x 25 cm swiss roll tray with parchment paper, set aside.
๐ฎ ฤฐn one big clean bowl place yolks, fresh squeeze of orange juice, orange zest, oil, and orange essence (or vanilla). Whisk all until well combined.
Sift in AP flour and cornstarch, continue to whisk to well combine. Set aside.

๐ฎ In another grease-free big bowl, using an electric mixer beat the egg white with 1 tsp lemon juice until frothy. Then beat in caster sugar in 3 batches while beating meringue to stiff peak form. (See pict. #6 below)
๐ฎ Take ⅓ of meringue and mix into yellow batter. Fold with wire whisk before adding another ⅓. Last adding, use rubber spatula to fold batter nicely to completely blended.
Take about ⅓ portion of batter then fold with cacao paste you made before. Add orange color (optional) to other portion-this optional step. Careful not to deflate the batter.
๐ฎ Pour slowly alternately batter to prepared pan- pour orange batter more than the brown. Fill each edges with batter using rubber spatula then jiggle the pan to flatten the surface. Using chopstick or knife, swirl the batter to make marble pattern. Bang few time the pan to flatten and release the air bubbles.
๐ฎ Bake at 160°C , about 20 minutes, then up the temp to 170°C then bake another 5 minutes until done. When you touch the surface gently, it will spring back.
๐ฎ Remove from oven then chill over cooling rack. Turn over the cake (bottom part up) and peel off the baking paper. Spread filling evenly over the cake then start to roll from shorter side. Don't be afraid/ hesitate, just roll it tight like you roll a sushi.
๐ฎ Bake at 160°C , about 20 minutes, then up the temp to 170°C then bake another 5 minutes until done. When you touch the surface gently, it will spring back.
Note: recognize your own oven. Different condition may produce different result.
๐ฎ Remove from oven then chill over cooling rack. Turn over the cake (bottom part up) and peel off the baking paper. Spread filling evenly over the cake then start to roll from shorter side. Don't be afraid/ hesitate, just roll it tight like you roll a sushi.
Wrap with clean baking paper and store in refrigerator about 30 minute until it set before slice it.

Orange Chocolate Marble Roll Cake.No Fail recipe

Untuk loyang 30 x 30 cm atau 35 x 25 cm
Bahan-Bahan:
๐ 6 telur, pisahkan kuning dari putihnya. Suhu ruang.
๐ 1 sdt lemon juice
๐ 110 g caster sugar
๐ 60 gr perasan jeruk sunkist
๐ 2 sdt parutan kulit jeruk sunkist
๐ 60 gr minyak goreng
๐ Orange essence atau vanilla
๐ 110 gr terigu serba guna
๐ 10 gr pati jagung/ maizena
๐ 1 sdm bubuk cocoa dilarutkan dengan 2 sdm air panas menjadi coklat pasta
๐ Pewarna orange (optional)
Cara membuat:
๐ฎ Panaskan oven suhu 150°C. Alasi loyang ukuran 30 x 30 cm atau 35 x 25 cm dengan kertas baking, sisihkan.
๐ฎ Campur jadi satu; kuning telur, perasan jeruk sunkist, parutan kulit jeruk, minyak, dan orange/ vanilla essens. Aduk dengan sendok kayu atau wire whisk hingga tercampur rata.
Ayak dan campurkan tepung terigu dan pati jagung, aduk lagi hingga rata. Sisihkan.
๐ฎ Kocok putih telur dan 1 sdt perasan jeruk lemon dalam wadah yang bersih, kocok hingga berbusa banyak. Masukkan gula kastor sedikit demi sedikit sambil terus dikocok hingga stiff peak.
๐ฎ Ambil ⅓ meringue dan campurkan ke adonan kuning telur, aduk rata hingga tercampur. Lalu tuang kembali adonan ke kocokan putih telur / meringue, aduk balik dengan spatula hingga rata. Bagi adonan menjadi 2 bagian sama rata, campur masing-masing dengan pewarna orange dan chocolate pasta, aduk balik masing-masing adonan hingga tercampur rata.
๐ฎ Tuang secara bergantian ke loyang yang sudah disiapkan, ratakan ke tiap sisi loyang. Lalu buat corak marmer dengan sumpit atau pisau kecil. Hentakkan loyang ke meja beberapa kali untuk mengelurkan gelembung dalam adonan.
๐ฎ Panggang pada suhu 160°C , 20 menit, lalu naikkan suhu 170°C dan lanjutkan panggang kurleb 5 menit lagi hingga matang.
Note: kenali oven masing-masing, kondisi yang berbeda menghasilkan panas dan waktu memanggang yang berbeda.
๐ฎ Angkat dari oven dan dinginkan diatas rak pendingin. Balikkan dan kelupas kertas bakingnya, olesi dengan filling lalu gulung dan padatkan. Bungkus dengan kertas baking lain yang bersih dan simpan dalam lemari es kurleb 30 menit sebelum dipotong.
