Curry is my regular meal. In Indonesia, we have so many kinds of curry based on the spices and herbs used also base on the protein we use. Start from seafood, poultries, eggs, beef until vegan version.
And today I will share a curry paste recipe from Indonesian neighbor country, Thailand. Indonesian food and Thailand food have many similarities. We use many varieties of spices and herbs and we love our food spicy.
Curry paste is one of my staple, anytime I want to make something it's ready anytime in my pantry. You can check many other homemade things I made here and here.
I always try to get as fresh ingredients as I can so I can get the authentic version that I am looking for. But if you can't find the fresh spice/ herb you can use the powder version.
I stir fry my curry paste to have a longer time to keep and it is just like a store-bought one.
If you don't want to stir fry your paste, you can skip adding vegetable oil and keep the fresh (uncooked) paste in the freezer.

Make ±500 gr
Ingredients:
🌶 1 tsp White peppercorn, roasted
🌶 1½ tsp caraway seeds, roasted
🌶 1½ tsp Coriander seeds, roasted
🌶 250 gr (about 15 big sizes) Green Chillies
🌶 10-12 green birds eye chili (depends on how spicy you wanna go)
🌶 8-9 stalks coriander root, stem, and leaves
🌶 2 Lemongrass stalks, chopped
🌶 1 Galangal, chopped
🌶 2-3 Kaffir lime leaves
🌶 1 tsp (or to taste) Sea salt
🌶 1 tsp sugar (or to taste)
🌶 2 tsp (2 small blocks ABC brand) Shrimp paste
🌶 6-7 small Shallot
🌶 6-7 cloves garlic
🌶 3-4 Tbsp cooking oil
How to make:
1) Roast peppercorns, caraway seeds, and coriander seed over medium heat for about 2 minutes. Using mortar and pestle ground them until powdery smooth. Set aside.
2) Using an electric blender or food processor, ground other ingredients until very smooth. Mix in also the powder spices above and continue mixing until well blended.
3) Heat a pan or a wok over medium heat then stir fry the curry paste. Continuously stir until the paste becomes oily and fragrant. The green color becomes deeper and rich.
4) Remove from heat and keep in a clean jar with a lid. Now you have green curry paste ready to use.

Membuat stok makanan, bumbu atau sambal sudah menjadi kebiasaan saya sejak tinggal di Turki. Karena suami saya tidak terlalu menyukai makanan Indonesia yang rata-rata pedas dan berempah, jadinya kalau saya kangen dan pengen makanan Indonesia tinggal panasin/ angetin.
Misalnya saya punya stock bakso... jadi ya tinggal bikin kuahnya saja. Sambal udah ada di freezer jadi tinggal angetin. Terus bumbu-bumbu juga saya sering stok, misal bumbu dasar merah, putih atau bumbu lainnya.
Hari ini saya ingin berbagi salah satu bumbu yang cukup rutin saya stok yaitu bumbu kari hijau khas Thailand.
Saya memang penggemar kari, mulai yang sederhana sampai yang berbumbu komplit.

Resep bumbu dasar Kari hijau ala Thailand (Gaeng Keow Wan)

Hasil jadi ±500 gr
Bahan-bahan:
🌶 1 sdt merica putih butiran, sangrai
🌶 1½ sdt jintan, sangrai
🌶 1½sdt biji ketumbar, sangrai
🌶 250 gr (kurleb 15 ukuran besar) cabe hijau
🌶 10-12 cabe rawit hijau (banyaknya sesuaikan selera)
🌶 8-9 batang akar ketumbar dan daunnya
🌶 2 batang sereh. (bisa dirajang dan dihaluskan bersama bumbu lainnya atau digeprak dan ditumis saja)
🌶 1 buah lengkuas, rajang halus
🌶 2-3 daun jeruk purut
🌶 1 sdt garam (atau sesuai selera)
🌶 1 sdt gula (sesuai selera)
🌶 2 blok trasi ABC (atau 2 sdt)
🌶 6-7 bawang merah
🌶 6-7 bawang putih
🌶 3-4 sdm minyak goreng
Cara membuat:
1) Sangrai merica, ketumbar dan jintan kurleb 1 menit saja dengan api sedang. Lalu haluskan dengan ulekan sampai halus.
2) Haluskan semua bumbu lainnya dengan blender atau food prosesor hingga halus benar. Lalu campurkan juga bumbu kering yang sudah dihaluskan (no#1).
3) Panaskan wajan lalu tumis bumbu dengan api sedang sampai harum dan berminyak. Saya tambahkan 2 batang sereh geprak ketika menumis (opsional saja).
4) Matikan api dan simpan bumbu dalam toples bumbu bersih lalu tutup rapat. Bumbu kari hijau siap digunakan.
Jika ingin memasak dengan bumbu ini tidak perlu ditumis lagi, langsung dimasukkan ke panci dan tambahkan santan.
